If your salmon filets are individually wrapped and frozen just put them into a bowl of water while you prep the potatoes and broccoli. Don’t worrCut up the potatoes into about 1″ chunks. Put the potato chunks and the broccoli florets into a casserole dish. Drizzle half of the extra virgin olive oil. Lightly sprinkle with salt, pepper and garlic powder. Stir it all together getting everything coated with the oil and spices. Arrange the potatoes on the outside edges of the dish and put it in the microwave set at 5 minutes.

Put a skillet on at medium high and add the rest of the olive oil. Cut the plastic wraps off of the salmon filets – if you’re working with frozen that is. Don’t worry if your frozen filets are still little stiff, they will finish up just fine in the skillet. Rinse them off and pat dry with paper towels. If the skin is still on lightly salt, pepper, garlic powder and dill weed the flesh side. If you don’t have dill weed just skip it, or, use lemon zest or dried basil instead. If they have been skinned go ahead and do both sides. Put them in the hot skillet skin side up or if they have been skinned with the gray striped side up. Give them about 2-4 minutes a side depending on the thickness and how well done you like it. When they are starting to get firm but not willing to flake they are “rare”. Some people like it like that. When they try to flake when poked with your finger or a fork, they are done.

Check on the veggies by poking a potato chunk with a fork. If they need a little more give it to them a minute at a time.

Put a skillet on at medium high and add the olive oil. When the chicken is thawed cut it up into about 3/4″ – 1″ chunks on a dishwasher safe cutting board.

One Pan Chicken Dinner can mean a whole lot of different combinations of ingredients. You could use beef or pork instead of the chicken. Potatoes or rice instead of the pasta and any veggie that you have on hand instead of asparagus. It’s that time of year and we found some locally grown, very fresh, asparagus and parsley so,,,.

You don’t have to do this with the chicken. You could just use chicken tenders or sliced chicken breasts. I like to keep some chicken breasts, that I’ve sliced and hammered, in the freezer. Today I needed to refill the supply in the freezer so while I was at it I just went ahead with the chicken this way. But, just grabbing some tenders out of the freezer and thawing them in the microwave is faster.

Put a large sauté pan on at medium high and add enough olive oil to cover the bottom. If the breasts are big cut into thirds by cutting the skinny end off and slice the big end horizontal. If they are average or small just slice them in half horizontally. Cover with some plastic wrap and hammer them flat. All to about the same thickness. Or, just skip all the cutting and hammering and go with chicken tenders.

Put a skillet, that is just large enough to handle the pork chops, on at medium high with just enough vegetable oil to be about 1/4″ deep. Pre heat the oven to 350°F . First get the Parmesan breading ready. In a shallow bowl put the bread crumbs, salt and pepper, garlic powder, dried basil and the parmesan cheese. Whisk it all together.

In another shallow bowl whisk together one large egg and about 1/4 cup of milk.

Cut about an inch off the stem end of the asparagus spears and rinse them off. Pat them dry and spread them out on a cookie sheet. Lightly drizzle them with some olive oil. Lightly sprinkle with salt, pepper, garlic powder and grated parmesan cheese. Gently toss the spears by hand right in the pan until they all are coated with the oil and stuff.

Put any kind of cheese that you want on the spears covering all but the ends. Here they are almost done.

Put them in the pan and depending on the thickness cook until they are browned and done the way you like. If you press in the center of the meat and it is still soft it is too rare for pork. If it is not totally firm and has just a little bit of give to your poke it is pink in the middle aka medium well. If it is firm it is well done without any pink in the middle.

Pan fried Parmesan breaded pork chops and oven baked cheesy asparagus spears.
Ingredients
  • 2. pork chops (about 6oz each) or 4 thin ones
  • olive oil for pan frying and drizzling
  • 3/4 cup bread crumbs
  • 1 tsp. dried basil
  • 1 cup grated parmesan cheese
  • garlic powder
  • salt and pepper
  • 1 large egg
  • 1/4 cup milk
  • 1 bunch asparagus spears (about a big open handful)
  • 2 cups shredded mozzarella or swiss or cheddar or Monterey jack or whatever is your cheese of choice to top the asparagus.
