Chicken Veggies Cheese – One Skillet- Quick and Easy

Chicken Veggies Cheese all in one skillet and on the table in less than half an hour!

This one is sort of on the order of this one skillet chicken dinner that we did a little while ago.

I had mine on some pasta tonight but if you wanted to add some slices of potatoes right at the beginning you would have the whole meal in the one skillet and it would be gluten free.

Put a skillet on at medium high and eyeball enough olive oil to cover the bottom.

Cut up the chicken tenders into four pieces each and the carrots into slices about 1/4″ wide.

Put the chicken, carrots and broccoli in the skillet and sprinkle with salt and pepper. A pinch of red pepper flakes would liven things up a little, but, that’s up to you.

Stir or toss it all together a few times as it cooks. While it all is coming together coarsely chop up the garlic cloves.

When the chicken is starting to get brown push everything out to the sides of the skillet and put the garlic in the bare spot with the butter. Squeeze the lemon juice onto the garlic and let it get hot and cook a little.

When the garlic has started to get translucent toss everything together again. Then add the feta cheese.

Toss a few more times and when the cheese just starts to melt serve it up and enjoy your quick and easy chicken veggies cheese dinner.

May I suggest a nice dry white wine like a sauvignon blanc or a chardonnay? Enjoy!!

Set your oven at 450°F. For a real easy cleanup just line a cookie sheet or baking pan with aluminum foil. Cut up your carrots

And lay out the skirt steak. Drizzle everything with olive oil. Sprinkle with salt, pepper and grated parmesan cheese. Toss the carrots and potatoes. Turn the skirt steak over and repeat the drizzle, sprinkle, toss, etc. performance.

Put it in the oven. Depending on how rare or done that you want your steak it will probably be done before the veggies. Test it with a meat thermometer or with the poke test – The softer it is the more rare it is and of course the firmer it is the more well done it is – If it is ready just take it out of the oven and let it rest on the cutting board while the veggies finish up. Test them with a fork and when they are nearly as done as YOU want them slice up the skirt steak crossways against the grain and serve up your Skirt Steak Dinner. If you want to, sprinkle it with a little dried parsley or basil to jazz it up a little.

Slow Cooker Roast chicken. Well, the cooking is slow but the work is quick and easy. You will find that throwing it together in the morning is very quick and easy and serving it up at suppertime is a breeze.

Take the gizzards out and put them in the slow cooker. You will get a better gravy because of it. Rinse the chicken inside and out. Salt and pepper inside and out. Crush three or four cloves of garlic. You don’t have to peel them or chop them just crush them and put them in the cavity. Slice four thin slices from the lemon and sneak them under the skin on the breast. Cut the rest of the lemon in half and put it inside the bird. Put the chicken in the slow cooker. Cut a couple of potatoes and a few carrots into the size chunks you want and toss them in with the chicken.

You don’t need to add any water because the moisture from the chicken and the veggies are going to give you some great drippings that you could thicken up with some flour or corn starch for a nice gravy.

Set the slow cooker for eight hours slow or four hours fast. Slow cookers vary so you probably already have a feel for whether or not to mess with the times to get what you want.

When it’s done you can just move the chicken and the veggies to a roasting pan and cut the bird into the portions that you want.  If you want some good gravy just whisk together some four or corn starch with a little water and then whisk it into the drippings.

Jalapeno Chicken it’s easy and it’s good

We learned this Jalapeño chicken  recipe while we were living in Mexico and, well, this is sort of a gringoized version of it. Don’t be turned off by the jalapeño, we are going to, well, read on.

IMG_0031First set the oven on 450F. Spray olive oil a cookie sheet or line it with aluminum foil and spray it. Cut up a medium sized potato into the shape and size YOU want. Arrange them on the cookie sheet skin side down and spray them with olive oil. Salt and pepper to taste. Put em in the oven.

IMG_0032Peel and cut up the carrots and put them in a small bowl. Spray them with olive oil and sprinkle salt and pepper. Toss them and repeat the treatment.

IMG_0034Seed the jalapeño and chop it and the onion up pretty finely.

IMG_0035Put a small skillet on the stove at medium heat and add the olive oil. Put the jalapeño and the onion in. Add the salt, black pepper, red pepper flakes and the garlic powder. Stir it as the veggies get soft.

IMG_0036Have your chicken waiting in a bowl and add the peppers and onion mixture. Squeeze 1/2 the lemon on top. Don’t toss them. Just let them sit a little while until the potatoes start to get brown.

IMG_0037When the potatoes are starting to brown push them to the outside of the pan and place the chicken and the carrots in the middle. Cook it for about another 10 to 15 minutes depending on the thickness of the chicken. Poke a finger in the thickest piece of chicken and if it’s firm it’s done or take the temp with a meat thermometer. It needs to be 175F. Or, cut the biggest, thickest in half across the thickest part and if it is tan inside, not pink, it is done.

 

IMG_0038Squeeze the rest of the lemon on the chicken and garnish with the cilantro or parsley or basil. Enjoy it! You deserve it!
