Eggplant Parmesan can be…..

…..done a few different ways resulting in various levels of time needed and mess made.

A long time ago I was working as a grunt in an Italian restaurant and meet this cook named Sal. He was always complaining about the Italian food here in America and how so much of it wasn’t the “real thing”. On the subject of eggplant parmesan, or as Sal called it “parmigiana di melanzane” .

He said, “Real Italian cooks bake the eggplant for parmigiana not fry it.”

At the time I just wrote it off as another one of his rants.

Then, years later, I saw Mario Batelli do it this way on his television show. So I had to try it and it is now the way that I do it all the time.

Quicker, less mess and just the right texture. Not crunchy and not mushy.

Set the oven at 400°F/205C. If you are not using a nonstick cookie sheet then line your cookie sheet with aluminum foil and spray or wipe it with olive oil.

Cut the ends off of the eggplant and peel them. Some cooks leave the skin on but we don’t like the taste of the skin. Then slice into about 1/2 inch thick slices.

Using a little more than your gut tells you to, salt and pepper both sides of the eggplant slices and lay them out in the cookie sheet.

About 8 minutes or until slightly browned a little and just starting to get soft. The time will vary with different eggplants do to how ripe they might be.

BTW – when you are picking out your eggplant get the ones with the the least – or hopefully none – skin blemishes and lightest in weight.

Lightly cover half of the slices with tomato sauce – you could use  fresh or canned tomatoes in a pinch – and top with the mozzarella. Lay the naked slices on top of the well dressed slices and this time after the mozzarella sprinkle some dried basil  and grated parmesan cheese. Lightly drizzle with olive oil.

In the resulting bare spot in the pan spread out your veggie of choice for today. Broccoli or string beans will work. We like asparagus for this.

Give the asparagus the same tomato sauce, cheese, basil and olive oil topping that you gave the top eggplant layer. Into the oven for for about 8 minutes or until the cheese is done the way that YOU like it.

Give the asparagus the same tomato sauce, cheese and basil topping that you gave the top eggplant layer. Bake in to the oven for for about 5 minutes or until the cheese is done the way that you like it.

Oven Baked Pork Tenderloin and Italian Vegetables..

…..will be ready in less than 30 minutes and it’s good and it’s easy and almost no mess to clean up and gluten free and paleo.

I usually like to do the Italian vegetables in a large skillet. Tossing them with the olive oil as they cook. But things were a little busy today so I did the veggies and the pork tenderloin all in the oven.

The basic IIalian veggies are peppers and onions but from there you could go on to include almost anything that you want. Tonite we had some eggplant and often we include asparagus. And lots’ a times have potatoes cooking on the pan with the rest of the veggies.

The things that cook real fast like peas or spinach would work but you just have to remember to add them when the other veggies are just about a minute away from being done.

This turned out real good and I was free to do some other stuff as the meal was tending to itself.

You might want to  get these vacuum packed pre-flavored pork tenderloins. We like them and they are a lot easier to prep.

Set the oven at 450°/222°C

With a sharp knife trim off the excess fat and the silver skin. Line a baking tray with aluminum foil and spray or wipe it with olive oil.

Put the pork tenderloin in the pan and put it in the oven. It’s going to take 15-20 minutes depending on the size of the tenderloin.

 For the veggies line a cookie sheet with aluminum foil and spray or wipe it with olive oil.

I’ve started using this nonstick kind of baking sheet and it’s been working real well. Clean up is just spray it with water in the sink and wipe it dry.

Clean and trim the veggies and cut them into fairly large pieces then put them on the baking sheet.

Drizzle them with olive oil. Sprinkle with salt, pepper, garlic powder and dried basil. And any other spices and herbs that YOU want to add. Toss them with your hands or a pancake turner to get everything coated with the good stuff and spread them out on the baking pan. Then…

…put it in the oven. They are going to take about 10 minutes and should be done when the pork tenderloin reaches 145-150° on an instant read meat thermometer.

Ok,,the pork tenderloin is done. Take it out first and let it sit while you take out the veggies.

Slice up the pork and drizzle a little of that juice left in the bottom of the pan on the slices. Spread the vegetables out next to the meat. That extra item that you see on the plate is a spaghetti squash fritter and the recipe for that is coming up soon. You could add potato pieces in with the vegetables to forego the fritter.

Dip the pork chops in the egg wash then in the parmesan mixture. Fry for about 3-5 minutes a side depending on the thickness. When the parmesan breading is crisp and the meat is firm they are ready.

Quick Easy Blackened Salmon

You can make all kinds of changes and additions to your Blackened Salmon because it’s YOUR Blackened Salmon! After you get past the paprika. You want it spicy? Cayenne pepper and or red pepper flakes. Lemony? Lemon zest and or lemon salt. Mexican? Cumin, Cilantro, Lime zest and or juice. And on and on. This our Cajun version that we always go back to. We love it and I think you will too.

Put all the dry ingredients in a bowl and mix them all together.

For the veggie and carbs tonight I just went to the fridge and got whatever was on hand that would work in a skillet. It happened to be potato, eggplant, zucchini, onions and rosemary from it’s pot out on the deck.

Heated up a skillet to medium high with a couple of tablespoons of extra virgin olive oil. Then added all the veggies, salt, pepper and squeezed the juice from half a lemon all over it and tossed the lemon rind into the mix. Tossed them a few times as the veggies got seared.

While the veggies are cooking heat up another skillet at medium high and add a tablespoon of olive oil and 2 tablespoons of butter. Rub the spice mixture all over the salmon and very lightly press it on to the filets.

Put the fillets in the pan and cook about 3-5 minutes a side depending on how thick they are and how well done you like them.
