Set your oven at broil and let it heat up as you get the Eggplant Pizza Sliders ready.
First just wipe the skillet with olive oil. You don't want the eggplant to absorb oil and get soggy. We're just gonna sear the eggplant a little.
Put the skillet on the stove at medium high. Peel the eggplant and slice it into slices about 3/8" thick. Spread them out in the pan and just sear them. You don't want them to get mushy. Give them about a minute each side, max.
Turn the burner off and if you have an electric stove move the skillet off of the burner. Top the slices with just a little bit of marinara sauce or you could even go with thin slices of tomatoes. Then some shredded - or thin sliced - mozzarella cheese, a little dried basil and whatever else you have around that you might want on your Eggplant Pizza Sliders. As you can see we went with our favorite, pepperoni. Lightly drizzle a little olive oil on them.
Put the skillet under the broiler. Depending on your stove it will take about five to eight minutes for the cheese to melt down. Sprinkle a little grated parmesan cheese on them, pour the wine - if you haven't already - and enjoy your Eggplant Pizza Sliders.
