Alfredo Sauce with Fettuccine and Shrimp

  Alfredo Sauce with Fettuccine and Shrimp is Easy! 

When it was first done, hundreds of years ago, Fettuccine Alfredo was just pasta with melted butter and parmesan cheese. I had it like that myself a few times growing up in New Jersey and I still make it that way sometimes. Then the world turned and it had to have “Alfredo sauce” included to the extent that it’s now what we all think of when we see or hear of Fettuccine Alfredo.

Ya gotta do it for yourself. It’s so easy and so good. Or, you could buy some ready to go Alfredo sauce in the store on your way home.

Shh,,I won’t tell on you.

Get a pot of water on the stove, set it on high. Add the salt. When it starts to boil reduce it to medium high and add the fettuccine. With a pair of tongs get all the fettuccine down into the water. Stir the  around so that won’t stick together and stir it occasionally as it cooks.

While the fettuccine is cooking get a frying pan on at Medium heat and put in half of the butter. Add the shrimp and cook them just enough to turn them pink, flip them over with a pair of tongs and pink up the other side.

Put the rest of the butter in and add the heavy cream, salt and black pepper, a pinch of ground nutmeg (optional), a pinch of ground cloves (optional), a pinch of red pepper flakes (optional) and let it simmer.

When it has reduced just a little mix in the grated parmesan and keep gently stirring as your Alfredo Sauce thickens up. 

Put the fettuccine in the sauce and stir it getting the fettuccine coated with your Alfredo sauce.

Serve it up!

With some good pinot grigio or maybe a nice chianti. Chianti wouldn’t be a sacrilege with a shrimp dish, would it?

Shrimp Fettuccine Aglio e Olio is our little embellishment on the traditional Spaghetti Aglio Olio. Forgive us and then make this real good Shrimp and pasta dish for your own table.

Shrimp Fettuccine Aglio e Olio
Let the peeled and deveined shrimp rest in some lemon juice for a little while

Peel and deveined 12 large shrimp and let them sit in a bowl with some lemon juice and the rinds for a few minutes as you put a pot of lightly salted water on to boil for the fettuccine (or whatever kind of pasta you prefer). When the water starts to boil add the pasta and stir immediately.

Include the lemon in the pan with the shrimp

Chop up 6-8 cloves of garlic. Put a pan with 4 tbsp. of extra virgin olive oil and a tbsp. of butter on the stove at medium low. Let the oil and the butter heat up for a minute or so and add the garlic stirring it up to distribute it out in the pan. Add a pinch each of salt, black pepper and red pepper flakes. Spread the shrimp out in the pan laying on their sides. As soon as they turn pink on the down or pan side turn them over. When they are pink on both sides take the pasta out of the pot with a pair of grabbers or 2 large forks, whatever works for you, and put the pasta in the pan with the shrimp and garlic.  Add a couple of tbsp. of the pasta water and a about 2 tbsp. of chopped fresh parsley, (or 1tbsp. of dried) and 3-4 tbsp. of grated parmesan cheese to the pan. Mix it all together and toss a couple of times.

Serve it up! With some wine that you like and maybe some baked parmesan zucchini chips like you see in the pic Fettuccine Aglio e Olio poppopcooks.com

Clams and Mussels, pasta and white wine sauce

Clams and Mussels with pasta and a white wine sauce with garlic jazzing it up is a favorite at our house.

IMG_2539We get the clams and mussels in the frozen food section already cleaned and cooked. If you can get good, fresh seafood where you live scrub them and cull out the dead ones that don’t close up when you tap them or don’t open up when cooked.

Put a pot of water on the stove getting hot for the pasta. Cook the pasta,stirring occasionally while you are preparing the clams and mussels. Put a pan on the stove at medium high. Add olive oil and the chopped garlic. Salt, pepper and red pepper flakes. Stir it all together and when the garlic starts to get translucent add the clams and mussels. Mix it up and let it cook for a minute or so.

Add the white wine and the butter.

Simmer until the wine reduces to the thickness you want.

  3. Add the white wine the butter and a spoon of the pasta water. Simmer until the wine reduces to the thickness you want. The pasta should be right about al dente now so serve it up and enjoy your dinner.

Get a pot with about 2 quarts of water on the stove, set it on high.  Add about a tsp. of salt. When it starts to boil reduce it to medium high and add the fettuccine. With a pair of tongs get all the fettuccine down into the water. Stir the fettuccine around so that won’t stick together and stir it occasionally as it cooks.

While the pasta is cooking get a frying pan on Medium heat and put in about a tbsp. of good extra virgin olive oil and a tbsp. of the butter. A pinch of salt a pinch of black pepper. Get it smooth looking and add the garlic. Right away add the shrimp and cook them just enough to turn them pink, flip them over with a pair of tongs and pink up the other side. Remove the shrimp to a plate where you can have the drippings collecting.

Put the rest of the butter in and when it is melted add the milk, or the half and half or the heavy cream and let it simmer.

When the sauce has thickened to how YOU like it put the shrimp and the drippings  back in the pan and let them warm back up. Serve it up! With some good pinot grigio or maybe a nice chianti. That wouldn’t be a sacrilege with a shrimp dish, would it? Also, of course, some of poppop’s,,,,,,er,,,,Your homemade bread.

Remove the shrimp to a plate where you can have the drippings collecting.
  3. Put the rest of the butter in and when it is melted add the milk, or the half and half or the heavy cream and let it simmer. When it is has thickened up a little put in the pasta, the shrimp, about three tbsp of the pasta water and the cheese. Let it all come together as you gently keep it stirred up with the tongs that you were flipping the shrimp with.
  4. When the sauce has thickened to how you like it, serve it up! With some good pinot grigio or maybe a nice chianti. That wouldn't be a sacrilege with a shrimp dish, would it? Also, of course, some of pop,,,,,,er,,,,Your homemade bread.
