I found the original of this Sautéed Chicken Caprese Style recipe on a real good blog called Cafe Delites. We really like Caprese salad and besides the old standard we’ve made it with Avocados, Chicken and on and on. Never thought of a cooked version but this turned out great.

On a dishwasher safe cutting board cut the chicken breast(s) in half horizontally. Lay some plastic wrap over them and hammer them with the flat side of a meat mallet getting them as close to evenly thick as you can. It doesn’t have to exact.

Put a skillet on at medium high and eyeball a couple of tablespoons of EVOO. Set the oven at 350°F. Lightly sprinkle the filets with salt, pepper, red pepper flakes and dried basil.

Cook the filets for about 3-5 minutes a side depending on the thickness. When they are firm to a poke or the juices are running clear or the temperature is 165°F on a meat thermometer they are ready. While the chicken is cooking cut up the tomatoes and garlic. Rinse off the basil leaves and pat them dry. Chop up a few of the basil leaves to be used a garnish on the finished product. Also, slice some fresh mozzarella cheese  about 1/4″ thick and 3 slices per filet.

When the chicken is done remove the filets to a plate to catch the drippings. Put the garlic in the pan and mix with a wooden spoon scraping the bits off the bottom.

As soon as the garlic is fragrant – about 1 minute – add the balsamic vinegar and the brown sugar. Mix it all together and when it comes to a boil put the filets, with the drippings, back in and turn them over in the balsamic glaze getting them coated.

Add the tomatoes and basil leaves holding back 3 tomato slices per filet to go along with the mozzarella cheese topping.

Mix it all together and when the basil leaves have wilted and the tomato slices have softened spoon it all on top of the filets.

Arrange the cheese and tomato slices on the fillets. Lightly drizzle with a little bit of EVOO.

Put the pan in the oven until the cheese just starts to melt then enjoy your Sautéed Chicken Caprese Style. Drizzle the balsamic mixture over them and garnish with the chopped basil leaves. This turned out really good! There were no leftovers.

30 minutes or less and you will have this One Pot Quick Easy Chicken Dinner on the table. All in one pot so there is minimal cleanup. Let’s get started. 

Thaw out – if necessary – the chicken tenders or breasts in the microwave. In the few minutes that takes cut up your veggies. That’s a box of Minute Rice that you see in the background.

Put a skillet on at medium high and add the olive oil. When the chicken is thawed cut it up into about 3/4″ – 1″ chunks on a dishwasher safe cutting board.

Put the chicken into the skillet and sprinkle with salt, pepper and garlic powder. Stir them up a few times as they cook. When the chicken pieces  start to get brown on all sides remove them to a dish that will catch the drippings.

Add the chicken broth and the rice to the pan and bring it to a boil. Stir with a wooden spoon to get the chicken bits off the bottom and mixed in with the broth and rice.

Reduce the heat to a fast simmer and cook until the rice is just starting to soften up. Then add the lemon and the broccoli. Return the chicken with the drippings to the skillet.

You can Make this Chicken Sautéed in White Wine as good as any chef. Quick and easy enough for a weeknight and awesome enough for a  Sunday sit down dinner with guests. For the green herbs that you see in the pics you can use fresh parsley or basil or mint or any combination. If you don’t have the plants out on your deck or in your garden they are available all year round in the grocery store. Bottom line go with fresh not dried for this real good and real simple Chicken Sautéed in White Wine. Oh yeah, and we’re gonna do a sing along with some potato gnocchi with veggies.

 

Coarsely chop the basil and mint (tonight’s choice). Cut the stem end off the tomatoes and cut them in half lengthwise then use a teaspoon to scrap out the core and the seeds. Then chop em up.

Strain them leaving a little water in the pot. Put the gnocchi back in the pot and drizzle with a little extra virgin olive oil. Put the pot on an idle burner or in the oven set on warm or 225° while the chicken progresses.

Cook just enough for the flour to get golden. They are gong to finish cooking in the wine. Remove them to a dish that will catch the drippings.

Put the butter in the pan and use a wooden spoon to scrap the bits off the bottom.

You will find it quick and easy to make these Zucchini Boats Parmesan. Google “zucchini boats” and just about always they have total time to prepare it as an hour or more. Poppop likes to keep it quick and easy for you so here goes. Oh yeah, and we are going to do an easy multi task and have some Garlicky potato chunks ready at the same time for your quick and easy weeknight meal.

Set the oven at 400°F/205°C. Line two baking pans with aluminum foil or parchment paper. Cut the potatoes up into a little bigger than bite size chunks. Like maybe two bite size. Chop up the garlic. Put the potatoes in the pan. Generously drizzle with extra virgin olive oil. Add the chopped garlic and sprinkle salt and black pepper. Mix it all up so that the potatoes get covered with the oil etc. Put them in the oven.

You could substitute any kind of cooked meat, chicken or even fish for the pepperoni and canned tomatoes or tomato sauce for the sliced tomatoes. But I'd bet that you already figured that.
