Sesame Chicken – Quick and Easy – 25 Minutes – Gluten Free

Sesame Chicken is ….

…….what I order every time we go to our favorite Chinese restaurant, the Hunan Lion on South Lamar here in Austin.

It’s gotten to the point that the waitresses don’t even ask me what I want anymore. Gammy always gets Chicken and Broccoli, same deal.

I’ve tried a few different recipes that I found online and twisted and turned on them until I was happy with this one.

It is Quick and Easy and Delish which are the definite requirements here at poppopcooks.com

Having said all that here we go!

Put the minute rice ( or regular rice) on to cook, that is if you don’t have any leftover rice in the freezer waiting for you to microwave it. As suggested in my 10 tips for quick and easy weeknight meals.

Cut the chicken up into pieces a little bit bigger than bite size.

Put a skillet on at medium high and swirl in enough olive oil to cover the bottom.

In a bowl big enough to handle the chicken, mix together the egg, the cornstarch, the salt and pepper.

Put the chicken in the bowl and stir it up getting it covered with the egg mixture. Then put it all in the skillet. Be sure to add all of the egg mixture.

Stir it it right away and toss or stir it a few times as it cooks. 7-9 minutes.

While the chicken is cooking, back to the bowl. Mix up all the other ingredients except the peas and their share of the chopped garlic.

Just before the chicken is done put another larger skillet on at medium high with enough olive oil to cover the bottom. Put the peas and the garlic in  and toss them often as they cook. They only need 2-3 minutes. The snow peas are best a little crispy not at all soggy.

When the chicken is browned and is firm to a poke add the sauce and stir it in  getting the chicken all covered in that good stuff. The sauce will thicken up pretty quickly and as soon as it does…..

One Pan Shrimp Dinner – 20 minutes – Quick and Easy Recipe

Your One Pan Shrimp Dinner……

………..will be done and on the table in 20 minutes and it,,is,,good! The shrimp and the gnocchi both cook so fast that it’ll be ready before you know it.

A couple of  tips to get started

  •  Frozen broccoli florets don’t have to cleaned or cut up so they help speed things along.  Peas are even faster.
  •  If you are using frozen shrimp just thaw them out in the microwave. It only takes a minute or 2 and get the ones that have already been peeled and deveined to make things even quicker.

Put a large skillet on at medium high. Swirl in enough olive oil to coat the bottom of the pan. Add the broccoli and the chopped garlic then squeeze some lemon juice in and toss in the rind. Sprinkle with salt and pepper. Cook for a few minutes tossing a few times during the process. And……..

………..when the broccoli just begins to wilt a little put in the shrimp and the gnocchi. Toss a few times as it all cooks together.

Lemon Chicken – Quick and Easy – Italian

Lemon Chicken

Whenever you make this Lemon Chicken recipe for family, friends or guests they will really like it,,”I Guarantee it”. It definitely qualifies as quick and easy. It’s a traditional simple Italian recipe and you will make it as good as any fancy Italian trattoria – aka Italian restaurant. If you want to you could leave out the lemon and white wine and have an even simpler garlic chicken recipe or include some capers when you add the white wine and lemons and you would have Chicken Piccata. Thats what I love about weeknight Italian recipes, Just a few ingredients and quick and easy….

…..About the chicken breasts choices, you could buy some boneless skinless and slice them horizontally or you could use chicken tenders that you keep in the freezer or use those frozen portion sized breasts that you can get in Costco or Sam’s. If you go with the frozen choices just thaw them out in the microwave.

Put a skillet on at medium high and add enough olive oil to coat the bottom. Salt and pepper the chicken and grill them in the skillet about 3-4 minutes a side depending on the thickness. When they are firm to a poke or the juices run clear or they read at least 165°F on an instant read meat thermometer they are done. Remove them to a dish to catch the drippings.

While the chicken is cooking slice up the lemon and chop the garlic. Or use the pre chopped kind.

Lemon Chicken-2-poppopcooks.comWhen you have removed the chicken from the skillet add the butter then the garlic. Scrape the bits off the bottom of the skillet with a wooden spoon.

Then add the lemon slices, the white wine and the parsley. Bring the wine up to a fast simmer and lower the heat to just maintain the simmer.

Put the chicken and the drippings back into the skillet and turn them over a few times as the wine reduces. If the chicken has heated up and the lemon is starting to get wilted looking but the liquid is still thin just whisk in a pinch or two of flour and stir into the mix to get it thickened up a little.

Then just go ahead and enjoy your Lemon Chicken. Of course the pasta of you choice is just about a requirement. We had ours with some rigatoni and the rest of that wine. (Chilled Italian Soave) Bon Appetito!

Pork Tenderloin Medallions with Rosemary

You can do pork tenderloin medallions lots of different quick and easy ways. Rosemary always goes along real well as added flavor with pork so here is that good combo in a very good quick and easy weeknight supper.

You might like one of these pre flavored up tenderloins like this. We do and they come in a choice of different marinades.

Put a skillet on at medium high and swirl about 2 tablespoons of olive oil in it. Using a sharp knife remove the silver skin from the tenderloin and put it in the skillet. Just sear the outside surfaces. Don’t worry about cooking it all the way through at this point. It will finish cooking later in the sauce. While the tenderloin is getting seared chop up the rosemary and the garlic. In the interest of quick and easy I sometimes use that pre-chopped garlic that comes in a jar. That’s what you see here. Have the butter and lemon standing by.

When the tenderloin has gotten seared all around remove it to the cutting board and put the rest of the ingredients in the pan. Add a little red wine or white wine or chicken broth or beef broth.

Using a wooden spoon scrap the bits off the bottom of the skillet and mix everything together. Bring it up to a simmer and lower the heat just enough to maintain the simmer.

Cut the tenderloin into medallions.

Add the medallions to the skillet and stir them around a little getting them coated with the sauce.
