Shrimp and Broccoli Stir Fry – Fifteen Minutes

Yes, you will have this Shrimp and Broccoli Stir Fry with Rice ready to serve in fifteen minutes. Maybe even just ten!

YOU will do it better and faster than take out or delivered!

The quality and size of the shrimp makes a difference so I gut up and pay for wild caught that is very large or jumbo size. But, you don’t have to.

Let’s go!

If your shrimp are frozen just put them a bowl of water and they will be ready to be peeled and deveined in a few minutes. Or, you could thaw them out in the microwave in just about a minute. Or you could buy them already thawed out at the seafood counter in your grocery store.

Put a pot of water on for the rice or if you have some leftover in the freezer microwave it to get it ready to serve. I’m using some instant rice tonight that will take 8-10 minutes, tops. You can also do the instant rice in the microwave in a little less time than on the stove.

Chop the garlic or just use that pre chopped that you can find in jars in the produce section.

Put a skillet on at medium high and eyeball enough olive oil to coat the bottom.

Add the broccoli and half of the garlic to the skillet. Lightly sprinkle with salt and pepper. Toss it a few times as it cooks.

Put the rest of the garlic in a bowl and add the honey and soy sauce. Whisk it all together and add the shrimp. Gently stir the shrimp into the liquid to get it all coated.

When the broccoli is almost as soft as you like it push it off to the sides of the skillet and pour in the shrimp and just enough of the marinade to coat the bottom of the skillet around the shrimp.

When the shrimp have turned pink on the bottom turn them over and get them pink on the other side. Then toss it all together and serve it up with the rice and some soy sauce for topping everything off.

THE BEST EFFIN SPANISH RICE RECIPE EVAH!!!

Sorry,,but I got real excited about how good this Spanish Rice Recipe is.

It’s a ways off of the usual Spanish Rice Recipe beaten path but WOW!!  It is good.

And, the whole meal, meat, rice and veggies are all done in one skillet in thirty minutes, or less.

IT WAS DELISH!! Ya gotta do it!

Put the water on for the rice or get some of your supply of cooked rice that you keep in the freezer. I used some instant rice this time and as soon as the water started to boil I put the rice in and turned the heat off.

Put the skillet on at medium high and add a little olive oil. Clip an end off the chorizo links and squeeze the chorizo into the pan. Break it up and let it start cooking.

Chop up the onion, poblano peppers and the jalapeños.

Add them to the pan. Add the salt, pepper and cumin. Stir it all together a few times as it cooks.

When the onion has started to get translucent add the chicken broth and the salsa.

Stir it up and add the rice.

Pork Tenderloin Fried Rice – 20 Minutes – Quick and Easy

Gammy likes pork tenderloin so, duh, yeah I make it for her lotsa different ways. After all she is kinda special.

How ’bout this!? She gave me some decadent chocolate truffles for my birthday! Oh Yeah, She’s a keeper.

We hadn’t ever had pork tenderloin like this before and, WOW!, it turned out great.

You could make this a one pot meal and cook the rice right in the sauté pan or skillet and drain the liquid off, push the rice to the side of the pan then sear the pork tenderloin. Or….

…..you could have the rice cooking in a separate pot while you get the pork tenderloin and the veggies doing their thing. Or….

……you could use some of that cooked rice that you have in the freezer like I suggested in my Ten Tips for quick and easy meals. Tonight I had some in the freezer so things turned out to be especially quick and easy.

Put a large skillet or sauté pan on at medium high and swirl in just enough olive oil to cover the bottom. Let’s chop up the onion, slice the pork tenderloin and put them in the pan.

Add some salt and pepper and stir a few times as it all cooks.

While it’s cooking core and seed the tomatoes then chop them up.  Like we did for this bruschetta recipe.

 When the onion is translucent and the pork tenderloin pieces have browned – about 6-7 minutes – put in the peas, tomatoes and the cooked rice.

Optional at this point you could whisk an egg and drizzle it in as you stir things up. And/or drizzle some soy sauce in as you stir.

I didn’t, I just flew with it like this and it turned out fine,,,,no,,it turned out WAY better than just fine.

When the peas and the tomatoes have warmed up – don’t let them cook too much and get soggy – serve up your pork tenderloin fried rice.

Sesame Chicken – Quick and Easy – 25 Minutes – Gluten Free

Sesame Chicken is ….

…….what I order every time we go to our favorite Chinese restaurant, the Hunan Lion on South Lamar here in Austin.

It’s gotten to the point that the waitresses don’t even ask me what I want anymore. Gammy always gets Chicken and Broccoli, same deal.

I’ve tried a few different recipes that I found online and twisted and turned on them until I was happy with this one.

It is Quick and Easy and Delish which are the definite requirements here at poppopcooks.com

Having said all that here we go!

Put the minute rice ( or regular rice) on to cook, that is if you don’t have any leftover rice in the freezer waiting for you to microwave it. As suggested in my 10 tips for quick and easy weeknight meals.

Cut the chicken up into pieces a little bit bigger than bite size.

Put a skillet on at medium high and swirl in enough olive oil to cover the bottom.

In a bowl big enough to handle the chicken, mix together the egg, the cornstarch, the salt and pepper.

Put the chicken in the bowl and stir it up getting it covered with the egg mixture. Then put it all in the skillet. Be sure to add all of the egg mixture.

Stir it it right away and toss or stir it a few times as it cooks. 7-9 minutes.

While the chicken is cooking, back to the bowl. Mix up all the other ingredients except the peas and their share of the chopped garlic.

Just before the chicken is done put another larger skillet on at medium high with enough olive oil to cover the bottom. Put the peas and the garlic in  and toss them often as they cook. They only need 2-3 minutes. The snow peas are best a little crispy not at all soggy.

When the chicken is browned and is firm to a poke add the sauce and stir it in  getting the chicken all covered in that good stuff. The sauce will thicken up pretty quickly and as soon as it does…..
