 One Pot Weeknight Chicken Dinner will be….

 ….real good on the weeknight that you make it and also the leftovers will be great as a lunch at work or as a “weeknight nuke it no brainer” on one of those nights when you just don’t feel like cooking.

A lot of my readers are working moms and/or dads so I hope, no I’ll bet, that  this recipe helps.

It’s quick,  easy, and delish!

First get out your dishwasher safe cutting board and cut up the chicken. In the pursuit of quick and easy I just thawed out some tenders in the microwave and cut them into pieces.

Put a large skillet or sauté pan on at medium high and swirl in enough olive oil to coat the bottom. Put in the chicken pieces and stir them around a few times as they cook.

When they have browned add the carrots, salt, pepper and dried basil.

Mix it up a few times until the carrots just begin to get a little soft. I test them with a table fork.

Add the broth and let it come up to a fast simmer. Then…

…..put in the gnocchi.  Stir a few more times until the gnocchi starts to float, 2-3 minutes. You could use cut up potatoes or some small piece pasta like penne or rigatoni instead of gnocchi. Just put it in at the same time as the broth.

Then add the peas.

Mix the peas in and when broth starts to simmer again throw in the grated parmesan.

Stir in the parmesan and it’s ready to enjoy! Top it off with a little more grated parmesan when you serve it.

A nice chardonnay goes along real good with your One Pot Weeknight Chicken Dinner.

Sautéed Potatoes and Broccoli with Parmesan. This is easy and good. We have it, or some variation of it, a couple of times a week.

Sautéed Potatoes and Broccoli with Parmesan

A real good veggie mixture that is very easy to put together.
Ingredients
  • [b]2 tbsp. olive oil
  • 1 medium size potato cut into thick slices
  • salt and pepper
  • 3 cups Broccoli florets.We keep some frozen ones on hand.
  • 1/2 medium onion cut into strips
  • 4 large cloves of fresh garlic chopped
  • 1/4 large lemon or 1/2 of a small one
  • 1/2 cup Grated Parmesan Cheese[/b]
Instructions
  1. [b]Put a 10″ (or so) skillet on sat medium high and add the olive oil
  2. When the oil has heated up put the potatoes in the pan with the slices lying flat.
  3. Salt and pepper the potatoes.
  4. Fry the potatoes until brown on the skillet side.
  5. Turn them over and salt and pepper the other side.
  6. When the other side is starting to brown push the potatoes off to the side of the pan and put the broccoli and onion onto the bare spot in the middle.
  7. Turn them a few times as they cook
  8. When the onion is translucent move the broccoli and the onions to the side of the pan with the potatoes
  9. Put the garlic on the bare spot and squeeze the lemon juice onto the garlic. put the lemon rind into the pan.

  11. Let the garlic cook in the lemon juice for a minute and toss everything together

Beef Tenderloin in Balsamic Wine Sauce is a treat for a special occasion or just when you want to spoil yourself a little.

 

Beef Tenderloin in Balsamic Wine Sauce

A real good and real easy beef tenderloin recipe
Ingredients
  • 2 thick cut beef tenderloin steaks
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. garlic powder
  • 1/3 cup red wine
  • 1/3 cup Balsamic vinäger
  • 1/2 tbsp. chopped basil or parsley (for garnish)
Instructions
  1. If you have the time let the steaks get to room temperature. If not, don’t worry about it and charge on!
  2. Put a skillet on at medium high. Trim any excess fat off the steaks and put the trimmings in the skillet and smear them around to grease the pan. Salt, pepper and garlic powder both sides of the steaks and press on to the meat.

  4. Remove the fat from the pan and put the steaks in. Sear for 1 minute a side and remove to a plate that will catch the drippings. Add the wine, the rest ao the garlic powder and the balsamic vinegar to the pan and stir with a wooden spoon scraping the pan to get all the bits up and into the sauce. Bring it to a rapid simmer and reduce the heat to just maintain the simmer. Put the steaks back in the pan and cook for 3-5 minutes a side depending on how you like them done. You can check for doneness by poking with a finger. Real soft is rare and real firm is well done. In between is, well ,,you get it.
