2boneless skinless chicken filets or 1 large filet cut in half horizontally
1tbspolive oil
2 tbspbutter
2tbsplemon juice
2tbsphoney
1pinchsalt
1pinchpepper
Instructions
Set a skillet that will easily handle the chicken fillets on the stove at medium and put in the olive oil and the butter.
Put the lemon juice, honey, salt and pepper in bowl that will easily handle the chicken filets. Stir it all together. Add the chicken filets and turn them over a few times getting them generously coated with the honey lemon mixture.
When the butter in the skillet has stopped foaming stir the oil and butter together and lay the filets in the skillet. Pour the honey lemon mixture on top of the chicken filets. Yup, that's what I said. Spoon the mixture onto the filets often as they cook.
Takes about 3-5 minutes a side depending on the thickness. When they are firm to a poke and the juices running out are clear not cloudy and/or they read 165°F on and instant read meat thermometer they are ready.
After you put the filets in the serving plates spoon all of the liquid from the skillet onto the fillets. Garish with a little parsley or basil if you are in the mood.This Honey Lemon Butter Chicken is as tasty as it is easy. No, it is even tastier. Cook up. It is a keeper.
