 ….is done all in one pan and oven baked. All in 30 Minutes, or less.

And,, it turns out great!

When you get home from a busy, tiring day and you want to put a real good meal together but with minimal work and cleanup…..

……this Parmesan Crusted Chicken Dinner definitely fills the bill. You could substitute any kind of potatoes that you have on hand but the sweets shown here were a nice change from the norm. 

The time in the oven could range from 15 to 20 minutes depending on the size and thickness of the chicken. I used these thin filets that we buy frozen and it helps both the prep and the cooking time. Tenders will also work good.

Let’s get going. 

Set the oven at 450°F/232°C and put the chicken in the microwave to thaw. 

Peel and cut up the sweet potatoes into bite sized pieces.

Line a cookie sheet or baking pan with aluminum foil and spray or wipe it with olive oil. I have started using these nonstick cookie sheets and they work out real well. Spread the potato pieces and the broccoli out on the pan. Lay the chicken in the pan. Salt and pepper everything and shake a layer of grated parmesan cheese on the chicken. Lightly drizzle the chicken with olive oil, turn the chicken pieces over and do the same treatment on the second side.

Into the oven it goes. When the chicken reads 165°F/75°C on an instant read thermometer or is leaking out clear liquid or is firm to a poke it is done. You might like to then switch the oven to broiler and put the pan on a top shelf for a minute or two to get things a little crusty. You don’t have to but,, well,, I like to.

Baked Chicken and French Fries – One Pan – 25 minutes – Gluten Free

…….You will make your Oven Baked Chicken and French Fries in one pan and on the table in 25 minutes or less!

How’s that for a quick and easy weeknight supper.

You could even add some vegetables like frozen broccoli florets or baby carrots or Brussels sprouts and have your whole meal in one pan.

Or just put some salad together while your Baked Chicken and French Fries are in the oven.

Set the oven at 450°F/232°C.

If your chicken breasts or tenders are frozen get them thawing in the microwave while you…..

……. cut up the potatoes into french fry shapes. In the pursuit of keeping things quick and easy I just wash the potatoes off and leave the skins on before cutting them up.

Line a cookie sheet with aluminum foil or use a non stick one.

Lay the potatoes and the chicken out in the pan and drizzle with olive oil. Sprinkle some salt, pepper and dried basil on them. After the salt and pepper  you can do a lot of different things spice wise  i.e. grated parmesan      – or – red pepper flakes – or – lemon zest – or – lemon pepper – garlic powder – or – any combination. Toss the potatoes with your hands or a pancake flipper and turn over the chicken.

Repeat the drizzle and sprinkle process and put it in the oven

About 10 – 12 minutes, depending on the thickness, and then switch the oven to the broiler setting and move the pan to a high shelf. When the thickest part of the chicken reads 165° on an instant read meat thermometer it’s ready.

Give it about 3 minutes under the broiler. Top it of with a little parsley and grated parmesan enjoy your Baked Chicken and French Fries!

Lemon Chicken

Whenever you make this Lemon Chicken recipe for family, friends or guests they will really like it,,”I Guarantee it”. It definitely qualifies as quick and easy. It’s a traditional simple Italian recipe and you will make it as good as any fancy Italian trattoria – aka Italian restaurant. If you want to you could leave out the lemon and white wine and have an even simpler garlic chicken recipe or include some capers when you add the white wine and lemons and you would have Chicken Piccata. Thats what I love about weeknight Italian recipes, Just a few ingredients and quick and easy….

…..About the chicken breasts choices, you could buy some boneless skinless and slice them horizontally or you could use chicken tenders that you keep in the freezer or use those frozen portion sized breasts that you can get in Costco or Sam’s. If you go with the frozen choices just thaw them out in the microwave.

Put a skillet on at medium high and add enough olive oil to coat the bottom. Salt and pepper the chicken and grill them in the skillet about 3-4 minutes a side depending on the thickness. When they are firm to a poke or the juices run clear or they read at least 165°F on an instant read meat thermometer they are done. Remove them to a dish to catch the drippings.

While the chicken is cooking slice up the lemon and chop the garlic. Or use the pre chopped kind.

Then add the lemon slices, the white wine and the parsley. Bring the wine up to a fast simmer and lower the heat to just maintain the simmer.

Put the chicken and the drippings back into the skillet and turn them over a few times as the wine reduces. If the chicken has heated up and the lemon is starting to get wilted looking but the liquid is still thin just whisk in a pinch or two of flour and stir into the mix to get it thickened up a little.

Then just go ahead and enjoy your Lemon Chicken. Of course the pasta of you choice is just about a requirement. We had ours with some rigatoni and the rest of that wine. (Chilled Italian Soave) Bon Appetito!

Chicken Fajita Tacos: Quick and Easy, One Pan and Gluten Free (Our Favorite Tex-Mex)

Keeping it quick and easy let’s use some pre-cooked and cut up chicken breasts. You can find them like this in the grocery store and they save some time and cleanup. Or you could cook up a chicken breast and slice it up.

Shortcut for quick and easy chicken tacos

Put a skillet on at medium high and add some olive oil. Break out the chicken slices and put ’em in the pan.

Sprinkle with some salt and pepper and toss a few times as the chicken thaws and starts to grill.

While the chicken is doing it’s stuff seed the poblano and the jalapeño  peppers and cut them into strips . If you don’t want it to be too spicy just go with green bell peppers. Cut the onion into strips.

Put the veggies in the pan with the chicken. Add a little more salt and pepper, the cumin and the red pepper flakes. Toss everything together and toss a few more times as it all cooks.
