Lemon Parsley Baked Cod Filets

 

Another busy day and you’re tired. You want to put together a nice dinner but you don’t want it to be a dragged out process.

Oven Baked!?  Yeah! yeah!  Something that you can put in the oven and just let it do it’s thing.

You could even put the veggies in the baking sheet if you want to. I didn’t tonight because Gammy wanted some sautéed broccoli with garlic. And, whatever Gammy wants Gammy gets.

We don’t have cod any other way than baked in the oven. It just turns out best this way. Just a few ingredients and the preparation is simple.

There is always some good, wild caught, cod filets in the seafood section at our local grocery store. You can also get frozen. I always have some in the freezer ready to go.

Set the oven at 400°F/205°C.

if your cod filets are frozen just put them in a bowl of water while you get the butter melted, chop the parsley and zest the lemon.

If you’ve done the prep and the cod filets are still a little stiff just take them out of the plastic bag that they came in and put them in a bowl in the microwave.  Zap them in 10 second increments checking each time until they are soft but not hot yet.

Squeeze the juice – from the lemon that you have zested – into the bowl with the butter. Mix the flour, lemon pepper, dill weed, salt, pepper and parmesan together in another bowl.

BTW – rice flour for gluten free and almond flour for Paleo and gluten free.

Line a baking sheet with aluminum foil then spray or wipe it with olive oil.

One at a time dip the filets in the lemon juice butter mixture then in the flour mixture getting them thoroughly coated. Lay them out on the baking sheet.

Drizzle the remaining lemon butter mixture over the filets and put them in the oven.. 

Bake for about 8 – 10 minutes or until they want to flake easily when poked with a table fork.

Lay them on your dinner plates and top with the lemon zest and parsley. We really like this recipe and I bet that you will too.

Shrimp Zucchini Onions Garlic – 20 minutes

Shrimp cooks fast. Zucchini cooks fast. Onions cook fast. Garlic cooks fast. 

So, It looks like we are going to put together a quick and easy meal. 

BTW,,also a very tasty meal.

Whenever I start some pasta to go along with this recipe it turns into a race to see if the pasta or the Shrimp Zucchini Onions Garlic skillet is going to finish first.

If you want to turn this into a one pot meal you could add a little chicken broth or just water with a little lemon juice squeezed in and put some gnocchi’s in when you add the shrimp. The gnocchi will take about the same time to cook as the shrimp.

Alright, lets get going!

If you have to thaw and/or devein the shrimp get it started. They will thaw quicker in the microwave then in water.

Put a skillet on at medium high and swirl in enough olive oil to cover the bottom.

Rinse off the zucchini and slice it into about half inch thick slices. Cut the onion into strips. Add the zucchini and onion to the skillet. Salt and pepper. Toss or stir as they cook.

Chop up the garlic.

When the zucchini and the onion have started to brown…….

…….push them to the outside of the skillet and add the shrimp and the garlic. Squeeze in the lemon juice and toss in the rind.

Cook cook until they are pink on one side and then pink on the other and opaque in the middle. Enjoy!

Lemon Zested Cod Filets

A real good seafood recipe that you will like how easy it is to prepare and how great it tastes.

Today’s favorite kitchen gadget is this zester. It’s the one that I use. I like it and recommend it.

Set the oven at 400°F/204°C. If your cod filets have to be thawed out just put them in a bowl of water while you prep the butter and the breading. They will be ready for you when you are ready for them. Put the butter in a shallow dish, in the microwave to melt while you get the breading ready. For the breading put the crackers of your choice in a plastic zip lock bag and mash ’em into crumbs with a rolling pin or a sauce pan. You can use bread crumbs or any crackers from cheez-its to saltines and anything in between. Even gluten free if needed – like these in the pic.

Put the crumbs in a shallow dish. Add the salt, pepper and garlic powder. Zest the lemon right into the dish. Add the parsley then stir it all up.

Line a cookie sheet or baking pan with aluminum foil and spray or coat it with olive oil. Dip the filets in the butter then the breading. press and turn the filets in the breading to get them coated all over then put them into the baking pan.

Into the oven for 10 – 14 minutes depending on the thickness of the filets. When they are getting firm to a poke and want to flake if poked with a fork they are done. Serve them up and Bon Appetit!

You can do pork tenderloin medallions lots of different quick and easy ways. Rosemary always goes along real well as added flavor with pork so here is that good combo in a very good quick and easy weeknight supper.

You might like one of these pre flavored up tenderloins like this. We do and they come in a choice of different marinades.

Put a skillet on at medium high and swirl about 2 tablespoons of olive oil in it. Using a sharp knife remove the silver skin from the tenderloin and put it in the skillet. Just sear the outside surfaces. Don’t worry about cooking it all the way through at this point. It will finish cooking later in the sauce. While the tenderloin is getting seared chop up the rosemary and the garlic. In the interest of quick and easy I sometimes use that pre-chopped garlic that comes in a jar. That’s what you see here. Have the butter and lemon standing by.

When the tenderloin has gotten seared all around remove it to the cutting board and put the rest of the ingredients in the pan. Add a little red wine or white wine or chicken broth or beef broth.

Using a wooden spoon scrap the bits off the bottom of the skillet and mix everything together. Bring it up to a simmer and lower the heat just enough to maintain the simmer.

Cut the tenderloin into medallions.

Add the medallions to the skillet and stir them around a little getting them coated with the sauce.
