Stir Fried Beef and Snow Peas-You are going to do it better than take out and faster than home delivery AGAIN!

If you don’t have any pre-cooked rice on hand start a pot of salted water set at high. If you are not using minute rice wait to start the beef until the rice has just started to get pliable when given the nibble test. If you are using minute rice just go ahead with the beef when you put the water on.

Cut the beef into strips or just buy some that are ready and waiting for you in the grocery store. I found them in mine and I’ll bet that yours has them too.

Put a skillet on at medium high and eyeball just enough olive oil to coat the bottom of the pan. When it gets hot put in the beef. Stir it often as it cooks. As it is cooking chop up the garlic. Add the black pepper, red pepper flakes, sesame seeds, garlic, soy sauce and ginger. No salt! The soy sauce has enough to do the job.

When the beef is well browned all over add the snow peas.

Stir in the peas and keep stirring often as the peas cook. When they have turned from the pale green that they were when you put them in to a bright green they are done. They won’t take long. Like 3-5 minutes. They are best if crisp, not mushy.

Shrimp Broccoli Stir Fried Rice – Twenty Minutes

You will make this meal faster and better than your favorite Chinese delivery or take out. The whole Shrimp Broccoli Stir Fried Rice meal on the table in twenty minutes and real good.

If your shrimp is frozen put them in a bowl of water and they will be ready when it’s time to add them to the skillet. If you don’t have any leftover rice in the fridge put a pot of water on and add the salt. I use “minute rice” for a quick meal like this one but regular rice works fine just give it about a 10 minute head start. Put a skillet on at medium high and eyeball enough olive oil to coat the bottom about 1/8″ deep. If your broccoli is frozen just microwave them for a minute. Chop up the garlic and cut the larger broccoli florets in half through the stems.

Put the broccoli in the pan and salt and pepper it. Toss a few times as they cook. When the water boils add the rice. Let it come back to a boil, lower the heat to a simmer and put a lid on it. When the broccoli starts to singe on the edges – about 5 minutes -add the garlic. Squeeze some lemon juice on the garlic and toss it all together.

Toss a few more times as the garlic cooks a little. Just about 1 minute. Push the broccoli and garlic to the outside of the pan and lay the shrimp out flat on the bottom the skillet.

Cook them just one minute each side.

The rice should be done by now so add it to the skillet. Toss or stir to get it all mixed together. If the rice isn’t done yet just lower the heat on the skillet to medium low and toss occasionally ’til the rice catches up.

Shrimp Broccoli Soy Sauce – No Wok – 20 Minutes

You won’t need delivery or take out. This dinner is easy and better than anything that comes knocking on your door. It’s gluten free, very healthy and definitely a quick and easy weeknight meal. I did a batch of Italian Mozzarella Rice for our carbs tonight. It was simple and a great match with the Shrimp Broccoli Soy Sauce. Amp up the recipes for a few extra servings and put them in the freezer because this a great “take it to work” or a “weeknight nuke it no brainer”. 

Thaw out your shrimp in the microwave. Peel and devein them if you have to. Put a skillet on at medium high and add a couple of tablespoons of evoo.

Lay the shrimp out in the skillet and lightly salt and pepper them. Also maybe a pinch of red pepper flakes if you like things a little on the spicy side.
