You’re whole One Pot Chicken Dinner will be done in one pot and in thirty minutes. You can substitute lots of different meats, veggies and/or starches. In the interest of quick and easy rotisserie chicken and minute rice is the fastest.

Put a large skillet or sauté pan on at medium high and eyeball about 3-4 tablespoons of olive oil. Cut up the chicken into about 3/4 – 1″ cubes and add them to the pan.

Salt and pepper them and cook turning a few times until they get brown on the edges.

While the chicken is cooking cut up the onion, zucchini and the garlic then add all of the veggies and the pasta to the pan and toss it all together.

Then the marinara sauce or diced tomatoes. Mix everything together and let it heat up to a fast simmer. Reduce the heat just enough to maintain the fast simmer and let it cook. Stir it up a few times as it cooks.

Quick Easy One Pan Meatballs and Pasta

Do you like having you weeknight dinners quick and easy but still real good? One Pan Meatballs and Pasta fills the bill. Meat, carbs and veggies all in one pan and ready in 30 minutes or less. I had never done meatballs and pasta all in one pan before. I always considered  it a blasphemy against my Italian roots, but, this turned out real good and it was quick and easy. Try it and please tell me what you think in “comments” section at the bottom of the page. For gluten free you can just use gluten free pasta or rice or potatoes.

First put a large skillet or saute pan on at medium high with a couple of tablespoons of olive oil. Put all the meatball ingredients in a bowl. That would be everything except the pasta and the veggies.

I just grab and mix with my hands, but, you could use a large cooks spoon or a paddle wheel on your countertop mixer. Just enough to get all the ingredients blended together. Don’t mix it too long or your meatballs will be tough after they are cooked.

Form the meat into balls that are the size that you want. An ice cream scoop helps keep them all the same size. Put them in the pan as you form them and turn them as they get brown. When they are all browned add the pasta and the veggies.

For the sauce you could use marinara sauce that you might have on hand or some that you had bought off the shelf. (I recommend Barilla or Buitoni) or just go with some chopped up fresh tomatoes.

Mix it up gently and bring it up to a fast simmer. Lower the heat to medium and put a lid on it.

Shrimp Peas Pasta Quick and Easy

You could change things around a lot in this Shrimp Peas Pasta recipe. Like, leftover rotisserie chicken instead of shrimp and broccoli or string beans instead of peas and rice or gnocchi instead of pasta and on and on. Keep it in mind for those in a rush and gotta go with what’s on hand weeknights. But, your guests will really like it too.

Put a pot of salted water on for the pasta and when it starts to boil add the pasta and stir it up right away. Then stir it occasionally as it cooks.  Cook it al dente. If the pasta is done before the shrimp and peas just drain all but about a tablespoon of the liquid and leave it in the pot on the stove on an idle burner to stay warm. While the pasta process is going on put a skillet on at medium and add the extra virgin olive oil. Chop up the shallots (or onion) and add them to the skillet. Add salt, black pepper and a pinch of red pepper flakes if you’re feeling a little hot. If your shrimp is frozen just thaw them out in the microwave.

When the shallots start to get translucent add the shrimp to the pan laying them out flat.

Cook them just until they get pink and opaque on the pan side and turn them over and add the peas.

Cook until the other side of the shrimp are done then gently stir it all together. Toss a few times as the peas warm up. When the peas are hot to the touch add the grated Parmesan cheese.

Add the pasta and the little bit of water to the pan and toss it all together getting everything coated with some parmesan. Then serve up your Shrimp Peas Pasta.

Italian Sausage, Veggies, Tomato Sauce All Together

We posted Italian Sausage and Peppers before where you cooked the Italian sausage and the veggies in separate hot pans with no liquid. If you liked that then you will like it this way too. It’s gluten free if you substitute some kind of veggie thing for the pasta. I just couldn’t do that for my plate but we still took care of Gammy with some Spaghetti Squash. Put the biggest frying pan you own on the stove at medium heat with about 2 tbsp. of olive oil.

First cut up the sausage in about 3/8 ” slices.

Put the sausage slices in the skillet. Turn them as soon as they start to get brown and brown the other side.

Potatoes in the pan!
Add the potatoes

Slice up 2 medium red potatoes or 1 full sized idaho,,whatever. Push the sausage out to the side of the pan and put the potatoes in the middle. Sprinkle with salt and pepper. Cook them until they just start to get brown on the bottom. While they’re cooking, core seed and cut up the red and the green pepper. Cut up a medium size onion in to strips.

Coming together
Add the peppers and the onion

Put the peppers and the onion right in on top add a pinch of dried oregano and toss it all together. Toss and turn it all often.

Here comes the garlic

Chop up 6-8 cloves of garlic. push everything in the pan out to the sides and add the chopped garlic to the bare spot in the middle. Put about 2 tbsp. of water on the garlic so that it will cook a little without getting brown. Give the garlic about a minute then toss everything together.

Put a pot of lightly salted water on to boil for the pasta. When the pasta water boils add the pasta to it and stir it up. While you are waiting for the water to boil add 3-4 cups of marinara sauce or 3-4 roma tomatoes chopped up or a 28 oz can of crushed tomatoes. Whichever you choose you can’t go wrong. Don’t worry about it. Let it all simmer until the potatoes and peppers are as soft as YOU want them, 6- 8 minutes more. Don’t forget to toss it all pretty regularly. For Gammy’s gluten free dish she choose Spaghetti Squash the we had leftover in the freezer so I nuked some of that.
