Chicken Pasta Primavera – Quick and Easy – 25 Minutes

Chicken Pasta Primavera-8-poppopcooks.com-pasta primavera-pasta primavera recipe-chicken primavera-pasta primavera with chicken-Italian pasta recipes

Chicken Pasta Primavera is a…..

…….Quick and Easy weeknight meal that you can put together with just about any vegetables that you have on hand.

Primavera translated from Italian means springtime but Pasta Primavera originated by an Italian chef in New York City in the 1970’s.

Enough history let’s get your Chicken Pasta Primavera going.

Put the chicken tenders in the microwave to thaw out while you cut up the vegetables. When I rooted around in the fridge I found some broccoli, asparagus, string beans, carrots, tomatoes, garlic, some mushrooms leftover from our last batch  of chicken marsala and some onions. But, literally, any vegetable or vegetables will work.

Put a large skillet or sauté pan on at medium high and swirl in some olive oil. While it’s heating up cut up the chicken tenders. When the pan is hot, put in the chicken and sprinkle it with some salt and pepper.

Put a pot of salted water on for your pasta and cook the pasta while you put together to Primavera part. If the pasta is al dente before the veggies are cooked just drain it and drizzle a little olive oil in. Stir it to get the pasta covered with the oil and put it on an idle back burner to keep warm while it waits its turn.

When the chicken has browned add all the veggies except the tomatoes and garlic. Stir it a few times as everything cooks.

After about 3-4 minutes or when the veggies just start to get a little soft throw in the tomatoes and the garlic. Add the chicken broth or white wine, squeeze in the juice from a lemon and toss in the rind and stir it all together. When the liquid starts to simmer lower the heat to medium and simmer for a couple of minutes.

You could use different veggies and still cook them in the skillet. Just add them earlier in the tenderloin cooking process because the spinach in this recipe cooks so quickly.

Chicken Piccata with Roasted Vegetables – Quick and Easy – 30 Minutes – Gluten Free

Chicken Piccata-7-poppopcooks.com-quick and easy-gluten free-main course

Chicken Piccata…..

……..is an easy dish to prepare and it’s delicious! It’s one of those meals that we don’t order in a restaurant because we can make it better at home and so can you!!

Today’s tip……When you chop up onions or garlic chop up a good bit more than you need and put the extras into zip-lic bags. Store them in the freezer to make your future quick and easy meals even quicker and easier.

Now,, back to your Chicken Piccata with Roasted Vegetables. Set the oven at 400°F. Line a cookie sheet with aluminum foil and cut up whatever veggies that you want to have in the mix. Potatoes, onions and peppers are the basics but after that just go with whatever strikes your fancy. As you can see we also had on hand some brussels sprouts, carrots and zucchini. Put the veggies onto the cookie sheet and generously drizzle with the extra virgin olive oil. Sprinkle with salt, pepper, garlic powder and dried basil. Mix it all together by hand and spread it out. Into the oven for about 15 – 20 minutes.

Poke a potato with a table fork to check if they are done. When the potato is as soft as you want it everything else is done too. If the veggies are done  before the Chicken Piccata is just turn off the oven and they will stay warm for you.

Put a skillet on at medium high and add some olive oil and half of the butter. Mix the flour, salt and pepper in a shallow dish and dredge the chicken filets in the flour mix and put them in the skillet. About 3 -5 minutes each side depending on how thick they are. When they are firm or read 165°F  on an instant read meat thermometer remove them to a dish that will catch the drippings. Add the rest of the butter, chopped garlic, capers, parsley flakes, lemon slices and parmesan cheese to the skillet. Stir it up with a wooden spoon getting the bits off the bottom of the pan.

Add the white wine – or chicken broth – and bring it up to a fast simmer. Then reduce the heat just enough to maintain the simmer.

Add the chicken and the drippings back to the skillet. Turn the filets over a few times as the liquid reduces and thickens up. Top it all off with some parsley and grated parmesan and enjoy your better than a restaurant Chicken Piccata with Roasted Vegetables. Bon Appetito!!

Pan Seared Salmon with Red Wine Drizzle-15 min.

Pan Seared Salmon-5-poppopcooks.com

Pan Seared Salmon with Red Wine Drizzle is very quick and easy. Don’t let the fancy name intimidate you. The filets that you see here came with the skin on. That works just fine. If yours have been skinned just treat the side with the gray stripe as the skin side,

Put a skillet on at medium high and eyeball a couple of tablespoons of olive oil. Lightly salt and pepper the flesh side of the filets and when the pan is hot put the filets in with the flesh side down. If your filets have been skinned salt and pepper the upside.

Pan Seared Salmon-4-poppopcooks.com

Give them 2-4 minutes a side depending on the thickness and how well done you like it. When they are just starting to get firm to a poke they are done. If you like them really well done then let them get real firm to the point that they will want to break apart and flake when poked.

Remove them to a dish and set it on a burner that isn’t in use to stay warm. Put the red wine and a pinch of dried basil in the skillet and mix with a wooden spoon scraping the bits off the bottom. When the wine has reduced and thickened move the filets to the plates and drizzle the drizzle!

We garnished our Pan Seared Salmon with some dried parsley and enjoyed the rest of that bottle of Cabernet.
