If Filet Mignon sounds a little too restauranty and chefy for you to make at home.

That is not so!

It definitely qualifies as Quick and Easy and …….

……..it’s not real expensive. You can get USDA choice beef tenderloin steaks for $8.99 – $9.99 a pound at Costco and Sam’s. A pound will give you two big (8oz.) steaks or 3 -4 regular size.

And,,,you will still get this great meal on the table in less than 30 minutes.

Tonight I put some string beans and onions in a skillet on a burner set at medium heat with salt, pepper, lemon juice and butter.

Stir them a few times as they do their thing. When the onions have started to wilt add the white wine – or chicken stock – and let the wine simmer and reduce a little.

While the veggies are getting cooked. Multi task a little and put another skillet on a medium high and swirl about a tablespoon of olive oil in.

Salt pepper and garlic powder both sides of your beef tenderloin steaks and put ’em in the skillet. Just sear each side for about 2 minutes and …..

……put them in a dish that will catch the drippings and put the dish on an idle burner to keep warm. Rinse off the mushrooms. You could use bigger ones than shown here and cut them up. We like these baby portabellas.

If you are using jarred mushrooms just drain them. Put the mushrooms in the steak pan and brown them a little.

Add the salt, pepper, onions, garlic and rosemary.

Stir it up and let it cook until the onions just start to brown a little on their edges and add the butter and the red wine. Stir with a wooden spoon scraping the bits of meat off the bottom.

Put the steaks and the drippings back in and turn them over a few times as the butter melts and the wine reduces. When the filet mignon is cooked to the degree of doneness that YOU want   – rare is soft to a poke or 140-145° on a meat thermometer – starting to get firm or 155-160° is medium – firm or 165-170° is well done.

Serve up and enjoy your Filet Mignon. Top the steaks off with the onions and a little of the sauce.

Oh yeah, and get after the rest of that red wine. We had a nice bottle of pinot noir with our filet mignon.

Tuna Steak – Pan Seared – Quick and Easy

You will get rave reviews from friends and family when you serve up this Quick and Easy Pan Seared Tuna Steak with Cilantro and Lime because……..

………it’s delish! A restaurant could not do it any better than you. And, you won’t  take very long, in fact just minutes, to get it done and on the table. 

You can rub the tuna steaks with any combination of dried herbs that you prefer. We like the lemon pepper, dill weed and garlic powder combo but you’re the boss so do it the way that YOU like it.

If you don’t live where you can get fresh tuna steaks just get the frozen ones and put them in a bowl of water before you start on the veggies.

First lets get the one pan potatoes and string beans going and in the oven. They’re are going to take longer to cook than the tuna steaks will so let’s give them a head start.

Set the oven at 400°F/200°C. Put the potatoes in the microwave and zap ’em ’til they are soft enough to be squashed. 4-8 minutes depending on how many. If you are using big ones cut them up into chunks of about half dollar size.

While that is going on cut the onion into thin strips.

If you aren’t using pre -trimmed and washed string beans………

…….go ahead and cut the fuzzy ends off and rinse them under running water.

Put the string beans in a row along one end of a cookie sheet. Put half of the onion strips in the spots where you are going to squash the potatoes. Put the potatoes on the onion strips and squash ’em. Then spread the rest of the onion strips on top of the potatoes and if you have some to spare just put them on the string beans.

Drizzle everything with olive oil and sprinkle with grated parmesan, salt and pepper.  Then…….

……..into the oven it goes.

Chop up the cilantro leaves and put them into a small bowl. Squeeze the lime juice in and add just a little salt and pepper. Then stir it together and put it aside while you get the tuna ready.

Pat the steaks dry and lay them on a paper towel. Sprinkle half of the salt, lemon pepper, garlic powder and dried dill weed on the steaks and gently rub it onto the tuna with a spoon.

Put the tuna steaks onto a new dry paper towel with the spiced side down and repeat the process on the up side.

Put a skillet on at HIGH and swirl in enough olive oil to coat the bottom.

While it’s getting hot flip the potatoes over and pat them down onto the onion strips and lay the cheese slices onto the string beans. I had some provolone left over from a recent batch of lasagna so that’s what I used but any kind of sliced cheese that you like will work just fine.

Your skillet will be hot now so gently lay the tuna steaks into it. A minute a side will give you almost sushi rare. 2-3 minutes a side will give you medium rare and any more than that will give you well done. Another way to tell is the poke test. You remember just how pliable they were when they were raw, well the more firm that they are beyond that will tell you the degree of doneness.

Chicken Piccata…..

……..is an easy dish to prepare and it’s delicious! It’s one of those meals that we don’t order in a restaurant because we can make it better at home and so can you!!

Today’s tip……When you chop up onions or garlic chop up a good bit more than you need and put the extras into zip-lic bags. Store them in the freezer to make your future quick and easy meals even quicker and easier.

Now,, back to your Chicken Piccata with Roasted Vegetables. Set the oven at 400°F. Line a cookie sheet with aluminum foil and cut up whatever veggies that you want to have in the mix. Potatoes, onions and peppers are the basics but after that just go with whatever strikes your fancy. As you can see we also had on hand some brussels sprouts, carrots and zucchini. Put the veggies onto the cookie sheet and generously drizzle with the extra virgin olive oil. Sprinkle with salt, pepper, garlic powder and dried basil. Mix it all together by hand and spread it out. Into the oven for about 15 – 20 minutes.

Poke a potato with a table fork to check if they are done. When the potato is as soft as you want it everything else is done too. If the veggies are done  before the Chicken Piccata is just turn off the oven and they will stay warm for you.

Put a skillet on at medium high and add some olive oil and half of the butter. Mix the flour, salt and pepper in a shallow dish and dredge the chicken filets in the flour mix and put them in the skillet. About 3 -5 minutes each side depending on how thick they are. When they are firm or read 165°F  on an instant read meat thermometer remove them to a dish that will catch the drippings. Add the rest of the butter, chopped garlic, capers, parsley flakes, lemon slices and parmesan cheese to the skillet. Stir it up with a wooden spoon getting the bits off the bottom of the pan.

Add the white wine – or chicken broth – and bring it up to a fast simmer. Then reduce the heat just enough to maintain the simmer.

One Skillet Chicken Dinner – 25 minutes or less

One Skillet Chicken Dinner – You will have the whole meal done and on the table in 25 minutes or less.

Put a skillet on at medium high and add enough olive oil to coat the bottom. Using a dishwasher safe cutting board cut up the chicken breast or tenders into about 1″ chunks. Add them to the skillet and stir them around a little. Sprinkle with salt, pepper, garlic powder and dried basil.

Stir the chicken around a few times as it cooks. While it is cooking rinse the string beans, trim off the stumpy ends and cut them in halves or thirds. Chop up the onion.

Mix it all together. Bring it up to a fast simmer and lower the heat just enough to maintain the simmer. Light up the broiler. Stir everything in the skillet a few more times as it all cooks. When the pasta – gnocchi – has softened to the nibble test top it all off with a layer of shredded mozzarella then a layer of grated parmesan. Some dried parsley and even some red pepper flakes if want.

Recipe Notes

You can use any kind of pasta instead of gnocchi. Gnocchi cooks in like 2-3 minutes and pasta in 8-10 minutes.
