………is a great way to put together a quick and easy weeknight meal that is still a treat to eat.

Put a skillet on at medium high and add the pasta. Use a short version of pasta like rigatoni or penne. Add enough water to just barely cover the pasta.

Bring the water up to a fast simmer and reduce the heat  just enough to maintain the simmer.

While the pasta is cooking peel and devein the shrimp – if necessary. Chop up the garlic, or just go with the jarred stuff.

When the pasta is just starting to get soft but not yet al dente – it’s going to cook some more with the shrimp – drain off the water leaving enough to cover the bottom of the pan.

Push the pasta off to the sides of the pan and put the butter then the garlic in the middle. Squeeze the lemon juice onto the garlic. and put the rind into the pan. Add the shrimp to the pan spreading them out so that they lie flat.

Give them just a minute or so each side so that they are pink on the outside and opaque in the middle.

Put the spinach on top then……

This recipe is a quick and easy version of the traditional sausage with marinara sauce and pasta. We had our favorite fast veggie with our Quick Easy Italian Sausage Dinner. Here’s that recipe Oven baked Zucchini. First get some of the best Italian sausage that is available in your neck of the woods. Here in Texas we go with this old standby. There is almost always some in our freezer. Back in North Jersey there were lots of real good Italian deli’s that made their own and, wow, were they good.

Put a pot of salted water on for the pasta. You could even cook the pasta in the skillet with the sausage. When you add the sauce add the pasta. It works best that way with a short pasta like penne or rigatoni. Put a large skillet on at medium high and eyeball just enough olive oil to lightly coat the bottom of the pan. Put the sausage in. Brown them well on each side. About 3-4 minutes a side.

When the sausage is browned and firmed up move them to your cutting board and cut them in half lengthwise.

Quick Easy Shrimp Scampi

Shrimp Scampi is easy to make. It’s one of those recipes that you can cook up when you are in a rush to get something ready but you still want it to be real good.

Put a pot on to boil for the pasta. Thaw the shrimp in the microwave, if needed then peel and devein them, also, if needed. When the pasta water starts to boil add some salt and the pasta. Stir up the pasta right away so it doesn’t stick together.

Chop the garlic, zest the lemon, slice another lemon and chop up the fresh parsley. Dried parsley or dried basil will work in a pinch if you don’t have any fresh parsley.

Put a skillet on at medium. Add a tablespoon of extra virgin olive oil and 2 tablespoons of butter. As soon as the butter melts add all of the remaining ingredients except the shrimp. Mix everything together and spread it out. Lay the shrimp out on top and as soon as they start to turn pink turn them over and pink up the other side. Then mix the shrimp up with the sauce.

If the pasta isn’t done yet lower the heat on the skillet to as low as it can go. When the pasta is done drain it and put it back in the pot. Put the Shrimp Scampi in with the pasta and toss it all together.

If the pasta is done first drain it and put it back in the pot. Drizzle just a little bit of olive oil on it and put it back on the stove at as low a setting as possible until the Shrimp Scampi is done and when the shrimp is done put it on top of the pasta and stir it all together.

Serve it right away garnished with some grated parmesan cheese. A Caprese Salad and some good bread to dip in the sauce is great. And, a good light red like a pinot noir or a strong white like a chardonnay goes good. How’s that for a quick but fantastic weeknight meal?

We asked our daughter and her boyfriend over for dinner on sorta short notice and I had about 45 minutes to put something together. There was an eggplant leftover from a batch of Eggplant Lasagna the other night and we always have some chicken in the freezer. They both like pasta and our Marinara Sauce (of course) so I threw together some Baked Rigatoni with Chicken and Eggplant.

Get a pot of salted water on to boil and start the oven to preheating at 350F. When the water starts to boil add about half of a 1 lb. box of the pasta and stir it right away. Also stir it a few times as it cooks. When it is just slightly softened turn the heat off and let it sit.

Cut two boneless skinless chicken breasts (or six boneless skinless thighs) into about half inch cubes. Put the chicken in the pan and toss right away. Keep tossing regularly as you get after the eggplant.

If you only have a larger eggplant use half and save the unused half in the fridge with some plastic wrap covering the exposed part to keep it from turning brown. Add the eggplant to the pan and toss right away. Sprinkle about a tbsp. each of salt and pepper. Toss regularly so it all cooks evenly.

Baked rigatoni with Chicken and Eggplant poppopcooks.comIn a 9″ x 13″ baking pan very thinly spread some marinara sauce or canned  marinara sauce,  Optional, put some extra marinara in a sauce pan and gently heat it up for topping off the servings.  Then about a half of the pasta then about a half of the chicken/eggplant. Then a  thin layer of any good cheese you have on hand. We had some ricotta left over from a batch of Cheater Cannoli the other night.  Repeat the layer routine and this time with some sliced mozzarella. Thinly spread some sauce over the top and sprinkle some parmesan cheese all over it. Drizzle with some olive oil. Cover it with a piece of aluminum foil big enough to wrap it around the edges. Put it in the oven and bake it for about 20 minutes with the foil on. Remove the foil and bake it about another 10 minutes or until the mozzarella has melted and just starts to bubble.
