Oven Baked Pork Chops – Whole Meal in One Pan – 30 Minutes

You will have no cleanup with this Oven Baked Pork Chops meal. And, the whole meal all in one pan. Load it all on the cookie sheet and stick in the oven.

Set the oven at 400°F/200°C. Line a cookie sheet with aluminum foil and spray or coat it with olive oil. Lay the pork chops in the pan. Lightly drizzle olive oil on both sides of the chops then salt, pepper, red pepper flakes (optional), garlic powder, dried basil and lots of grated parmesan cheese on both sides. Press it all onto the meat with a wide knife or spatula.

Cut the potatoes in half lengthwise then slice about 1/4″ (6mm) thick. Spread the potatoes and broccoli out around the pork chops and drizzle them with olive oil. Lightly salt, pepper and garlic powder. Then a heavy dose of grated parmesan. Stir them up a little to get them more evenly coated. Then sprinkle the rest of the grated parmesan all over everything.

Into the oven and when the pork chops reach 155°/68°C on an instant read meat thermometer they are done and so are the veggies. (15-20 minutes)

This recipe also works real well with chicken tenders, breasts or thighs of course just cook the chicken until 170F/77C on the meat thermometer.

Shrimp Broccoli Stir Fried Rice – Twenty Minutes

You will make this meal faster and better than your favorite Chinese delivery or take out. The whole Shrimp Broccoli Stir Fried Rice meal on the table in twenty minutes and real good.

If your shrimp is frozen put them in a bowl of water and they will be ready when it’s time to add them to the skillet. If you don’t have any leftover rice in the fridge put a pot of water on and add the salt. I use “minute rice” for a quick meal like this one but regular rice works fine just give it about a 10 minute head start. Put a skillet on at medium high and eyeball enough olive oil to coat the bottom about 1/8″ deep. If your broccoli is frozen just microwave them for a minute. Chop up the garlic and cut the larger broccoli florets in half through the stems.

Put the broccoli in the pan and salt and pepper it. Toss a few times as they cook. When the water boils add the rice. Let it come back to a boil, lower the heat to a simmer and put a lid on it. When the broccoli starts to singe on the edges – about 5 minutes -add the garlic. Squeeze some lemon juice on the garlic and toss it all together.

Toss a few more times as the garlic cooks a little. Just about 1 minute. Push the broccoli and garlic to the outside of the pan and lay the shrimp out flat on the bottom the skillet.

Cook them just one minute each side.

The rice should be done by now so add it to the skillet. Toss or stir to get it all mixed together. If the rice isn’t done yet just lower the heat on the skillet to medium low and toss occasionally ’til the rice catches up.

The whole meal in two skillets and less than 30 minutes.

Put two skillets on at medium high and add about 2 tablespoons of EVOO each. Let’s get the starch and the veggie going. Cut the potatoes in half lengthwise then slice the halves into about 3/8″ slices and put them in their skillet. Pinch of salt, pinch of pepper. Cut the onion into about 3/8″ strips and cut any of the larger broccoli florets in half through the stem. Toss the potatoes and add the onion and broccoli. Another pinch of salt and pepper. TOSS IT occasionally as it cooks. When the chicken tenders are ready to serve the potatoes and veggies will be done.

Lightly salt, pepper and garlic powder the chicken tenders and put them in their skillet. Cook for 3-4 minutes a side until they are firm to a poke or the juices are running clear or the internal temperature reads 165°F on a meat thermometer.

While the chicken is cooking lay out the bacon strips onto two layers of paper towels and top them with another two layers. Put them in the microwave for four minutes.

When the chicken tenders are done lay strips of bacon on them and then top with some slices of cheese. I used mozzarella but I’m sure any cheese will work just fine.

15 Minute Weeknight Salmon- yes you’re going to do the Salmon, the veggies and the potatoes all in 15 minutes.

If your salmon filets are individually wrapped and frozen just put them into a bowl of water while you prep the potatoes and broccoli. Don’t worrCut up the potatoes into about 1″ chunks. Put the potato chunks and the broccoli florets into a casserole dish. Drizzle half of the extra virgin olive oil. Lightly sprinkle with salt, pepper and garlic powder. Stir it all together getting everything coated with the oil and spices. Arrange the potatoes on the outside edges of the dish and put it in the microwave set at 5 minutes.

Put a skillet on at medium high and add the rest of the olive oil. Cut the plastic wraps off of the salmon filets – if you’re working with frozen that is. Don’t worry if your frozen filets are still little stiff, they will finish up just fine in the skillet. Rinse them off and pat dry with paper towels. If the skin is still on lightly salt, pepper, garlic powder and dill weed the flesh side. If you don’t have dill weed just skip it, or, use lemon zest or dried basil instead. If they have been skinned go ahead and do both sides. Put them in the hot skillet skin side up or if they have been skinned with the gray striped side up. Give them about 2-4 minutes a side depending on the thickness and how well done you like it. When they are starting to get firm but not willing to flake they are “rare”. Some people like it like that. When they try to flake when poked with your finger or a fork, they are done.

Check on the veggies by poking a potato chunk with a fork. If they need a little more give it to them a minute at a time.
