Quick Easy Chicken Thighs Plus Some Quick and Easy Salad
You will like this for a weeknight meal when you are tired but don’t want to just zap a leftover or a box meal and because this Quick Easy Chicken Thighs recipe is good, real good. It doesn’t have to be chicken thighs. If you keep frozen tenders or breasts in the freezer you could just thaw them out in the microwave instead.
Turn on the broiler. First put all the ingredients except the chicken in a bowl and mix them all together. Your creative skills are going to kick in here because after the salt and pepper you can go with any kind of spices and herbs YOU want. From allspice to wasabi and everything in between. You don’t have to stick to the ingredients listed in this recipe. You probably have whatever it takes to make it real good in your pantry.
Then add the chicken the bowl and toss it all together getting the chicken coated with all the good stuff.
Spray oil the right sized cookie sheet or baking pan. You can line it with aluminum foil to make the cleanup as quick and easy as this recipe. Spread the chicken pieces out in the pan and and broil for 5-7 minutes depending on your oven and the thickness of the chicken. Turn them over and cook the other side. When the juice running out of the chicken is clear it is done.
While the chicken is cooking you can put together any kind of salad or veggie you want. We went with a Caprese salad with Avocado for Poppop.
and a mixture with healthy greens, tomato and onion with gorgonzola cheese and her favorite dressing for Gammy.
