Baked Pork Chops Dinner – In One Pan – 30 Minutes – Quick and Easy – Gluten Free

Baked Pork Chops Dinner is all in One Pan and.. …30 minutes, total. Oh yeah, and real good.

I was in the grocery store picking up some wine – of course – and looking around for something a little different for supper. When I spied these real thick, bone in, pork loin chops.

I had a couple little chores to do so I bought what I needed to put together this one pan dinner that would just go in the oven and free me up for a little while.

I bet you find yourself in that kind of crunch sometimes too.

I picked out veggies that would take the same time to cook that the thick pork chops would and heres what the product of my chopping, olive oiling and salt and peppering looked like. I did sprinkle a little paprika on the potatoes and a little grated parmesan on the pork chops.

You could use a baking sheet lined with aluminum foil and sprayed or wiped with olive oil. Or, a nonstick one like you see in the pic.

In the pursuit  of quick and easy I got the pre trimmed and washed string beans in  produce and the pre peeled and cut potatoes in frozen . The onion and the pepper were the only cutting up that I had to do.

It went into a 475° oven for twenty minutes and our Baked Pork Chops Dinner all was cooked and ready.

I didn’t get all my honeydos finished but a nice dinner with my honey and that bottle of Pinot Noir that I had grabbed at the store all made for a real good evening.

Instructions
  1. Set the oven at 475F. Line a baking sheet with aluminum foil and spray or wipe with olive oil. Put the pork chops and the veggies on the baking sheet. Drizzle the veggies with olive oil and sprinkle with salt and pepper. Sprinkle the potatoes lightly with paprika and the pork chops with grated parmesan cheese.
  2. Put the sheet into the oven and cook for 20 minutes. The veggies should be cooked and crisp on the edges and the pork chops should be firm to a poke or read 155- 160 on an instant read meat thermometer.

Blackened Catfish – Quick and Easy – 20 Minutes – Gluten Free – Paleo

Blackened Catfish…

……..is Quick and Easy and Delish and Gluten Free and Paleo Friendly. Did I leave anybody out?

You can use just about any fish filets for this recipe i.e. red snapper or mahi-mahi or tilapia also work real well. I’ve even seen it done with salmon, but, for us catfish works best. It keeps it’s shape through the high heat needed for the blackening process and it is tasty.

Put a skillet on at HIGH and add the olive oil and butter.

Mix the dry ingredients together in a shallow dish that will handle the Catfish filets.. Then…….

 ……..melt the butter in the microwave in another shallow dish that can handle the catfish filets.

Dip the filets one at a time in the butter and then in the dry stuff getting the filets well coated all over with the spices. When the butter in the skillet has stopped foaming and has turned brown put the filets in the skillet.

The filets will make the butter foam up again. They will only need 2-3 minutes a side. Poke them and when they have firmed up and the coating of the spices has turned “blackened” they are ready.

Serve them up with a wedge of lemon. We had some sauteed broccoli with garlic and some quick and easy hash brown potatoes with our Blackened Catfish but you just look in the fridge and  put together your weeknight meal the way that YOU want.

You will have a crowd pleaser when you make this Lemon Garlic Butter Filet of Sole. Twenty five minutes max. Probably less.

Put a skillet on at medium high with enough olive oil to coat the bottom about 1/8″ deep and turn on the broiler. Cut the potatoes into 1/4″ slices and put them into the skillet. Toss the potatoes a few times as they cook. Cut the onion into strips and chop up the rosemary leaves, garlic and parsley – or mint leaves – or dill leaves. Or any of the above dried.

As the potatoes are getting started line a cookie sheet with aluminum foil and lightly coat it with olive oil. Put the butter, garlic, lemon juice and parsley in the microwave and zap it just long enough to get the butter melted. Pat the filets dry and lay them out in the cookie sheet. Spoon the butter mixture evenly over the filets then sprinkle with paprika.

When the potatoes have started to brown add the onions, the rosemary, salt and pepper. Toss it all together and toss a few more times as they cook. When you have added the onions to the skillet put the filets in the oven.

Oven Baked One Pan Mint Chicken.

You put everything in one bowl and toss it couple of times. Then you spread everything out on a foil lined cookie sheet and bake for about 15 minutes. Dish it out on plates, throw the foil away. How easy is that?

Set the oven at 350°F. Chop up the Mint leaves and the garlic. You can get  fresh or dried mint leaves at the grocery store. Gammy always has some growing in a pot.

Cut the potato into thin french fry shapes. Thin because all things being equal they will take longer to cook than the zucchini. That being said cut the zucchini in half lengthwise and then half crossways. Put the veggies in a large mixing bowl. Slice the chicken breast in half like as if you were going to butterfly it but cut all the way through to wind up with thin scallopini type pieces. Or, just go with chicken tenders. Add the chicken to the bowl and put the rest of the ingredients in.

Toss it all together so that everything is coated pretty evenly.

Spread it all out on a foil lined cookie sheet.

Put it in the oven and it will al be ready in about 12-15 minutes. Check everything with a poke of a fork and when the potatoes and zucchini are soft and the chicken is firm and/or running clear liquid, it is done.
