One Skillet – 25 Minutes – Gluten Free – Paleo
One Skillet Chicken Dinner done in 25 minutes or less.
Quick, easy, gluten free and paleo.
I don’t like brussels sprouts. Gammy really likes brussels sprouts. I regularly cook brussels sprouts. Surprised?
They are the tag along veggie in this one skillet weeknight chicken dinner. I even ate some. Well, one, actually.
Cut the chicken into about one inch cubes.
Cut up the brussels sprouts, potato and onion.
Put a large skillet on at medium high and pour in enough olive oil to coat the bottom. Put everything in the skillet, sprinkle with salt, pepper, powdered garlic and dried basil. And some red pepper flakes if you are feeling spicy.
Toss it all together and toss a few times as it all cooks.
When it almost done – about 8 minutes – add a little chicken stock and some grated parmesan cheese.
Mix it up and cook it a couple of minutes more. Then put it onto some plates and scoot it onto the table.
P.S. You don’t have to use brussels sprouts. Broccoli or carrots, for instance, work real well.
We had a chilled bottle of pinot grigio with our one skillet chicken dinner and thank goodness it washed away the taste of that brussels sprout.
