Sesame Chicken – Quick and Easy – 25 Minutes – Gluten Free

Sesame Chicken is ….

…….what I order every time we go to our favorite Chinese restaurant, the Hunan Lion on South Lamar here in Austin.

It’s gotten to the point that the waitresses don’t even ask me what I want anymore. Gammy always gets Chicken and Broccoli, same deal.

I’ve tried a few different recipes that I found online and twisted and turned on them until I was happy with this one.

It is Quick and Easy and Delish which are the definite requirements here at poppopcooks.com

Having said all that here we go!

Put the minute rice ( or regular rice) on to cook, that is if you don’t have any leftover rice in the freezer waiting for you to microwave it. As suggested in my 10 tips for quick and easy weeknight meals.

Cut the chicken up into pieces a little bit bigger than bite size.

Put a skillet on at medium high and swirl in enough olive oil to cover the bottom.

In a bowl big enough to handle the chicken, mix together the egg, the cornstarch, the salt and pepper.

Put the chicken in the bowl and stir it up getting it covered with the egg mixture. Then put it all in the skillet. Be sure to add all of the egg mixture.

Stir it it right away and toss or stir it a few times as it cooks. 7-9 minutes.

While the chicken is cooking, back to the bowl. Mix up all the other ingredients except the peas and their share of the chopped garlic.

Just before the chicken is done put another larger skillet on at medium high with enough olive oil to cover the bottom. Put the peas and the garlic in  and toss them often as they cook. They only need 2-3 minutes. The snow peas are best a little crispy not at all soggy.

When the chicken is browned and is firm to a poke add the sauce and stir it in  getting the chicken all covered in that good stuff. The sauce will thicken up pretty quickly and as soon as it does…..

Shrimp Fried Rice with Snow Peas

All in one pan including the rice!

You probably have noticed that I’ve posted a couple of Shrimp Fried Rice recipes before but never with snow peas. Snow peas can go great with just about any meat or fish but especially shrimp…..

……If you are using frozen shrimp put them in a bowl of cold water and they will be thawed out by the time the rice is done. Put a large sauté pan on at medium high. Add the water, the salt and the minute rice. Or, regular rice if you want. For meals like this I’ve settled on brown minute rice.

Stir it and bring it to a fast simmer. Lower the heat to the point that it maintains a simmer and cover with a lid. Follow the instructions on the box for the best cooking time for the rice that you are using. Check to see if any more water is needed at about 3 minutes short of the prescribed cooking time. If so just enough to bring the surface of the liquid even with the top of the rice.

While the rice is cooking chop up the onion and garlic. Whisk up the egg –  or eggs – and have the snow peas standing by.

Raise the heat on the pan to medium high and add just enough olive oil to cover the bottom. Put in the onions, garlic and shrimp.

Spread the shrimp out so they are all lying flat and give them about a minute and a half a side. Add the snow peas to the pan and stir a couple of times as they warm up. That’s about all that you want to do is warm them up. Then put the rice in and add the soy sauce. Stir it all together and stir a few more times as the rice gets heated back up.

When it is all heated up serve up your Shrimp Fried Rice with Snow Peas.

You can make this Oven Baked Chicken Fried Chicken and have it on the table in under a half hour. Here in Texas “Chicken Fried Steak” is a staple in all the down home type restaurants and “cafes”. It’s made with thin cuts of beef that have been tenderized. They are breaded and fried in oil in a frying pan. Not in a deep fat fryer. The steaks are fried and then put aside while the gravy is made in the pan. Of course there is also Chicken Fried Chicken. In the pursuit of keeping things quick and easy we are going to do the chicken in the oven and make the gravy while the baking is happening.

Set the oven at 450°F. Line a baking pan with foil and spray oil it. Whisk the egg and the milk together in a bowl. In another bowl mix the flour, grated parmesan cheese, garlic powder, salt and pepper together. Instead of garlic powder and parmesan you can use whatever your creative side might dictate. Like cayenne pepper or basil or rosemary or anything that YOU want.

Dip the chicken in the flour mixture getting the pieces well coated. Then into the egg wash. Then back in the flour mix. Then into the pan. Then into the oven goes the pan.

Put a skillet on at medium and add the butter. We always have some cooked bacon and cooked breakfast sausage in the freezer so tonight I’m going to chop up some sausage patties to jazz up the gravy a little. Add the sausage to the pan and heat it up.

When the butter has melted and the sausage is warmed up add the flour and stir it in with the fat until it has formed a paste. Cook the paste a couple of minutes stirring all the while. Add the milk. Lightly salt and pepper. Mix it up as it thickens. If it is too thick just add a little more milk and if it is too thin add a couple of pinches of flour. Get it to the thickness that you want.

Check the chicken and when the juices run clear or it reads 170°F on an instant read meat thermometer they are done – usually about 8- 10 minutes.

Whisk the egg and the milk together in another shallow dish.

Dip the pork chops in the egg wash then in the parmesan mixture. Fry for about 3-5 minutes a side depending on the thickness. When the parmesan breading is crisp and the meat is firm they are ready.
