Parmesan Chicken Thighs and Sweet Potato Fries……

………..will make you feel like a poet when you say it and a chef when you make it.      The parmesan crusted pan fried chicken thighs and the peppers giving a different twist to fried sweet potatoes all come together real “Quick and Easy”. Watch this video for a sorta preview.

I used boneless skinless thighs but you could use any cut of chicken that works for you. 

Put a skillet on at medium high and add enough olive oil to coat the pan about 1/8″ deep. Trim the excess fat off the thighs. In a shallow dish mix together the flour, grated parmesan, salt, pepper, garlic powder and dried basil. One at a time dip the chicken thighs in the dry mixture and press them in to get them coated evenly and add them to the skillet.

While the Parmesan Chicken Thighs are cooking put another skillet on at medium high and swirl in just enough olive oil to coat the bottom.

Peel and cut up the sweet potatoes into slices about 1/8″ thick and add them to the pan then…….

……..cut the pepper in half lengthwise and remove the stem and seeds and cut them into whatever size pieces that you want. Add the peppers to the potatoes and……..

……..sprinkle with salt and pepper. Toss a few times to get it all mixed together.

The Parmesan Chicken Thighs need to be turned when they are browned on one side. Then when the juices run clear or the thickest one reads 165° on an instant read meat thermometer remove to a pepper towel lined dish.

Watch the potato pan and toss or gently mix a few times as it cooks to help everything cook evenly.

Pork Scallopini in Lemon Butter Sauce – 25 Minutes – Quick and Easy

 Pork Scallopini in a Lemon Butter Sauce is another one of our quick and easy weeknight meals – on the table in 25 minutes or less and real good.

But First—Todays tip!

When cooking pasta put it in the pot of water as soon as you put the pot on the stove. You don’t have to wait for it to boil first. It will save you some time on a busy weeknight. Give it a  try with some linguini with todays Pork Scallopini.

OK, back to our quick and easy Pork Scallopini. 

First let’s cut up the lemon(s) and chop up the garlic, or, use the pre-cut garlic in a jar.

 I’ll bet that your grocery store always has some thin cut boneless pork chops like this.

Put a Skillet on at medium high and add the olive oil and the butter. In a shallow bowl mix together the flour, salt and pepper.  Dredge the pork chops in the flour mixture………..

……….and put them in the skillet leaving a little space between them. Cook them in batches if necessary.

Give them just about a minute to a minute and a half per side depending on the thickness. These are pretty thin so I just went with a minute. When they are done remove them to a dish that will catch the drippings and set it on and idle burner on the stove to keep warm. Put the rest of the butter in the pan and then add the garlic, lemon and parsley.

Stir it up with a wooden spoon scraping the bottom to get any bits from the pork chops into the mix. After just about a minute put the white wine or –  chicken stock – in the skillet and as soon as it starts to heat up to a simmer put the pork chops back in. You can put them all in just move them around letting the liquid get in between them.

When the liquid has reduced and thickened a little serve your Pork Scallopini in Lemon Butter Sauce. Top off the meat and the pasta  with the sauce and lemons from the pan plus some grated parmesan cheese. Bon Appetito!!

BTW that side dish is some is some Sautéed Spinach that was an easy multi-task with tonight’s meal. A nice bottle of Chianti goes good.

Years ago I worked in a high end restaurant and this was the specialty of the house. You are hereby urged to get some lamb chops and enjoy them this way.

Put a skillet on at medium high and add enough olive oil to coat the bottom. Put the flour, dried basil, grated parmesan cheese, garlic powder, salt and pepper in a shallow bowl and mix them together.

Press the lamb chops on to the mixture getting both sides coated.

Put them into the hot skillet and…….

 …….sear them on both sides. Check them with a meat thermometer or poke them to see when they are done the way YOU like them.

While the lamb chops are cooking rinse off and chop the scallions – shallots or onions work in place of the scallions if necessary. When the chops are seared remove them to a plate on an idle burner on the stove. Put the butter and the scallions in the pan and stir with a wooden spoon getting the bits off the bottom. Sprinkle with a little salt and pepper.

When they have just started to show signs of getting translucent on the edges add the white wine or chicken broth.

We had some leftover risotto with peas in the freezer so that was our carb and veggie tonight. We uncorked a bottle of Spanish Garnacha and it all went together real good.

Chicken Piccata with Roasted Vegetables – Quick and Easy – 30 Minutes – Gluten Free

Chicken Piccata…..

……..is an easy dish to prepare and it’s delicious! It’s one of those meals that we don’t order in a restaurant because we can make it better at home and so can you!!

Today’s tip……When you chop up onions or garlic chop up a good bit more than you need and put the extras into zip-lic bags. Store them in the freezer to make your future quick and easy meals even quicker and easier.

Now,, back to your Chicken Piccata with Roasted Vegetables. Set the oven at 400°F. Line a cookie sheet with aluminum foil and cut up whatever veggies that you want to have in the mix. Potatoes, onions and peppers are the basics but after that just go with whatever strikes your fancy. As you can see we also had on hand some brussels sprouts, carrots and zucchini. Put the veggies onto the cookie sheet and generously drizzle with the extra virgin olive oil. Sprinkle with salt, pepper, garlic powder and dried basil. Mix it all together by hand and spread it out. Into the oven for about 15 – 20 minutes.

Poke a potato with a table fork to check if they are done. When the potato is as soft as you want it everything else is done too. If the veggies are done  before the Chicken Piccata is just turn off the oven and they will stay warm for you.

Put a skillet on at medium high and add some olive oil and half of the butter. Mix the flour, salt and pepper in a shallow dish and dredge the chicken filets in the flour mix and put them in the skillet. About 3 -5 minutes each side depending on how thick they are. When they are firm or read 165°F  on an instant read meat thermometer remove them to a dish that will catch the drippings. Add the rest of the butter, chopped garlic, capers, parsley flakes, lemon slices and parmesan cheese to the skillet. Stir it up with a wooden spoon getting the bits off the bottom of the pan.

Add the white wine – or chicken broth – and bring it up to a fast simmer. Then reduce the heat just enough to maintain the simmer.
