String Beans can be blah. Especially canned or frozen ones. We like fresh and sometimes even buy them already washed and trimmed. Team them up with some onion, garlic, sliced almonds and lemon juice and – WOW – you will have quite the opposite of blah. This String Beans and Sliced Almonds recipe is real easy and real good.

A real good veggie mixture that is very easy to put together.
Ingredients
  • [b]2 tbsp. olive oil
  • 1 medium size potato cut into thick slices
  • salt and pepper
  • 3 cups Broccoli florets.We keep some frozen ones on hand.
  • 1/2 medium onion cut into strips
  • 4 large cloves of fresh garlic chopped
  • 1/4 large lemon or 1/2 of a small one
  • 1/2 cup Grated Parmesan Cheese[/b]
Instructions
  1. [b]Put a 10″ (or so) skillet on sat medium high and add the olive oil
  2. When the oil has heated up put the potatoes in the pan with the slices lying flat.
  3. Salt and pepper the potatoes.
  4. Fry the potatoes until brown on the skillet side.
  5. Turn them over and salt and pepper the other side.
  6. When the other side is starting to brown push the potatoes off to the side of the pan and put the broccoli and onion onto the bare spot in the middle.
  7. Turn them a few times as they cook
  8. When the onion is translucent move the broccoli and the onions to the side of the pan with the potatoes
  9. Put the garlic on the bare spot and squeeze the lemon juice onto the garlic. put the lemon rind into the pan.
