Quick Easy Spicy Pork Chops – 25 Minutes

Spicy Pork Chops-6-poppopcooks.com

You will have to use two skillets to put together this Quick Easy Spicy Pork Chops meal. Poor baby.

Take the pork chops out of the fridge and let them get rid of the chill while you start on your potatoes and veggies.

Spicy Pork Chops-poppopcooks.com

Put the first skillet on at medium high and eyeball about three tablespoons of olive oil. Cut the potatoes in half lengthwise then slice into about 1/4″ slices. Put them in the pan and salt and pepper them. Toss them a few times as they cook.

Spicy Pork Chops-10-poppopcooks.com

While the potatoes are at it chop up 1/2 of a large onion. When the potatoes have started to get crispy put in the onions and mix it all together.

Spicy Pork Chops-3-poppopcooks.com

Put the second skillet on at medium high and eyeball just enough olive oil to coat the bottom of the skillet. Trim the excess fat off the chops. Salt and pepper them. Now, beyond the salt and pepper is when you can let your creative juices flow and spice things up to suit yourself. After all, you are the boss. Tonight I went with red pepper flakes, ginger, garlic powder and dried basil. But you do it how YOU want.

Put the chops in the skillet.

Spicy Pork Chops-4-poppopcooks.com

Toss the onions and potatoes occasionally. Cook the chops about 3 minutes a side depending on the thickness.

Spicy Pork Chops-5-poppopcooks.com

When you turn over the chops to cook the second side add the peas to the potato skillet and toss. Toss the veggies together a couple of times as the chops finish cooking. When the chops are firm to a poke or reach 160-170°F on an instant read meat thermometer they are done. When the peas are hot to the touch they are done.

Serve up your Quick Easy Spicy Pork Chops meal. Bon Appetit!

We had an Argentinian Malbec with ours but any hearty red would pair up real well.

Quick Easy One Pan Meatballs and Pasta

Do you like having you weeknight dinners quick and easy but still real good? One Pan Meatballs and Pasta fills the bill. Meat, carbs and veggies all in one pan and ready in 30 minutes or less. I had never done meatballs and pasta all in one pan before. I always considered  it a blasphemy against my Italian roots, but, this turned out real good and it was quick and easy. Try it and please tell me what you think in “comments” section at the bottom of the page. For gluten free you can just use gluten free pasta or rice or potatoes.

First put a large skillet or saute pan on at medium high with a couple of tablespoons of olive oil. Put all the meatball ingredients in a bowl. That would be everything except the pasta and the veggies.

One Pan Meatballs and Pasta

I just grab and mix with my hands, but, you could use a large cooks spoon or a paddle wheel on your countertop mixer. Just enough to get all the ingredients blended together. Don’t mix it too long or your meatballs will be tough after they are cooked.

My Mom's Meatball Recipe4 poppopcooks.com

Form the meat into balls that are the size that you want. An ice cream scoop helps keep them all the same size. Put them in the pan as you form them and turn them as they get brown. When they are all browned add the pasta and the veggies.

One Pan Meatballs and Pasta-2-poppopcooks.com

For the sauce you could use marinara sauce that you might have on hand or some that you had bought off the shelf. (I recommend Barilla or Buitoni) or just go with some chopped up fresh tomatoes.

One Pan Meatballs and Pasta-3

Mix it up gently and bring it up to a fast simmer. Lower the heat to medium and put a lid on it.

One Pan Meatballs and Pasta-4-poppopcooks.com

Stir it often as it cooks. When the pasta is cooked the way you like it serve up your One Pan Meatballs and Pasta.

One Pan Meatballs and Pasta-5-poppopcooks.com

Chianti  of course and some crusty bread to dip in the sauce.

For the veggie and carbs tonight I just went to the fridge and got whatever was on hand that would work in a skillet. It happened to be potato, eggplant, zucchini, onions and rosemary from it’s pot out on the deck.

Blackened Salmon-2-poppopcooks.com

Heated up a skillet to medium high with a couple of tablespoons of extra virgin olive oil. Then added all the veggies, salt, pepper and squeezed the juice from half a lemon all over it and tossed the lemon rind into the mix. Tossed them a few times as the veggies got seared.

Blackened Salmon-4-poppopcooks.com

While the veggies are cooking heat up another skillet at medium high and add a tablespoon of olive oil and 2 tablespoons of butter. Rub the spice mixture all over the salmon and very lightly press it on to the filets.

Blackened Salmon-3-poppopcooks.com

Put the fillets in the pan and cook about 3-5 minutes a side depending on how thick they are and how well done you like them.

Blackened Salmon-5-poppopcooks.com

The veggies are done and we had a little arugula so I couldn’t help myself. I just tossed it in with the veggies.
