Quick Easy Grilled Chicken Dinner

You can use a stovetop grill like we did here or do it on your outside barbecue grill or just a big skillet – or two or just put everything on a cookie sheet and into a 400°F oven for about 10-12 minutes. Tonight’s method of choice is a stove top grill. It finds it’s way into our routine once or twice a week and it always puts out a good looking and tasty meal.

Put the grill on at medium high and spray or wipe it with olive oil. Salt and pepper the chicken and put the filets on the center of the grill. Cut the zucchini into about 3/8″ slices, crossways or longways, it’s up to you. Peel the sweet potatoes and slice them also into about 3/8″ slices. Salt and pepper both sides of the veggies. Spread them all out on the grill.

Sometimes the chicken gets done before the veggies. If that happens to you just snuggle the sweet potatoes up and put the chicken on top to stay warm while the potatoes finish.

When the chicken is firm or reads 165°F on an instant read meat thermometer (about 3-4 minutes a side) and the veggies are soft to a poke with a fork (about 4-5 minutes a side) serve up and enjoy your Quick Easy Grilled Chicken Dinner.

PS – Squeeze a little bit of lemon juice on the zucchini. It’s good!

You’re the BOSS! You will get this restaurant quality meal on the table in less than a half hour. Fast Stovetop Chicken Parmesan is easy and real good.

First lets get our really good string beans and onions going, but, slowly. Put a skillet on at medium low and eyeball a couple of tablespoons of extra virgin olive oil. Cut the ends off the string beans and cut them into halves or thirds. Rinse the off in a strainer. Cut the onions into strips about 1/4″ wide. Put both in the skillet and sprinkle with a little salt, black pepper and garlic powder. Toss them regularly as they slowly cook.

Put another skillet on at medium high and eyeball a couple of tablespoons of evoo into they one also. Salt, pepper and garlic powder both sides of the chicken filets – or tenders – and add them to the skillet. About three minutes a side depending on the thickness and how your stove expresses itself in the medium high category.

When they are firm to a poke add the marinara sauce – or canned crushed tomatoes –  and the red pepper flakes. Bring the sauce up to a simmer and lower the burner to just hot enough to maintain the simmer. Turn the filets over a few times to get them into the marinara mood.

Generously sprinkle with grated parmesan cheese, some dried – or fresh – basil and let them enjoy life for a little while.

Growing up in North Jersey, and as a part of the process, (which Gammy says isn’t completed yet) wandering over to lower Manhattan and Brooklyn, I enjoyed Chicken Murphy in lots of different Italian restaurants and Italian friends homes, done lots of different ways. This is the  best. Our neighbor, Nan Papparella, knew I liked it and made it for us regularly.

Put 2 skillets on at medium high and add 2 tbsp. of olive oil to each. Salt and pepper the chicken fillets and cook 3-5 minutes each side,depending on the thickness. When the juice runs clear and they are firm to a poke with your finger remove them to a plate that will catch the drippings.

While the chicken is cooking slice a link of hot Italian Sausage into slices about 1/2 inch thick and put them in the other pan mix right away and stir often.  Slice up a medium size potato. Push the sausage out to the edge of the pan and add the potato slices. Sprinkle 1/2 tsp. each of salt, black pepper and red pepper flakes on the potato and sausage.  Let them get brown and toss it all together.

Veggie Mixture for Chicken Murphy

Slice up 1/2 of a medium onion. Cut a green pepper in half and remove the stem and the seeds. Cut into strips about 1/2 inch wide and 1 inch long. Add the onion and pepper to the pan and toss it all together. Let it all cook for two or three minutes tossing regularly until the onion starts to get translucent. Add the chopped garlic and toss it all together. Cut a ripe Roma tomato in half lengthwise and cut off the green stem. Chop up the rest and add it to the sausage and veggies. An alternative to the tomato would be a little of tomato  sauce if you have some hanging out in the fridge. Keep heating and tossing until the tomato starts to loosen up. Add some grated parmesan and toss it again. Put the chicken on top of the veggies to reheat a little and then put the chicken on the plate and top it with the sausage and veggies.

Parmesan Crusted Baked Chicken Filets

Baked Chicken Filets with Roasted Red Peppers

Parmesan Crusted Baked Chicken Filets are easy but you get more than the title suggests. Pre heat the oven to 400F. First put enough grated parmesan in a shallow dish and add salt, pepper and garlic powder and mix it together. Dredge the chicken filets in the parmesan. Push the filets down into the cheese to get them coated. Line a baking pan with aluminum foil. Spray it with oil. Place the filets in the pan and put ’em in the oven. Give them 8-10 minutes. Turn them over and do the other side.

IMG_0074When they are firm to the poke and the liquid coming out is clear they are done. Lower the temp to 350F.

IMG_0076Add the peppers and the cheese. (You can get canned or jarred roasted red peppers in the store or you could make them and keep a supply in the fridge like we do). Bake them until the cheese has melted like YOU want it.

And serve it up. We also had some Caprese Salad jazzed up with some spinach and avocado slices. Gammy had some Gluten free garlic bread and Poppop had some of Poppop’s Eeeeeasy home made bread. And some Chianti, of course.
