One Pan Chicken Dinner can mean a whole lot of different combinations of ingredients. You could use beef or pork instead of the chicken. Potatoes or rice instead of the pasta and any veggie that you have on hand instead of asparagus. It’s that time of year and we found some locally grown, very fresh, asparagus and parsley so,,,.

You don’t have to do this with the chicken. You could just use chicken tenders or sliced chicken breasts. I like to keep some chicken breasts, that I’ve sliced and hammered, in the freezer. Today I needed to refill the supply in the freezer so while I was at it I just went ahead with the chicken this way. But, just grabbing some tenders out of the freezer and thawing them in the microwave is faster.

Put a large sauté pan on at medium high and add enough olive oil to cover the bottom. If the breasts are big cut into thirds by cutting the skinny end off and slice the big end horizontal. If they are average or small just slice them in half horizontally. Cover with some plastic wrap and hammer them flat. All to about the same thickness. Or, just skip all the cutting and hammering and go with chicken tenders.

Cook about 3-6 minutes a side, depending on the thickness, or until the juices run clear and/or they are firm when you give them the finger. I meant poke them with a finger. While the chicken is cooking cut off and discard the stump ends of the asparagus spears and then cut the spears into thirds.

Put them in a strainer and rinse them off real well. Let them drain while you chop up the garlic and the parsley.

Add the pasta, asparagus, garlic and chopped parsley to the pan. Hold a little parsley back for garnish. Then the canned tomatoes or sauce and the chicken broth. You can make it from powdered bullion. A little more salt and pepper.

Mix it all together and when it comes to a simmer reduce the heat enough to just maintain a rapid simmer. Put a lid on it.

Cook for 6-8 minutes. Stir and turn over the chicken a couple of times thru the process keeping the asparagus and the pasta down in the liquid as much as possible. When the pasta is cooked the way YOU want it done enjoy your One Pan Chicken Dinner. Spoon the sauce all over everything. Garnish with the parsley that you held back and top with some grated parmesan.

A nice red wine like a Pinot Noir or a Cabernet Sauvignon would go real well with this One Pan Chicken Dinner. And of course some homemade bread to dip in the sauce is real good too.

Oven Baked Tuna Steak Dinner Twenty-five Minutes

You want to put together a nice weeknight meal, but, in a hurry and a real good one? This Oven Baked Tuna Steak Dinner can happen at your house with just two pans in the oven, each lined with aluminum foil so there are no pots or pans to scrub. Or just use disposable aluminum pans. Interested? Read on.

If you are located where you can get fresh tuna then get steaks about one inch thick and at about six ounces. If you can’t get fresh then your super market will have frozen at just about that size. We get frozen and put them in the fridge to thaw for a day before we use them. You can defrost them in the microwave if you like just check them often.

Set the oven at 400°F. Put the steaks in a bowl that is big enough to handle a little tossing and turning.

Now zest and squeeze a lemon into the bowl. Then add the salt, pepper, dill weed and olive oil.

Gently turn the steaks over a few times to mix up all the ingredients and evenly coat the steaks. When that’s done to your satisfaction line a baking pan, that is just big enough to handle your steaks, with aluminum foil. Again, use enough foil so that it sticks up past the sides of the pan. Cut the ugly end of the stalks off and lay them out in the pan. Cut the onion into strips and add it to the asparagus. Put the pans in the oven and after ten minutes check ’em. The narrower the asparagus stalks are the quicker they will cook. The steaks will get cooked medium well in 10-12 minutes. Poke the asparagus with a fork and the steaks with your finger. The softer the asparagus the more done it is. The firmer the tuna the more done it is. If you are unsure about the tuna just split a steak with the fork to see if it is how YOU like it. Some folks like it raw in the middle and some like it with no pink whatsoever.

Stovetop Grilled Shrimp with World Class Veggies

You want it to be real good but you want it to be easy and on the table in a flash. This Stovetop Grilled Shrimp will fill the bill for you on all counts.

If your shrimp are frozen just put them in a bowl with enough water to cover them up for about ten minutes while you prep the vegetables, then peel and devein them.. Rinse and wipe out the bowl and put the peeled and deveined shrimp back in. Drizzle them with a little olive oil, lightly sprinkle with salt, black pepper, red pepper flakes and garlic powder. Squeeze in  the juice from a quarter of a lemon. Toss in the lemon rind and stir it all up. Put it aside to marinate a little as you do the veggies.

Put the oven on at 400°F. Scrub and rinse the sweet potatoes then slice them in to about 3/8″ slices. Put the slices in a bowl and drizzle them with olive oil and lightly sprinkle some salt and pepper on them. Toss the slices so they get coated with the oil, salt and pepper. Spread them out on a large cookie sheet and put them in the oven. After about five minutes either turn them over or switch the oven to broiler mode and give them another 3-4 minutes. Poke them with a fork to see when they are done. I wanted them to look grilled,,so,,I grilled them and then put them in a bowl covered with a plate and on an idle burner on the stove to stay warm.

While the potatoes are cooking cut up the veggies. Trim the stub ends off the asparagus and cut the asparagus spears  into any sized pieces you want, but, you already knew that didn’t you. Cut the onion into thin strips and chop the garlic.

Put a large skillet on at medium high and add one tablespoon of olive oil. Put the asparagus in the pan and toss a few times as they cook.

When they are just starting to get a little limp push the asparagus out to the sides of the pan and put the onion in the bare spot. Stir the onion a few times as it cooks.

When the onion just starts to get translucent push it to the outside also and put the garlic in the middle. Squeeze the juice from a quarter of a lemon on to the garlic. Lightly sprinkle salt and black pepper. Toss it all together and toss it few more times as it all cooks and comes together. That’s an old Beatles song right?

Okay, so the Veggies are almost done. Now the Stovetop Grilled Shrimp part. If you don’t already have a stovetop grill or a skillet on a burner put it on now. Parmesan Garlic Baked Asparagus. You will like this, It’s quick and easy. It’s healthy. It’s Gluten free. It’a a perfect veggie side dish.

Set the oven at 400F. Cut the ugly bottom ends off the spears and put the good stuff in a strainer. Rinse very thoroughly with cold water. Turn off the water and shake and tilt the strainer to get as much of the water off as possible. Let the asparagus drain and chop up 2 cloves of garlic. Put the asparagus and the garlic in a bowl and lightly drizzle with olive oil. Shake half of the Parmesan over the spears. Very lightly sprinkle with salt and pepper. Squeeze a wedge of lemon on it. Toss it and repeat the additions. Toss again. Spread it out on a parchment paper or aluminum foil lined baking sheet. Bake it for 8-15 minutes or just until it is as soft as YOU want. 8 is crunchy and 15 starts to get mushy. Check it often.
