You’ll like it. This one is a regular at our house. It’s easy and I’ve converted it into a one pan thing so it has become even quicker and easier.

Put a skillet on at medium high and eyeball about 3 tablespoons of olive oil. While it is heating up cut the sausages into thirds or even smaller slices if you want.

Put ’em in the skillet and stir them up as they cook.

While the sausage is cooking cut the peppers and onions into wide strips.

Add the onions and peppers to the skillet with the sausage and toss it all together. Sprinkle with salt, pepper and powdered garlic. Also maybe some red pepper flakes if you want.

When the onions start to get translucent add the tomatoes and the broth and/or the wine.

Bring it up to a fast simmer then reduce the heat just enough to maintain the fast simmer. Push everything out to the sides of the skillet and add the gnocchi.

Cook until the gnocchi has swollen up and floats. About 3 -4 minutes.

Put in the grated parmesan and stir it all up.

Chicken Rice and Broccoli – One Pan – 30 Minutes

You will have another quick, easy and delish one pan meal on the table in 30 minutes. Here we go!

Put a large skillet on at medium high and eyeball about 3-4 tablespoons of olive oil into it. Cut up the chicken breasts or tenders into about 1″ cubes and put them in the pan. Sprinkle them with salt and pepper. Stir the chicken up occasionally as it cooks.

Take your broccoli florets out of the fridge, cut the onion into strips and chop up the garlic.

When the chicken has just started to brown add the veggies to the pan.

When the onion strips start to get translucent add the minute rice, butter and the chicken broth.

Bring the liquid up to a fast simmer then lower the heat just enough to maintain the simmer. Stir it often as it cooks and add more broth or water if necessary. The rice should be ready in about 8-10 minutes. When it is as soft or as firm as YOU like it mix in the grated parmesan cheese and serve it up! We like this quick and easy one pot meal and I bet you and your gang will too.

If you run out of broth and the rice isn’t done a little hot tap water will be okay to finish with. When the rice is soft on the outside but chewy on the inside add the shrimp and the spinach.

A suggestion; the hotter the broth is the faster the risotto will get done. Some cooks have it simmering in a pot next to the risotto.

Also,,if you like the idea of dipping bread into the extra liquid just have a little extra left in the finished product. You are better off with a little too much liquid than too little. It helps avoid the rice sticking to the bottom of the pot and having your risotto turn out too sticky.

One Pan Chicken Dinner can mean a whole lot of different combinations of ingredients. You could use beef or pork instead of the chicken. Potatoes or rice instead of the pasta and any veggie that you have on hand instead of asparagus. It’s that time of year and we found some locally grown, very fresh, asparagus and parsley so,,,.

You don’t have to do this with the chicken. You could just use chicken tenders or sliced chicken breasts. I like to keep some chicken breasts, that I’ve sliced and hammered, in the freezer. Today I needed to refill the supply in the freezer so while I was at it I just went ahead with the chicken this way. But, just grabbing some tenders out of the freezer and thawing them in the microwave is faster.

Put a large sauté pan on at medium high and add enough olive oil to cover the bottom. If the breasts are big cut into thirds by cutting the skinny end off and slice the big end horizontal. If they are average or small just slice them in half horizontally. Cover with some plastic wrap and hammer them flat. All to about the same thickness. Or, just skip all the cutting and hammering and go with chicken tenders.

Salt and pepper the up side.

Put them in the pan salted side down and salt and pepper the new up side.

Cook about 3-6 minutes a side, depending on the thickness, or until the juices run clear and/or they are firm when you give them the finger. I meant poke them with a finger. While the chicken is cooking cut off and discard the stump ends of the asparagus spears and then cut the spears into thirds.

Put them in a strainer and rinse them off real well. Let them drain while you chop up the garlic and the parsley.
