Parmesan Chicken Thighs and Sweet Potato Fries……

………..will make you feel like a poet when you say it and a chef when you make it.      The parmesan crusted pan fried chicken thighs and the peppers giving a different twist to fried sweet potatoes all come together real “Quick and Easy”. Watch this video for a sorta preview.

I used boneless skinless thighs but you could use any cut of chicken that works for you. 

Put a skillet on at medium high and add enough olive oil to coat the pan about 1/8″ deep. Trim the excess fat off the thighs. In a shallow dish mix together the flour, grated parmesan, salt, pepper, garlic powder and dried basil. One at a time dip the chicken thighs in the dry mixture and press them in to get them coated evenly and add them to the skillet.

While the Parmesan Chicken Thighs are cooking put another skillet on at medium high and swirl in just enough olive oil to coat the bottom.

Peel and cut up the sweet potatoes into slices about 1/8″ thick and add them to the pan then…….

……..cut the pepper in half lengthwise and remove the stem and seeds and cut them into whatever size pieces that you want. Add the peppers to the potatoes and……..

……..sprinkle with salt and pepper. Toss a few times to get it all mixed together.

The Parmesan Chicken Thighs need to be turned when they are browned on one side. Then when the juices run clear or the thickest one reads 165° on an instant read meat thermometer remove to a pepper towel lined dish.

Watch the potato pan and toss or gently mix a few times as it cooks to help everything cook evenly.

You and your gang will like this one. Pan Seared Chicken Peppers and Onions was a first for us. We really like sausage peppers and onions but I gave this a try just for a new twist. It turned out good,,real good! The thighs instead of breasts was a tasty venture off the usual white meat path and Pan Seared Chicken Peppers and Onions have been added to the menu at our house.

Put a skillet on at medium high and eyeball a few tablespoons of olive oil. Trim any excess fat off the boneless skinless thighs. Salt and pepper the smooth side of the thighs and put them in the skillet smooth side down. Spice up the uneven side and cook for about 4-5 minutes a side until the juices run clear or they read 170°F on an instant read meat thermometer.

While they are cooking cut the peppers into about one inch squares, the onions into wide strips and coarsely chop up the garlic.

When the chicken is done remove it to a dish that will catch the drippings and put the veggies in the skillet and lightly sprinkle with salt, pepper and dried basil. Squeeze in some lemon juice and toss the rind into the mix. With a wooden spoon stir it all up scraping the bits off the bottom of the pan. Toss a few times as it all cooks.

When the onions have become translucent put the chicken – and the drippings – back in the skillet and kinda nestle your thighs down to the bottom to warm back up. Oops! That didn’t come out quite right. Serve your Pan Seared Chicken Peppers and Onions with the starch or carb of your choice. Tonight we sliced up some polenta and seared the slices in a separate skillet.

Quick Easy Chicken Thighs Plus Some Quick and Easy Salad

Quick Easy Chicken Thighs

You will like this for a weeknight meal when you are tired but don’t  want to just zap a leftover or a box meal and because this Quick Easy Chicken Thighs recipe is good, real good. It doesn’t have to be chicken thighs. If you keep frozen tenders or breasts in the freezer you could just thaw them out in the microwave instead.

Turn on the broiler. First put all the ingredients except the chicken in a bowl and mix them all together.  Your creative skills are going to kick in here because after the salt and pepper you can go with any kind of spices and herbs YOU want. From allspice to wasabi and everything in between. You don’t have to stick to the ingredients listed in this recipe. You probably have whatever it takes to make it real good in your pantry.

Then add the chicken the bowl and toss it all together getting the chicken coated with all the good stuff.

Spray oil the right sized cookie sheet or baking pan. You can line it with aluminum foil to make the cleanup as quick and easy as this recipe. Spread the chicken pieces out in the pan and and broil for 5-7 minutes depending on your oven and the thickness of the chicken. Turn them over and cook the other side. When the juice running out of the chicken is clear it is done.

While the chicken is cooking you can put together any kind of salad or veggie you want. We went with a Caprese salad with Avocado for Poppop.
