Sesame Chicken – Quick and Easy – 25 Minutes – Gluten Free

Sesame Chicken is ….

…….what I order every time we go to our favorite Chinese restaurant, the Hunan Lion on South Lamar here in Austin.

It’s gotten to the point that the waitresses don’t even ask me what I want anymore. Gammy always gets Chicken and Broccoli, same deal.

I’ve tried a few different recipes that I found online and twisted and turned on them until I was happy with this one.

It is Quick and Easy and Delish which are the definite requirements here at poppopcooks.com

Having said all that here we go!

Put the minute rice ( or regular rice) on to cook, that is if you don’t have any leftover rice in the freezer waiting for you to microwave it. As suggested in my 10 tips for quick and easy weeknight meals.

Cut the chicken up into pieces a little bit bigger than bite size.

Put a skillet on at medium high and swirl in enough olive oil to cover the bottom.

In a bowl big enough to handle the chicken, mix together the egg, the cornstarch, the salt and pepper.

Put the chicken in the bowl and stir it up getting it covered with the egg mixture. Then put it all in the skillet. Be sure to add all of the egg mixture.

Stir it it right away and toss or stir it a few times as it cooks. 7-9 minutes.

While the chicken is cooking, back to the bowl. Mix up all the other ingredients except the peas and their share of the chopped garlic.

Just before the chicken is done put another larger skillet on at medium high with enough olive oil to cover the bottom. Put the peas and the garlic in  and toss them often as they cook. They only need 2-3 minutes. The snow peas are best a little crispy not at all soggy.

When the chicken is browned and is firm to a poke add the sauce and stir it in  getting the chicken all covered in that good stuff. The sauce will thicken up pretty quickly and as soon as it does…..

Leftover Christmas Ham – One Pan – Quick and Easy – 20 Minutes

Leftover Christmas Ham…..

………is  great for breakfast fried up with eggs and for sandwiches or salads for lunch,,,and as this quick and easy weeknight dinner. It comes together real fast and in one pan.

A large skillet or sautée pan on at medium high. Eyeball a couple of tablespoons of olive oil. Put your leftover potatoes – or yams – in the pan. The only leftovers we had was ham but Judy makes great baked beans in big batches and we always have some in the freezer.

If you also have some other veggie left over put them in too. We didn’t, but baby carrots are a regular in the fridge so,, in they went. Any quick cooking veggie like broccoli or peas would also work.

Get it up to a simmer and lay the ham slices on top. Sprinkle a little brown sugar on top – if you want to. I couldn’t resist the urge.

Mix it together and let it cook until the ham has heated up and the veggies are done.

Pork Filets Topped with Apple Slices and Brown Sugar – yeah – it turned out to be delish and the whole meal was on the table in under 30 minutes.

Ok, I’m trying to put this post together while I’m watching the Cowboys game. So if this gibberish is even worse than my usual gibberish please forgive me.

You might opt to replace the snap peas and grilled sweet potato slices with  other starches and veggies but this combo worked out great. And it’s easy!

Put a stovetop grill or a large skillet on at medium high and spray oil it. Peel the sweet potatoes and slice them into about 1/4″- 3/8″ slices. Spread out the slices on the grill or skillet. They will take about 4-8 minutes a side.

Light the broiler. Core and slice the apples. Cut the onion into strips and chop up the garlic. Put 2 skillets on at medium high with a couple of tablespoons of olive oil each.

Thin pork slices work out best for quick and easy.

Thicker ones are fine but, of course, take a little longer to cook. These thin ones just take a minute or less a side. Salt and pepper them and cook them up.

Top the pork filets with the apple slices.

Sprinkle brown sugar on the apple slices. Just enough to cover the slices but not so thick that it piles up. Put the skillet under the broiler.

If the sweet potato slices are cooked to the degree of softness that you want put the pan in the oven on a low rack under the pork filets rack.

Put the onion and garlic into their skillet and sprinkle with some salt and pepper. As soon as the onion strips start to soften up a just a little add the snap peas and squeeze in the lemon juice. Of course toss in the lemon rinds. Don’t let the snap peas get the least bit soggy. Toss them often and cook for just a minute to a minute and a half so they are still “snappy”.

An Argentinean Malbec worked just great for us but if you think a white might be better for you then of course you can’t go wrong with a chilled Pinot Grigio or a Chardonnay.

Caramelized Garlic Chicken – 4 Ingredients -25 Minutes

Caramelized Garlic Chicken – Set the oven at 450°F. Line a cookie sheet with aluminum foil and spray or wipe it with olive oil. Put a skillet on at medium low and add the butter. Chop up the garlic cloves and put them in with the butter.

When the garlic just starts to get the tiniest bit of golden and you can just begin to smell that great aroma of garlic cooking remove the pan from the heat and stir in the brown sugar.

Put the chicken breast – or tenders – in the skillet and turn them over a few times getting them coated with mixture. Move the chicken to the cookie sheet and spoon the remaining garlic mixture on top.

This is up to you but I chopped up some potatoes and spread them out in the pan, drizzled them with olive oil and sprinkled some salt and rosemary leaves on them. You could substitute basil or parsley or mint,,whatever. Also, while the meal was in the oven you could put a salad together for the veggie du jour.

Give it about 12 – 15 minutes in the oven , depending on the thickness of the chicken. If you are using thin filets check at 10 minutes. When the juices run clear when poked with a fork or better yet when the thickest part of the chicken reads 170°F on an instant read meat thermometer it is ready. Gammy opted for an Italian Soave so guess what we had. It was a real good combo with the Caramelized Garlic Chicken.
