Sesame Chicken – Quick and Easy – 25 Minutes – Gluten Free

Sesame Chicken is ….

…….what I order every time we go to our favorite Chinese restaurant, the Hunan Lion on South Lamar here in Austin.

It’s gotten to the point that the waitresses don’t even ask me what I want anymore. Gammy always gets Chicken and Broccoli, same deal.

I’ve tried a few different recipes that I found online and twisted and turned on them until I was happy with this one.

It is Quick and Easy and Delish which are the definite requirements here at poppopcooks.com

Having said all that here we go!

Put the minute rice ( or regular rice) on to cook, that is if you don’t have any leftover rice in the freezer waiting for you to microwave it. As suggested in my 10 tips for quick and easy weeknight meals.

Cut the chicken up into pieces a little bit bigger than bite size.

Put a skillet on at medium high and swirl in enough olive oil to cover the bottom.

In a bowl big enough to handle the chicken, mix together the egg, the cornstarch, the salt and pepper.

Put the chicken in the bowl and stir it up getting it covered with the egg mixture. Then put it all in the skillet. Be sure to add all of the egg mixture.

Stir it it right away and toss or stir it a few times as it cooks. 7-9 minutes.

While the chicken is cooking, back to the bowl. Mix up all the other ingredients except the peas and their share of the chopped garlic.

Just before the chicken is done put another larger skillet on at medium high with enough olive oil to cover the bottom. Put the peas and the garlic in  and toss them often as they cook. They only need 2-3 minutes. The snow peas are best a little crispy not at all soggy.

When the chicken is browned and is firm to a poke add the sauce and stir it in  getting the chicken all covered in that good stuff. The sauce will thicken up pretty quickly and as soon as it does…..

Stir Fried Beef and Snow Peas-You are going to do it better than take out and faster than home delivery AGAIN!

If you don’t have any pre-cooked rice on hand start a pot of salted water set at high. If you are not using minute rice wait to start the beef until the rice has just started to get pliable when given the nibble test. If you are using minute rice just go ahead with the beef when you put the water on.

Cut the beef into strips or just buy some that are ready and waiting for you in the grocery store. I found them in mine and I’ll bet that yours has them too.

Put a skillet on at medium high and eyeball just enough olive oil to coat the bottom of the pan. When it gets hot put in the beef. Stir it often as it cooks. As it is cooking chop up the garlic. Add the black pepper, red pepper flakes, sesame seeds, garlic, soy sauce and ginger. No salt! The soy sauce has enough to do the job.

When the beef is well browned all over add the snow peas.

Stir in the peas and keep stirring often as the peas cook. When they have turned from the pale green that they were when you put them in to a bright green they are done. They won’t take long. Like 3-5 minutes. They are best if crisp, not mushy.

You can use chicken instead of beef. Just cut it into strips and go.

Honey Soy Sauce Shrimp-15 minutes

You can go with the basic 4 ingredient Honey Soy Sauce Shrimp recipe and it will be great. You can do this with other kinds of fish or with chicken or beef.

After you get the honey, soy sauce and salt in the bowl you might be tempted to go a little further. Today I added some lemon juice, sesame seeds, minced garlic and a wee pinch of cayenne pepper. You don’t have to do any of the extras. If you want to keep it just the honey, soy sauce and salt it will still become a favorite.

Put the shrimp in a separate bowl and drizzle just enough of the sauce to coat them. Toss the shrimp in the sauce a little bit.

Put a skillet on at medium high and eyeball enough olive oil to coat the bottom. Let it get hot before you add the shrimp. Then spread the shrimp out in the pan so that they are all laying on their sides, not piled on top of each other. Cook for just one minute a side and then add the remaining sauce.

Stir the shrimp in the hot sauce then remove them to the plates and drizzle the sauce on  them. There you have your Honey Soy Sauce Shrimp. Garnish with a little bit of dried parsley or grated parmesan, if you want.

It all happens so fast that we almost always just go for “baked” potatoes in the microwave and some basic salad. Or another veggie choice is something microwave friendly like frozen broccoli or peas sharing space in the microwave with the potatoes. We had a chilled Santa Margherita Pinot Grigio to go with our Honey Soy Sauce Shrimp and it was great.
