Chicken Parmesan – Quick and Easy – 30 Minutes

Chicken Parmesan…..

………is a traditional Italian recipe that uses just a few ingredients. It’s a great way to quickly and easily come up with a restaurant quality meal on a busy weeknight. 

We really like it and often serve it up for guests and it always goes over great.

I found these pre trimmed and portion size breasts that eliminate the trimming and hammering process. You just thaw them in the microwave and you are ready to go.

Just go with tenders if that’s all that you have on hand. It will still turn out great.

If you don’t make your own marinara sauce – Poppop’s==> recipe – just get some off the shelf at your grocery store. I recommend Biutoni.

Here is a 3 ingredient 30 minute recipe for marinara sauce from a really good book of simple traditional Italian recipes called Essentials of Classic Italian Cooking. I have it in my iPad and often refer to it .

Set your oven at 350°F/177°C. Put a skillet on at medium high and swirl just enough olive oil to coat the bottom.

If your chicken is frozen thaw it out in the microwave oven. While it’s thawing slice up or grate the mozzarella or use some of the pre shredded stuff.

Salt and pepper both sides of the chicken and….

…….fry in the skillet just enough to sear the outside. They are going to cook some more in the oven.

In a shallow bowl or baking sheet spread a little of the marinara sauce. Then……

……… lay the chicken out in the bowl – or pan – and top it with marinara sauce. A thicker layer than you have on the bottom.

Put on a layer of the mozzarella and just barely get it coated with a tiny bit of marinara just to keep it from getting any burnt crusty patches.

Then a generous layer of grated parmesan cheese, Sprinkle the dried basil, and lightly drizzle with some good extra virgin olive oil.

Then, into the oven it goes until the liquid on the bottom of the dish is bubbling and the cheese has melted. About 8 – 10 minutes. Then serve up and enjoy your Chicken Parmesan!

Chicken Florentine an easy way!

Chicken Florentine is a favorite of ours, our family and our friends. Two of our granddaughters helped me make it once and it became extra special from then on. 

IMG_2238You could pound some halves of chicken breasts flat and keep them in the freezer ready to go. We also keep a bag of tenders that we buy frozen and keep them on hand. Put a frying pan big enough to handle the chicken pieces on the stove at medium high and a pot with salted water to boil for the pasta. Salt, pepper and garlic powder one side of the chicken. Place the chicken in the pan seasoned side down and then season the up side. Cook them for about three minutes a side or until you are satisfied that they are cooked through. The juices will run clear and they will be firm to a finger poke. Squeeze the chicken over to the side and put the spinach on the exposed portion of the pan. Turn it and let it get barely wilted.

IMG_2240Spread the chicken out again and cover it with the spinach. Top the spinach with the mozzarella. Surround the chicken with the marinara. When the pasta is al dente add it to the sauce and gently turn it over to let it get covered with the sauce.

When the cheese has melted serve it up! With some chianti and some good bread.

Pizza

Don’t order your pizza delivered anymore. Making pizza like YOU want it, at home, is faster, easier and WAY better!

Pre heat your oven to the hottest you can get it. 500 or more.

For the crust you just grab some of the dough out of the fridge. Remember? That stuff you made with Poppop’s Eeeeeasy homemade bread recipe. Or you could bring one of those ready made crusts home from the grocery store. (they’re a little rubbery) Or you could use those pillsbury pre-made pizza dough things in the pop open cans. We’re going with the homemade dough,,as always. Flour the counter top and roll out the dough. Get it as thin or as thick as you like.

Use the rolling pin to transfer it to cookie sheet that you’ve sprayed with oil. You could line the sheet with aluminum foil and spray it for an easier cleanup.

 

You first add the sauce. Canned or jarred or your own homemade sauce or even sliced or diced fresh tomatoes. Mozzarella, of course, and tonight we’re going with pepperoni and onions.

Drizzle with olive oil then either fresh or dried basil, fresh or dried oregano and grated parmesan cheese.

Check it and when the outside edge of the crust is as crispy as you like it take it out and scoot it over to a cutting board, and with your chef’s knife or a pizza cutter, divvy it up into the size pieces you want.

Serve it up with some chianti, of course, or your favorite beer!

Pork Tenderloin Parmesan

 

 

Pork Tenderloin Parmesan is a real nice change from chicken parmesan. We stopped doing veal parm  when we started getting nose bleeds at the check out.  A friend told us about doing it this way and it’s good. Real good.

IMG_2391Trim the fat off the tenderloin and cut it up in to  about 3″ pieces.

IMG_2392Cut into each piece lengthwise about halfway through. Then do the same into each half so it becomes opened up, kinda.

IMG_2395Flatten them with a meat mallet or if you don’t have one whacking  it with the bottom of a pot will work. Pre heat the oven to 350.

IMG_2397Put a frying pan on medium high and add about 2 tbsp. of olive oil. Salt, pepper and garlic powder each side of the cutlets and cook each side about 5 minutes or until they are firm to a poke from your finger. You can use individual cassarole dishes or do them all in a roasting pan. We”re just cooking for the two us tonight so we are going to put 2 dishes in the freezer. First a little bit of sauce, then the cutlet, then sauce on the meat, then mozzarella, then a little sauce spread out on the cheese. Very lightly drizzle a little olive oil. Then grated parmesan cheese all over them. Sprinkle on some dried oregano and basil.

IMG_2398Two in the freezer and two in the oven for 10-15 minutes or until the cheese is melted and the sauce is bubbling.
