After you get the honey, soy sauce and salt in the bowl you might be tempted to go a little further. Today I added some lemon juice, sesame seeds, minced garlic and a wee pinch of cayenne pepper. You don’t have to do any of the extras. If you want to keep it just the honey, soy sauce and salt it will still become a favorite.

Put the shrimp in a separate bowl and drizzle just enough of the sauce to coat them. Toss the shrimp in the sauce a little bit.

Put a skillet on at medium high and eyeball enough olive oil to coat the bottom. Let it get hot before you add the shrimp. Then spread the shrimp out in the pan so that they are all laying on their sides, not piled on top of each other. Cook for just one minute a side and then add the remaining sauce.

Stir the shrimp in the hot sauce then remove them to the plates and drizzle the sauce on  them. There you have your Honey Soy Sauce Shrimp. Garnish with a little bit of dried parsley or grated parmesan, if you want.

It all happens so fast that we almost always just go for “baked” potatoes in the microwave and some basic salad. Or another veggie choice is something microwave friendly like frozen broccoli or peas sharing space in the microwave with the potatoes. We had a chilled Santa Margherita Pinot Grigio to go with our Honey Soy Sauce Shrimp and it was great.

You’re wanting to cook up a real nice supper but you didn’t even have time to stop at the store and you are running behind. So, you are going to have to go with whatever you have on hand. You always have frozen shrimp in the freezer along with chicken tenders, salmon fillets, etc., etc. You also need to come up with a veggie and a carb. There are always potatoes and onions around and always a few different veggies in the freezer. Yeah, yeah, it’s all starting to take shape. You’re done scratching your head and you get started on your Quick and Easy Weeknight Shrimp.

The potatoes are going to take the longest so you put a large skillet on with a couple of swirls of extra virgin olive. Cut up the potatoes and add them to the pan. Salt and pepper them then toss them a couple of times to get them coated.

Defrost the shrimp in the microwave then peel and devein them. Squeeze the juice from 1/2 fresh lemon on them and one egg. Mix it all up with a fork and let it rest a little.

Cut up the onion and add it and the broccoli to the potato pan.

Add enough olive oil to get 1/4 ” deep.  Put the flour in a bowl to dredge the shrimp in and add salt and pepper. Now you can let your creative juices run wild. Today I added garlic powder, dried basil, cayenne pepper and grated parmesan cheese to the flour. But, you jazz it up any way you want. BTW just salt and pepper will work just fine.

Dredge the shrimp in the flour mix and lay them out flat in the pan. Give them just 30 seconds a side and remove them to a paper towel to drain the oil off.

We had one Roma tomato in the fridge so on a whim I diced it up and added it to the veggies. And as always when sautéing vegetables squeeze some lemon juice on them and drop the rind in too.

You will make this One Pan Grilled Chicken Meal for a weeknight dinner fairly regularly because it’s simple, one pan and you probably keep all of the ingredients always on hand in the fridge. I’ll bet that you always have a bag of frozen chicken tenders or breasts in the freezer and potatoes and onions in the fridge. When you just want to throw together a quick no brainer but, you still want it to be good, this will always fill the bill. You can use a stovetop grill like I did tonight or you make it in the oven, on a cookie sheet  lined with foil for an easy cleanup.

If your chicken needs to be thawed out just put it in the microwave with the proper settings. While that is going on clean and slice the potatoes into about 3/8″ slices. Cut the ends off of the onion, peel it and slice it into about 1/2″ slices. Be careful handling the onion slices because they will want to come undone.

Put your stovetop grill on the stove at medium high and spray or wipe it with olive oil.

You will really like This Chicken Tortilla Soup recipe. It is the one that we have settled on after living in Mexico on beautiful Lake Chapala and having it in a lot of different restaurants down there. Then making it a few different ways for ourselves. We love it and  I make it two or three times a month. When I put the leftovers in the fridge to cool overnight so we can freeze portions in the zip locks, well, it never makes to the freezer. We scarf it all up the next day.

Chicken Tortilla Soup-Coarsely chop  up a small onion and two fresh seeded jalapeño peppers. The more jalapeño seeds that  wind up in the soup the hotter it is going to be. If you’ve never made it before I’d suggest for the first time go with one pepper without the seeds. The next hotter level  is 2 jalapeños without seeds then one pepper with the seeds and the hottest is 2 peppers with the seeds. 

Put a 6-8 quart stock pot on the stove at medium high and add about a tablespoon of olive oil. Put in the  chopped onion and jalapeño and stir them together. While they are cooking finely chop 3-4 cloves of garlic and when the onion starts to get translucent add the garlic. Squeeze half of a lime onto the garlic. Mix it all together and add the salt, pepper, cumin and a pinch of cayenne pepper,, if you want. Yes, it adds a  bit more heat to it but it also adds another flavor to the mix.

 Add two quarts of chicken stock  and mix it all together. Then the chicken. You can just cut up a boneless skinless chicken breast or thighs or you can just take frozen chicken tenders and put them right in the pot. When they get pliable take them out, cut them up and put the pieces back in.

Also add the corn, garbanzo beans, black beans, the cilantro, (save some for garnish) and the tomatoes. Squeeze in the juice from the other half of the lime. Bring it to a boil then lower it to a  fast simmer.

Stir it every five minutes or so and get the garnishes ready while the soup cooks. Turn the oven on at 350°F. Cut up 2 corn tortillas into 1/2″ strips. Spray oil a cookie sheet and spread the strips out on it.

Put it in the oven for 3-4 minutes and check the strips for crispness. When they are crispy to your liking take them out and put them in a dish to rest.

Slice or quarter a lime and cut up the avocado into the size pieces or slices that you want. Also have some sour cream standing by.

Cook the soup for twenty minutes. Longer if you have the time, but twenty minutes simmering all together will get the job done. When the soup has about another ten minutes to cook whisk together about two tablespoons of corn meal with a few tablespoons of water and mix it into the soup. Take about half of the tortilla strips, break them in half and add them to the soup. Mix everything together, cook for another ten minutes. Serve it up and garnish your bowl the way you want it. Enjoy your Chicken Tortilla Soup!
