Scarborough Fair Chicken – 20 minutes

Yup. Your Scarborough Fair Chicken is made with Parsley, Sage, Rosemary and Thyme. But, it’s still quick and easy. If you don’t have the fresh herbs you could use dried. We had to go that way with the thyme this time. Sorry,I couldn’t resist that.

First let’s get the Parsley♩Sage  ♪ Rosemary ♫ and Thyme ♬ ready to go. Plus a little garlic that will need to be chopped up. Don’t forget, you can use all dried herbs if you want.

You could get the chicken breasts that are already sliced from the store, or you could buy a pack of boneless skinless breast and slice them in half or you could just go with whole boneless skinless breasts. We get the pack of them and slice them. Always use a dishwasher safe cutting board when you work with raw chicken.

Then we put the extras in zip locks and put them in the freezer for another quick and easy weeknight meal.

Put a skillet on at medium high and add a couple of tablespoons of olive oil. Lightly salt and pepper both sides of the filets and when the pan gets hot put them in.

3-5 minutes a side depending on the thickness. When they are firm to a poke and/or the juices run clear they are ready for the Parsley♩ Sage ♬ Rosemary ♪ and Thyme ♫. Add the butter, white wine and all of the herbs. Stir it all up with a wooden spoon getting all of the bits off the bottom of the pan.

Tilt the pan and scoot the chicken over to the high side. Then with a cooks spoon baste the liquid and the herbs over the chicken for another couple of minutes.

Quick Easy Shrimp Scampi

Shrimp Scampi is easy to make. It’s one of those recipes that you can cook up when you are in a rush to get something ready but you still want it to be real good.

Put a pot on to boil for the pasta. Thaw the shrimp in the microwave, if needed then peel and devein them, also, if needed. When the pasta water starts to boil add some salt and the pasta. Stir up the pasta right away so it doesn’t stick together.

Chop the garlic, zest the lemon, slice another lemon and chop up the fresh parsley. Dried parsley or dried basil will work in a pinch if you don’t have any fresh parsley.

Put a skillet on at medium. Add a tablespoon of extra virgin olive oil and 2 tablespoons of butter. As soon as the butter melts add all of the remaining ingredients except the shrimp. Mix everything together and spread it out. Lay the shrimp out on top and as soon as they start to turn pink turn them over and pink up the other side. Then mix the shrimp up with the sauce.

If the pasta isn’t done yet lower the heat on the skillet to as low as it can go. When the pasta is done drain it and put it back in the pot. Put the Shrimp Scampi in with the pasta and toss it all together.

If the pasta is done first drain it and put it back in the pot. Drizzle just a little bit of olive oil on it and put it back on the stove at as low a setting as possible until the Shrimp Scampi is done and when the shrimp is done put it on top of the pasta and stir it all together.

Serve it right away garnished with some grated parmesan cheese. A Caprese Salad and some good bread to dip in the sauce is great. And, a good light red like a pinot noir or a strong white like a chardonnay goes good. How’s that for a quick but fantastic weeknight meal?

Shrimp Fettuccine Aglio e Olio is our little embellishment on the traditional Spaghetti Aglio Olio. Forgive us and then make this real good Shrimp and pasta dish for your own table.

Let the peeled and deveined shrimp rest in some lemon juice for a little while

Peel and deveined 12 large shrimp and let them sit in a bowl with some lemon juice and the rinds for a few minutes as you put a pot of lightly salted water on to boil for the fettuccine (or whatever kind of pasta you prefer). When the water starts to boil add the pasta and stir immediately.

Include the lemon in the pan with the shrimp

Chop up 6-8 cloves of garlic. Put a pan with 4 tbsp. of extra virgin olive oil and a tbsp. of butter on the stove at medium low. Let the oil and the butter heat up for a minute or so and add the garlic stirring it up to distribute it out in the pan. Add a pinch each of salt, black pepper and red pepper flakes. Spread the shrimp out in the pan laying on their sides. As soon as they turn pink on the down or pan side turn them over. When they are pink on both sides take the pasta out of the pot with a pair of grabbers or 2 large forks, whatever works for you, and put the pasta in the pan with the shrimp and garlic.  Add a couple of tbsp. of the pasta water and a about 2 tbsp. of chopped fresh parsley, (or 1tbsp. of dried) and 3-4 tbsp. of grated parmesan cheese to the pan. Mix it all together and toss a couple of times.

Serve it up! With some wine that you like and maybe some baked parmesan zucchini chips like you see in the pic Fettuccine Aglio e Olio poppopcooks.com
