 ….is done all in one pan and oven baked. All in 30 Minutes, or less.

And,, it turns out great!

When you get home from a busy, tiring day and you want to put a real good meal together but with minimal work and cleanup…..

……this Parmesan Crusted Chicken Dinner definitely fills the bill. You could substitute any kind of potatoes that you have on hand but the sweets shown here were a nice change from the norm. 

The time in the oven could range from 15 to 20 minutes depending on the size and thickness of the chicken. I used these thin filets that we buy frozen and it helps both the prep and the cooking time. Tenders will also work good.

Let’s get going. 

Set the oven at 450°F/232°C and put the chicken in the microwave to thaw. 

Peel and cut up the sweet potatoes into bite sized pieces.

Line a cookie sheet or baking pan with aluminum foil and spray or wipe it with olive oil. I have started using these nonstick cookie sheets and they work out real well. Spread the potato pieces and the broccoli out on the pan. Lay the chicken in the pan. Salt and pepper everything and shake a layer of grated parmesan cheese on the chicken. Lightly drizzle the chicken with olive oil, turn the chicken pieces over and do the same treatment on the second side.

Into the oven it goes. When the chicken reads 165°F/75°C on an instant read thermometer or is leaking out clear liquid or is firm to a poke it is done. You might like to then switch the oven to broiler and put the pan on a top shelf for a minute or two to get things a little crusty. You don’t have to but,, well,, I like to.

Set the oven at 450°F/232°C. Line a large cookie sheet with aluminum foil and  spray or wipe it with olive oil. Peel and cut up the sweet potatoes. Cut them first into big french fry shapes then crossways into thirds.

Spread the sweet potatoes,  broccoli and the salmon filets out on the cookie sheet. If the filets haven’t been skinned just put skin side on the bottom. If they have been skinned lay the side that is flat and has a grayish stripe on the bottom.

Melt the butter in the microwave then add the chopped up garlic, lemon juice, parsley, salt and pepper. You could use that pre-chopped garlic from a jar and dried parsley flakes if you would like things to be even quicker and easier.

Stir it all together with the brush you are going to use to apply that good stuff to the salmon and the veggies.

Generously brush the butter mixture on the veggies and the salmon……..

………then put it in the oven. Figure on about 12-15 minutes. When the sweet potatoes are soft to a poke with a fork and the salmon wants to flake when you gently pry at it with the fork it is ready.

Quick Easy Grilled Chicken Dinner

You can use a stovetop grill like we did here or do it on your outside barbecue grill or just a big skillet – or two or just put everything on a cookie sheet and into a 400°F oven for about 10-12 minutes. Tonight’s method of choice is a stove top grill. It finds it’s way into our routine once or twice a week and it always puts out a good looking and tasty meal.

Put the grill on at medium high and spray or wipe it with olive oil. Salt and pepper the chicken and put the filets on the center of the grill. Cut the zucchini into about 3/8″ slices, crossways or longways, it’s up to you. Peel the sweet potatoes and slice them also into about 3/8″ slices. Salt and pepper both sides of the veggies. Spread them all out on the grill.

When the chicken is firm or reads 165°F on an instant read meat thermometer (about 3-4 minutes a side) and the veggies are soft to a poke with a fork (about 4-5 minutes a side) serve up and enjoy your Quick Easy Grilled Chicken Dinner.

PS – Squeeze a little bit of lemon juice on the zucchini. It’s good!

Pork Filets Topped with Apple Slices and Brown Sugar – yeah – it turned out to be delish and the whole meal was on the table in under 30 minutes.

Ok, I’m trying to put this post together while I’m watching the Cowboys game. So if this gibberish is even worse than my usual gibberish please forgive me.

You might opt to replace the snap peas and grilled sweet potato slices with  other starches and veggies but this combo worked out great. And it’s easy!

Put a stovetop grill or a large skillet on at medium high and spray oil it. Peel the sweet potatoes and slice them into about 1/4″- 3/8″ slices. Spread out the slices on the grill or skillet. They will take about 4-8 minutes a side.

Light the broiler. Core and slice the apples. Cut the onion into strips and chop up the garlic. Put 2 skillets on at medium high with a couple of tablespoons of olive oil each.

Thin pork slices work out best for quick and easy.

Thicker ones are fine but, of course, take a little longer to cook. These thin ones just take a minute or less a side. Salt and pepper them and cook them up.

Top the pork filets with the apple slices.

Sprinkle brown sugar on the apple slices. Just enough to cover the slices but not so thick that it piles up. Put the skillet under the broiler.

If the sweet potato slices are cooked to the degree of softness that you want put the pan in the oven on a low rack under the pork filets rack.

Put the onion and garlic into their skillet and sprinkle with some salt and pepper. As soon as the onion strips start to soften up a just a little add the snap peas and squeeze in the lemon juice. Of course toss in the lemon rinds. Don’t let the snap peas get the least bit soggy. Toss them often and cook for just a minute to a minute and a half so they are still “snappy”.
