One Skillet Chicken Dinner with Peppers and Onions…..

………..is a nice twist on the old traditional Italian Sausage and Peppers. Here is our previously posted Sausage and Peppers recipe.

This time you will be making your whole meal in one skillet and in less than 30 minutes.

So here you go.

First put your skillet on at medium high with just enough olive oil to coat the bottom. Cut up the potatoes and put chicken tenders and the potatoes in the skillet. Drizzle with salt and pepper.One Skillet Chicken Dinner-poppopcooks.com-quick and easy-one pot-one pan-gluten free-paleo

Give the chicken tenders about 3 minutes a side. Stir the potatoes a few times as the chicken cooks. While the chicken and the potatoes are cooking cut up the pepper, onion and the garlic When the second side of the chicken has cooked add the rest of the veggies. Drizzle with a little salt and pepper again.

Stir everything a few times as it all cooks and when the peppers and onions are done the way that YOU like them put it on the dinner plates and serve up your One Skillet Chicken Dinner. Bon Appetito!!

Instructions

Pork Tenderloin One Pot Meal with Peppers and Onions – Quick and Easy – 25 Minutes – Gluten Free

Pork tenderloin One Pot Meal

You can do this one sooo many different ways. Of course the first that comes to mind is the traditional New Jersey style “Sausage and peppers” or you could substitute pieces of chicken instead of the pork tenderloin and on and on…….

……..More often than not the leftovers are just the veggies and it still works just fine for lunch the next day…..

…….This is your go to method to put together a quick and easy one pot meal on a busy weeknight and still have it turn out great.

Using a sharp knife remove the silver skin from the pork tenderloin and cut it crossways into about 3/4″ pieces. We usually get the pork tenderloins that have been coated with herbs and spices and vacuum sealed. Put a large skillet on at medium high with enough olive oil to generously coat the bottom. The veggies are going to absorb some of the oil so you may need to add a little more oil during the cooking process.

While the skillet is heating up cut up the veggies into the size chunks that you want. We like them like this……

The potatoes and the meat are going to take a little bit longer to cook so let’s put them in first and let them get about five minutes head start. Salt, pepper, dried basil and if you want it a little spicier some red pepper flakes. Toss them a few times as they cook.

Add the rest of the veggies and toss it all together. Then toss a few more times as it all cooks.

Then serve up and enjoy your Pork Tenderloin One Pot Meal. Top it off with some grated parmesan cheese. A nice smooth red wine like a Pinot Noir goes good with this quick and easy one pot meal.

One Pot Shrimp Dinner

An all ingredients in One Pot Shrimp Dinner that is very quick and easy while still being a very delish crowd pleaser. Start to on the table in 20 minutes and just One Pot.

If your shrimp have to be thawed out and you really want to be done in 20 minutes just thaw them in the microwave. Put a large skillet on at medium high with just enough olive oil to coat the bottom. Cut the onion into strips or just chop it up if you prefer. Have your peas and gnocchi standing by.

Put in the shrimp, onions, the salt and pepper and the gnocchi (you can get potato gnocchi and gluten free if you want).

Stir it up and when the shrimp just barely starts to show signs of turning pink add the peas, canned tomatoes and the Parmesan cheese.

Shrimp Fried Rice with Snow Peas

All in one pan including the rice!

You probably have noticed that I’ve posted a couple of Shrimp Fried Rice recipes before but never with snow peas. Snow peas can go great with just about any meat or fish but especially shrimp…..

……If you are using frozen shrimp put them in a bowl of cold water and they will be thawed out by the time the rice is done. Put a large sauté pan on at medium high. Add the water, the salt and the minute rice. Or, regular rice if you want. For meals like this I’ve settled on brown minute rice.

Stir it and bring it to a fast simmer. Lower the heat to the point that it maintains a simmer and cover with a lid. Follow the instructions on the box for the best cooking time for the rice that you are using. Check to see if any more water is needed at about 3 minutes short of the prescribed cooking time. If so just enough to bring the surface of the liquid even with the top of the rice.

While the rice is cooking chop up the onion and garlic. Whisk up the egg –  or eggs – and have the snow peas standing by.

Raise the heat on the pan to medium high and add just enough olive oil to cover the bottom. Put in the onions, garlic and shrimp.

Spread the shrimp out so they are all lying flat and give them about a minute and a half a side. Add the snow peas to the pan and stir a couple of times as they warm up. That’s about all that you want to do is warm them up. Then put the rice in and add the soy sauce. Stir it all together and stir a few more times as the rice gets heated back up.

When it is all heated up serve up your Shrimp Fried Rice with Snow Peas.

That's about all that you want to do is warm them up. Then put the rice in with a dash of soy sauce. Stir it all together and stir a few more times as the rice gets heated back up.
  5. When it is all heated up serve it up. You just made it better than take out. You're GOOD!!
