Lemon Chicken with Mushrooms and Parsley

Lemon Chicken with Parsley a simple and real good old Italian recipe. I ran across it in “Essentials of Italian Cooking” which is a great book filled with great recipes and the history behind them and a lot of good cooking instructions. Our son John makes his version of this and our granddaughters love it. Tonight we had some baby Bella mushrooms so we added them to the mix. Ya gotta make it. This Lemon Chicken recipe is easy and very good.

First butterfly a boneless skinless chicken breast and cover with plastic wrap and flatten the pieces with a meat mallet or the bottom of a sauce pan. Or you could just go with some chicken tenders. You’re keeping some tenders in the freezer, right?

Chop up the garlic, parsley and slice up the mushrooms.

Put a skillet on at medium high with a tbsp. of olive oil. Sprinkle a little salt and pepper on the fillets. Cook the chicken until the liquid coming out is clear and/or they are firm to a poke with a finger. Put the chicken aside on a plate that will catch the drippings.

Turn the heat down to medium and add two tbsp. of butter and the mushrooms. Sprinkle a pinch of salt and a pinch of black pepper.

Give the mushrooms about two minutes stirring a couple of times with a wooden spoon scraping the bits off the bottom of the pan.

Then add the garlic, parsley and the lemon juice. If your lemon is a small one and isn’t giving up much juice go with two of them. You need about 6 tbsp. of juice. The lemon juice makes this recipe.

Mix it all together.

Put the chicken and the drippings back in the pan and turn the pieces over a couple of time to get them coated with the sauce.

Let the chicken heat back up a little and the lemon juice reduce a little and serve it up with the lemon sauce topping off the fillets. Enjoy your Lemon Chicken with Mushrooms and Parsley! Bon Appetito!

[b]Chicken Fillets sautéed in a lemon, parsley and mushroom sauce[/b]
Ingredients
  • [b]1 tbsp. olive oil
  • 1 chicken breast butterflied and pounded flat or 4 chicken tenders
  • salt and pepper
  • 3 tbsp. butter
  • 3 baby bella mushrooms cleaned and sliced
  • 3 garlic cloves chopped
  • 1 cup coarsely chopped fresh parsley
  • 1 large fresh lemon or 2 small ones. You need about 6 tbsp. of lemon juice[/b]
