Chicken Quesadillas are great for a quick and easy casual meal.

We always keep a bag of store bought frozen, cooked and already spiced up chicken in the freezer for Quesadillas or as an addition to salad. You can get to the cooked chunks of chicken any way you want, like cutting up chicken tenders or boneless skinless breasts and frying them in a skillet. Using these already cooked and spicy ones just makes it even quicker and easier.

Put a skillet on at medium high. Two tablespoons of olive oil and add the pieces of chicken. Toss them a few times as they defrost and brown.

Cut up the veggies and add them to the skillet. Tonight we used onions, poblano peppers, canned chipotle peppers and garlic. The basic veggies are onions and green peppers, after that you can use whatever YOU want. Cook everything until the veggies are cooked and the chicken has browned. About five minutes. Toss it all often as it cooks.

As it is cooking put another skillet on at medium and put in about a tablespoon of olive oil and spread it around. Spraying it works good too. When it is hot put a tortilla in and put some of the chicken and veggie mix on it.

Lay some slices of the cheese of your choice on top.

Put another tortilla on top and lay a plate on top of it.

Give it about 2-3 minutes a side or until the tortilla has browned and the cheese has melted. Do two skillets at once or put the done one in the oven set at warm while you prepare the second one. Serve it up with some rice that you multi-tasked or maybe you had some cooked leftover rice in the freezer that you just had to zap in the microwave. A dollop of sour creme for dunking is a must. Also, picking a piece up with your hands, dunking it in the sour creme then the rice and scarfing it down is an accepted way to dine on your Chicken Quesadillas.

Quick Easy Fish Tacos – Grew up in New Jersey and had never heard of tacos. Have lived in Texas for a total of about 30 years and learned about tacos. But, never heard of fish tacos. Our 30 years in Texas were interrupted by living at Lake Chapala in Jalisco, Mexico for a total of three  great years. There we learned about fish tacos and became addicted. They are really quick and easy. Also a great – pick it up and scarf it down – supper in front of the TV. Margaritas or just plain Tequila really help set the mood.

After the tortillas and the cooked fish the rest is up to you. This is how we did it tonight and it turned out great!

First the pico de gallo – sorta – topping. Cut the ends off of the zucchini and thinly slice it. Chop the onion, the Roma tomato, the cilantro, the avocado and the jalapeño pepper. Put it all in bowl and add the cumin, salt, Cayenne pepper and the garlic powder. Squeeze the juice from the lime, drizzle a little extra virgin olive oil and toss it all together. Put it aside in the fridge while you tend to the fish.

Cut the catfish (or whatever fish you want to use) into short strips cutting across the filets.

Put a skillet on at medium high and eyeball about 2 tablespoons of olive oil. Put the fish into a bowl and add onion cut into thin strips (aka julienne), salt, pepper, chopped cilantro and the lime rinds left from juicing it into the pico.

Toss it all together and put it in the skillet.

Gently stir or toss the fish as it cooks turning the individual pieces as necessary to get them cooked evenly. When the fish is firm and not spongy it’s ready. It should take about 5 minutes.

Warm the tortillas wrapped in a towel in the microwave for 30 seconds. Then put the fish in the tortillas and top with the faux pico de gallo. This is a very good quick easy fish tacos recipe. Enjoy!

Beef Fajita Quesadillas

Quesadillas are good with just about any kind of stuffing. Meat, cheese, veggies or all of the above. The most popular seem to be Chicken Fajita or Beef Fajita Quesadillas. You are going to see it done beef fajita style because we have some skirt steak left over from the Arrachera that we had last night.

IMG_2459Slice the skirt steak then cut the slices in half lengthwise .

IMG_2462Put a frying pan on the stove a medium high with a tbsp. of olive oil. Slice the onions and the peppers. Chop the garlic and put the veggies and the meat in the pan. Mix it up and mix it again every minute or so until it is done. Traditionally it is cooked until it just begins to get crispy, but, you cook it as much as you want.

IMG_2464Put  the biggest frying pan that you have on the stove at medium heat. put as many tortillas as will fit on to warm up. Spoon some of the meat and veggies on each tortilla. Spread some Pico de Gallo on top then spread some shredded cheese on top. Put another tortilla on it and heat them up for about 3 minutes a side, or crispier if you like.

IMG_2465Serve up your Beef Fajita Quesadillas! With a dab of sour cream, Pico de Gallo and Guacamole. Don’t forget some good Mexican beer and/or Tequila.
