Sautéed Potatoes and Broccoli with Parmesan. This is easy and good. We have it, or some variation of it, a couple of times a week.

Sautéed Potatoes and Broccoli with Parmesan

A real good veggie mixture that is very easy to put together.
Ingredients
  • [b]2 tbsp. olive oil
  • 1 medium size potato cut into thick slices
  • salt and pepper
  • 3 cups Broccoli florets.We keep some frozen ones on hand.
  • 1/2 medium onion cut into strips
  • 4 large cloves of fresh garlic chopped
  • 1/4 large lemon or 1/2 of a small one
  • 1/2 cup Grated Parmesan Cheese[/b]
Instructions
  1. [b]Put a 10″ (or so) skillet on sat medium high and add the olive oil
  2. When the oil has heated up put the potatoes in the pan with the slices lying flat.
  3. Salt and pepper the potatoes.
  4. Fry the potatoes until brown on the skillet side.
  5. Turn them over and salt and pepper the other side.
  6. When the other side is starting to brown push the potatoes off to the side of the pan and put the broccoli and onion onto the bare spot in the middle.
  7. Turn them a few times as they cook
  8. When the onion is translucent move the broccoli and the onions to the side of the pan with the potatoes
  9. Put the garlic on the bare spot and squeeze the lemon juice onto the garlic. put the lemon rind into the pan.

  11. Let the garlic cook in the lemon juice for a minute and toss everything together
  12. Add the parmesan cheese

  14. finish cooking everything for another 2-3 minutes tossing a few times as it cooks.

Baked Sweet Potato Chunks with Cinnamon is a favorite of ours. We really like it and every time we make it for company they rave about it too. The pic of the finished product isn’t my best work, but, try this recipe anyway. It’s very quick and easy. And it’s gluten free.

Baked Sweet Potato Chunks with Cinnamon

A real quick and easy carb
Ingredients
  • 2 medium size sweet potatoes
  • Olive oil
  • Powdered Cinnamon
  • Garlic powder
  • salt and pepper
Instructions
  1. Preheat oven at 400F
  2. Peel the sweet potatoes and cut into chunks (pieces) a little smaller then golf ball size.

  4. Put the pieces in a bowl and drizzle with olive oil.
  5. Lightly sprinkle with the cinnamon, salt, pepper and garlic powder.
  6. Toss it with a large spoon.
  7. Redrizzle, resprinkle and retoss.
  8. Line a baking pan large enough to handle the chunks spread out in one layer without them piling up with foil and spray or wipe with olive oil.

  10. Bake for about 8-10 minutes and poke them with a fork to see if they are as done as YOU want them.

There are a lot of people who don’t like Cauliflower. They were made to eat it as a kid and vowed to never eat it again. A confession. That described me pretty well. Gammy likes it and suggested I try it mixed with broccoli and sautéed with garlic and lemon the way I like to do broccoli by itself. So here comes Sautéed Cauliflower and Broccoli. BTW I really liked it. So, all you cauliflower haters out there try it like this. It is really good. Not just tolerable but GOOD.

Cut the stalks off the heads of Cauliflower and Broccoli. Then trim and cut them into florets. Chop up 4-6 cloves of garlic depending on how garlicy you like it. The lemon will bring out the best of the garlic and won’t let the garlic overpower the other flavors.

Put a skillet large enough to handle it all on at between medium and medium high. Add 2 tbsp. of olive oil. For sautéing it doesn’t have to be extra virgin. The Cauliflower is going to take the longest to cook. Then the Broccoli. Then the garlic. So when the oil has heated up add the Cauliflower and very lightly sprinkle a little salt, black pepper and red pepper flakes.  Then toss it to get it coated with the oil. Toss regularly as the veggies cook.

When the Cauliflower starts to show a few brown spots add the Broccoli and toss it all together. When the Broccoli starts to show a few brown spots push the Cauliflower and Broccoli to the outside of the pan and put the garlic in the bare spot in the middle. Spread it out and squeeze the juice from the half of lemon on to the garlic making sure that all the garlic gets some lemon juice. Toss the lemon rind into the pan. Let the garlic cook like that for about 30 seconds.

Toss it all together and shake the Parmesan Cheese all over it.

Toss it again and it’s ready to serve. And, I have to confess again, it is real good.

Rice Parmesan Cheese Broccoli Tomatoes. If you have some leftover rice in the fridge or if you always make more than you need so you will have some hanging out in the freezer or if you like the looks of this recipe and just go ahead and cook up some rice , whatever, This is a real easy and good gluten free carb and veggie combo. You can do it with any additions to the rice YOU want. Just put the stuff that needs more cooking on the outside of the bowl, like we did with the broccoli, so it heats up more than the rest.

Put the rice in the bowl. Put the broccoli ’round the edge. Make a hole in the middle of the rice and put the tomatoes there. Put the pads of butter on top and sprinkle the grated parmesan all over.

Zap it in the microwave, Covered, for about 4-5 minutes or in a 350F oven for about 8-10 minutes  or until the tomatoes are hot to the touch.

Serve it up. It makes a great side for any meat dish.
