One Pan Shrimp, Pasta and Spinach Dinner – 20 minutes
One Pan Shrimp, Pasta and Spinach Dinner…….
………is a great way to put together a quick and easy weeknight meal that is still a treat to eat.
Put a skillet on at medium high and add the pasta. Use a short version of pasta like rigatoni or penne. Add enough water to just barely cover the pasta.
Bring the water up to a fast simmer and reduce the heat just enough to maintain the simmer.
While the pasta is cooking peel and devein the shrimp – if necessary. Chop up the garlic, or just go with the jarred stuff.
When the pasta is just starting to get soft but not yet al dente – it’s going to cook some more with the shrimp – drain off the water leaving enough to cover the bottom of the pan.
Push the pasta off to the sides of the pan and put the butter then the garlic in the middle. Squeeze the lemon juice onto the garlic. and put the rind into the pan. Add the shrimp to the pan spreading them out so that they lie flat.
Give them just a minute or so each side so that they are pink on the outside and opaque in the middle.
Put the spinach on top then……
……..combine everything with a big spatula or a pancake turner.
Just let the spinach wilt a little. Don’t let it get mushy. It’ll happen fast so have your plates ready to receive your One Pan Shrimp, Pasta and Spinach Dinner. Top it with some grated parmesan and Bon Appetito!
A chilled bottle of Pinot Grigio, of course!
