Sorry,,but I got real excited about how good this Spanish Rice Recipe is.

It’s a ways off of the usual Spanish Rice Recipe beaten path but WOW!!  It is good.

And, the whole meal, meat, rice and veggies are all done in one skillet in thirty minutes, or less.

IT WAS DELISH!! Ya gotta do it!

Put the water on for the rice or get some of your supply of cooked rice that you keep in the freezer. I used some instant rice this time and as soon as the water started to boil I put the rice in and turned the heat off.

Put the skillet on at medium high and add a little olive oil. Clip an end off the chorizo links and squeeze the chorizo into the pan. Break it up and let it start cooking.

Chop up the onion, poblano peppers and the jalapeños.

Add them to the pan. Add the salt, pepper and cumin. Stir it all together a few times as it cooks.

When the onion has started to get translucent add the chicken broth and the salsa.

Stir it up and add the rice.

Mix it all together a few times as everything warms up.

Then when it is all steaming hot, serve and enjoy your Spanish rice.

We sure did! After all, it is the BEST EFFIN SPANISH RICE RECIPE EVAH!!

Chorizo Dinner While Wasted Away Again in Margaritaville

Yes, we had a chorizo dinner while we were wasted away again in Margaritaville.

We were living in Mexico in a town called Chapala. A really nice area on Lake Chapala which is about an hour south of Guadalajara .

A few times a year we would take the 3 hour drive over to the coast with our super good friends, Butch and Janie, to a little town called Melaque.

Butch and Janie were the reason we were living in Mexico. They had moved down there years before us. We visited them and fell in love with the area and all of the things about it.

Butch was pretty careful with a dollar so he would make all the arrangements with his favorite family owned hotel that was right on the beach just south of melaque central.

He always managed to get us a 2 bedroom 2 bath suite (kinda) that would have a kitchen and a living area. Plus a balcony that looked out on the beach where we could watch the sunset as we sipped our Margaritas. All for about $35 a night.

Janie and Gammy would put breakfast together and Butch and I would stumble through Margaritaville while getting supper on the table.

One day the Jersey Italian side of me surfaced and I said, “I’m gonna make sausage and peppers tonight”

Butch said, “Jack, there isn’t any Italian sausage here. The only sausage here is chorizo.”

“So, it’ll be our Mexican version of sausage and peppers.”

We bought all of the ingredients for the “chorizo and peppers”. And also the margaritas – of course.

As soon as we got back to the hotel Butch put together a big pitcher of margaritas. We all knocked it off while I was getting the chorizo dinner ready.

Then we went through another pitcher. While we dined on our chorizo dinner.

We were pretty far into Margaritaville and our third pitcher while we were playing “trivial pursuit.”

It was Butch’s turn to ask and my turn to answer.

He read the question and slurred out, “Doesh Uranus have an aroma?”

It took a second for us to realize what he should have said but messed up and we all burst out laughing nearly falling off our chairs.

When I had recovered I answered the question stating that, “yesh my anus doesh have (hic) an aroma.”

I hope that my recollection of that great time with our super good friends Butch and Janie hasn’t ruined your appetite for this one pot chorizo dinner.

Put a skillet on at medium high and eyeball in a couple of tablespoons of olive oil.

Trim one end of the casing off of the chorizo and squeeze it into the skillet.

Let the chorizo cook as you peel and thinly slice up the potato.

Push the chorizo off to the side and put in the potato slices.

Cut up the peppers, onions and the garlic.

When the potato slices are starting to look a little wimpy and the chorizo is wanting to break up add in the rest of the veggies. Sprinkle in the salt, pepper and cumin.

Stir or toss it all together a few times as it sizzles and…….

1…..when everything is cooked – about 6-8 more minutes – dish out and enjoy your Chorizo Dinner.

I couldn’t stop myself from garnishing with some grated parmesan but I did use cilantro instead of parsley.

Quick Easy Fish Tacos – Grew up in New Jersey and had never heard of tacos. Have lived in Texas for a total of about 30 years and learned about tacos. But, never heard of fish tacos. Our 30 years in Texas were interrupted by living at Lake Chapala in Jalisco, Mexico for a total of three  great years. There we learned about fish tacos and became addicted. They are really quick and easy. Also a great – pick it up and scarf it down – supper in front of the TV. Margaritas or just plain Tequila really help set the mood.

After the tortillas and the cooked fish the rest is up to you. This is how we did it tonight and it turned out great!

First the pico de gallo – sorta – topping. Cut the ends off of the zucchini and thinly slice it. Chop the onion, the Roma tomato, the cilantro, the avocado and the jalapeño pepper. Put it all in bowl and add the cumin, salt, Cayenne pepper and the garlic powder. Squeeze the juice from the lime, drizzle a little extra virgin olive oil and toss it all together. Put it aside in the fridge while you tend to the fish.

Cut the catfish (or whatever fish you want to use) into short strips cutting across the filets.

Put a skillet on at medium high and eyeball about 2 tablespoons of olive oil. Put the fish into a bowl and add onion cut into thin strips (aka julienne), salt, pepper, chopped cilantro and the lime rinds left from juicing it into the pico.

Toss it all together and put it in the skillet.

Gently stir or toss the fish as it cooks turning the individual pieces as necessary to get them cooked evenly. When the fish is firm and not spongy it’s ready. It should take about 5 minutes.

Warm the tortillas wrapped in a towel in the microwave for 30 seconds. Then put the fish in the tortillas and top with the faux pico de gallo. This is a very good quick easy fish tacos recipe. Enjoy!

Quick Easy Chicken Thighs Plus Some Quick and Easy Salad

You will like this for a weeknight meal when you are tired but don’t  want to just zap a leftover or a box meal and because this Quick Easy Chicken Thighs recipe is good, real good. It doesn’t have to be chicken thighs. If you keep frozen tenders or breasts in the freezer you could just thaw them out in the microwave instead.

Turn on the broiler. First put all the ingredients except the chicken in a bowl and mix them all together.  Your creative skills are going to kick in here because after the salt and pepper you can go with any kind of spices and herbs YOU want. From allspice to wasabi and everything in between. You don’t have to stick to the ingredients listed in this recipe. You probably have whatever it takes to make it real good in your pantry.

Then add the chicken the bowl and toss it all together getting the chicken coated with all the good stuff.

Spray oil the right sized cookie sheet or baking pan. You can line it with aluminum foil to make the cleanup as quick and easy as this recipe. Spread the chicken pieces out in the pan and and broil for 5-7 minutes depending on your oven and the thickness of the chicken. Turn them over and cook the other side. When the juice running out of the chicken is clear it is done.
