Your Baked Cod One Pan Dinner is…

……easy and delicious. And,,,it’s all going to be ready to serve in 25 minutes or less.

We’ve gotten to where we do the whole meal in one pan in the oven or one pot on the stove a couple of nights a week. As long as it still turns out real good it works for us and for a lot of my readers.

When you do it in the oven you should aim at using ingredients that all take as close as possible to the same time to cook. That doesn’t mean that you couldn’t add ingredients after the first ingredients have cooked some. But, doing that in the oven is a little more involved than on the stovetop.

This baked cod one pan dinner is 10 minutes doing the easy preparation and 15 minutes in the oven.

Set the oven at 450°F/232°C. Put the butter in a bowl in the microwave and melt it.

Line a cookie sheet with aluminum foil or use a nonstick cookie sheet. Peel the potatoes and carrots then cut them into french fry shapes.

Put the carrots and potatoes in the cookie sheet and drizzle them with some olive oil. Sprinkle the salt, pepper and 1/2 of the rest of the spices on the pile and toss everything together with your hands or a flipper kind of utensil.

Spread them out towards the sides of the cookie sheet leaving room in the middle for the cod fillets.

Add the lemon juice, and the rest of the dry ingredients except the salt to the melted butter. The cod fillets have enough of their own salt.

Lay the cod fillets on the empty spot in the cookie sheet.

Brush half of the melted butter mixture onto the cod fillets.

Put it in the oven on a middle shelf and bake it for 15 minutes. If you want it to be a little crisp on the top surfaces switch the oven to broiler and move it to the top shelf for the last couple of minutes.

Top off the cod fillets with the rest of the butter mixture and serve up your Baked Cod One Pan Dinner.

Gammy opted for some Chardonnay tonight so, yup, that’s what we had and it made real nice combo with our Baked Cod.

Set your oven at 400°F. On a dishwasher safe cutting board slice the boneless skinless chicken breast in half horizontally resulting in two thin filets. Cover them with plastic wrap and pound them to a more even thickness with the flat side of a meat mallet or a rolling pin or the bottom of a sauce pan.  Or, just go with chicken tenders.

Line a cookie sheet with aluminum foil and spray or wipe it with olive oil. Lay the chicken filets in the pan and lightly sprinkle salt, pepper and dried rosemary onto both sides. Ya know,, after the salt and pepper you can get creative and spice up the filets any way that YOU want i.e. garlic powder, red pepper flakes, dried basil, paprika, cumin, turmeric and on and on. Tonight we just went with dried rosemary leaves and it worked out real good. Cut the stump ends off of the asparagus spears and then into about 2″ pieces. Cut the potatoes into small chunks and and spread them both around outside of the chicken. Drizzle with olive oil and lightly sprinkle with salt and pepper.

One Pan Rosemary Chicken and Potatoes

One Pan Rosemary Chicken-5-poppopcooks.com

You usually see One Pan Rosemary Chicken recipes done with bone in skin on thighs or breasts. We’re going with chicken tenders tonight because we always have a supply of them in freezer. You do too,,,right?

Put the tenders in the microwave to thaw out. Set the oven at 450°F/230°C. Cut the potatoes in half lengthwise and then slices about 1/4″ thick and chop up 4 cloves of garlic.

When the chicken tenders have thawed put them in a bowl and drizzle with extra virgin olive oil. Add the chopped garlic, salt, pepper, lemon juice and the dried rosemary. Turn them over a couple of times to get them coated.

Put the potato slices in a ceramic bowl and in the microwave set at 4 minutes. Put an oven safe skillet on and set the burner at medium high. Add the chicken, the potatoes the lemon rinds and the rosemary sprigs. Be sure to get all of the stuff from the chicken bowl on the chicken after you put the tenders in the pan. Sear the chicken tenders on both sides. Don’t worry about cooking them all the way through at this point.

Put the pan in the oven and bake for 8-10 minutes or until the tenders are firm to a finger poke and/or the juices run clear.

Then serve up your One Pan Rosemary Chicken and Potatoes. We had a good chianti with ours and some of poppop’s homemade bread.
