One Skillet Chicken Dinner – You will have the whole meal done and on the table in 25 minutes or less.

Put a skillet on at medium high and add enough olive oil to coat the bottom. Using a dishwasher safe cutting board cut up the chicken breast or tenders into about 1″ chunks. Add them to the skillet and stir them around a little. Sprinkle with salt, pepper, garlic powder and dried basil.

Stir the chicken around a few times as it cooks. While it is cooking rinse the string beans, trim off the stumpy ends and cut them in halves or thirds. Chop up the onion.

Add the veggies, the gnocchi and the tomatoes to the skillet.

Mix it all together. Bring it up to a fast simmer and lower the heat just enough to maintain the simmer. Light up the broiler. Stir everything in the skillet a few more times as it all cooks. When the pasta – gnocchi – has softened to the nibble test top it all off with a layer of shredded mozzarella then a layer of grated parmesan. Some dried parsley and even some red pepper flakes if want.

Recipe Notes

You can use any kind of pasta instead of gnocchi. Gnocchi cooks in like 2-3 minutes and pasta in 8-10 minutes.

You might take a little less then 25 minutes or you might take a little more. But, you will be pretty pleased with how fast you can get it ready to serve. I timed myself and it was on the plates and I was taking pics at 23 minutes. You can still keep within 25 minutes as you multi task and get the Asparagus Wrapped in Prosciutto on the table with your Garlic Lemon Butter Chicken with Gnocchi.

Put the chicken tenders in the microwave to thaw – if needed- or if you prefer move them from the freezer to the fridge before you leave for work. Put a skillet on at medium high with a couple of tablespoons of extra virgin olive oil and set the oven at 500°F. Cut the stump ends off of the asparagus, rinse off the spears and wrap them each with a slice of the Prosciutto. If the spears are thin just wrap 2 or 3 of them with the Prosciutto. Slices of bacon will also work just fine if you don’t have any Prosciutto. Line a baking pan or cookie sheet with aluminum foil and spray or drizzle it with it with olive oil. Spread out the wrapped spears in the pan and put it in the oven. It should take about 10 – 15 minutes. When the prosciutto gets crisp on top turn them over and let the other side get crisp. When all of the prosciutto is crisp it’s done. If the chicken isn’t ready yet just turn the oven off and let the asparagus rest and keep warm. This is one of our favorite side dishes.

As soon as the asparagus is in the oven. Salt and pepper the chicken tenders and put them in the skillet. Sear both sides.

While they are cooking cut up the parsley and the garlic and have the gnocchi, cooking white wine and lemon standing by.

Add the butter and when it has stopped foaming put in the chopped garlic, white wine, parsley and the gnocchi. Squeeze in the lemon juice and toss in the rind. The chicken will finish cooking as the wine reduces and the gnocchi cooks. Mix everything together a few times as it all cooks.

It will take about 5 minutes for the gnocchi to puff up and get soft, but not mushy, then it all will be ready to enjoy. Spoon the sauce all over the chicken and the gnocchi and slide that side dish of prosciutto wrapped asparagus in next to your Garlic Lemon Butter Chicken with Gnocchi.

Garlic Chicken String Beans and Gnocchi is a real simple, basic and very good old Italian Garlic Chicken recipe. You will see it more often done with the chicken dipped in an egg wash, breaded then fried or baked. I’ve been to some real good Italian restaurants in Manhattan and a few of them did it this way. In my book it tastes better, it’s less messy and is ready faster when done like this. Do the string beans and gnocchi in another skillet and you will have the whole meal done pretty quickly.

Put two skillets on with three tablespoons of EVOO in each one. Set one of them at medium high for the chicken and the other one at medium for the string beans and gnocchi. Cut the ends off the string beans then cut them into halves or thirds. Put them into their skillet and sprinkle with a little salt and black pepper. Add the onion and the gnocchi. Toss a couple of times to get everything coated with the oil and a few more times as they cook.

Salt and pepper one side of the chicken filets – or tenders – then put them in the skillet with the seasoned side down. Salt and pepper the other side and cook for about 3-5 minutes a side until they are firm to a poke and/or the  juice runs clear when they are stabbed with a fork. Lower the heat to medium, move the filets creating a bare spot. Put a pat of butter on the bare spot and add the chopped garlic. Just cook the garlic until it starts to get translucent.

The string beans onions and gnocchi should be done by now. If the gnocchi is soft and quite warm to the touch and the onions are translucent it’s show time.

You can Make this Chicken Sautéed in White Wine as good as any chef. Quick and easy enough for a weeknight and awesome enough for a  Sunday sit down dinner with guests. For the green herbs that you see in the pics you can use fresh parsley or basil or mint or any combination. If you don’t have the plants out on your deck or in your garden they are available all year round in the grocery store. Bottom line go with fresh not dried for this real good and real simple Chicken Sautéed in White Wine. Oh yeah, and we’re gonna do a sing along with some potato gnocchi with veggies.

 

Coarsely chop the basil and mint (tonight’s choice). Cut the stem end off the tomatoes and cut them in half lengthwise then use a teaspoon to scrap out the core and the seeds. Then chop em up.

Put a pot of water on at high for the gnocchi and add a some salt. When the water boils add the gnocchi. In about 2 minutes they will float. When they float they are done. Strain them leaving a little water in the pot. Put the gnocchi back in the pot and drizzle with a little extra virgin olive oil. Put the pot on an idle burner or in the oven set on warm or 225° while the chicken progresses.

Put a skillet on at medium and add the olive oil. In a shallow dish mix together the flour, garlic powder salt and pepper. Dredge the chicken filets in the flour mixture and put them in the skillet. Cook just enough for the flour to get golden. They are gong to finish cooking in the wine. Remove them to a dish that will catch the drippings.

Put the butter in the pan and use a wooden spoon to scrap the bits off the bottom.

Add the white wine and mix it in, Put the chicken and the drippings in the skillet and turn them over a few times as the wine reduces by about a third.

When the wine has reduced and thickened a little add the fresh green herbs and turn the filets a few more times to get them coated.
