Shrimp Fried Rice with Snow Peas

All in one pan including the rice!

You probably have noticed that I’ve posted a couple of Shrimp Fried Rice recipes before but never with snow peas. Snow peas can go great with just about any meat or fish but especially shrimp…..

……If you are using frozen shrimp put them in a bowl of cold water and they will be thawed out by the time the rice is done. Put a large sauté pan on at medium high. Add the water, the salt and the minute rice. Or, regular rice if you want. For meals like this I’ve settled on brown minute rice.

Stir it and bring it to a fast simmer. Lower the heat to the point that it maintains a simmer and cover with a lid. Follow the instructions on the box for the best cooking time for the rice that you are using. Check to see if any more water is needed at about 3 minutes short of the prescribed cooking time. If so just enough to bring the surface of the liquid even with the top of the rice.

While the rice is cooking chop up the onion and garlic. Whisk up the egg –  or eggs – and have the snow peas standing by.

Raise the heat on the pan to medium high and add just enough olive oil to cover the bottom. Put in the onions, garlic and shrimp.

Spread the shrimp out so they are all lying flat and give them about a minute and a half a side. Add the snow peas to the pan and stir a couple of times as they warm up. That’s about all that you want to do is warm them up. Then put the rice in and add the soy sauce. Stir it all together and stir a few more times as the rice gets heated back up.

When it is all heated up serve up your Shrimp Fried Rice with Snow Peas.

Shrimp Broccoli Stir Fried Rice – Twenty Minutes

You will make this meal faster and better than your favorite Chinese delivery or take out. The whole Shrimp Broccoli Stir Fried Rice meal on the table in twenty minutes and real good.

If your shrimp is frozen put them in a bowl of water and they will be ready when it’s time to add them to the skillet. If you don’t have any leftover rice in the fridge put a pot of water on and add the salt. I use “minute rice” for a quick meal like this one but regular rice works fine just give it about a 10 minute head start. Put a skillet on at medium high and eyeball enough olive oil to coat the bottom about 1/8″ deep. If your broccoli is frozen just microwave them for a minute. Chop up the garlic and cut the larger broccoli florets in half through the stems.

Put the broccoli in the pan and salt and pepper it. Toss a few times as they cook. When the water boils add the rice. Let it come back to a boil, lower the heat to a simmer and put a lid on it. When the broccoli starts to singe on the edges – about 5 minutes -add the garlic. Squeeze some lemon juice on the garlic and toss it all together.

Toss a few more times as the garlic cooks a little. Just about 1 minute. Push the broccoli and garlic to the outside of the pan and lay the shrimp out flat on the bottom the skillet.

Cook them just one minute each side.

The rice should be done by now so add it to the skillet. Toss or stir to get it all mixed together. If the rice isn’t done yet just lower the heat on the skillet to medium low and toss occasionally ’til the rice catches up.

Quick Easy Lemon Parsley Salmon

Just when you think that there aren’t any more quick and easy ways to serve up salmon this Lemon Parsley Salmon comes along. This is quick, easy, delish and healthy. A real nice weeknight supper.

If your salmon filets need to be thawed out just give them a few minutes in a bowl of water or in the microwave, on the defrost setting of course.

Cut the onions into strips. Chop up the parsley and the garlic. Cut the lemon in half and get out the butter.

Put a skillet on at medium high and add the butter. When the bubbling starts to slow down add the onion strips. Then salt, pepper and dill weed. Or just salt and pepper works fine.

When the onions have started to wilt and get translucent lay the salmon filets on top with the skin side up. If your filets have been skinned have the side with the gray stripe as the up side. Squeeze in the lemon juice  and toss in the rinds. Add the parsley and garlic.

When the salmon starts to weep out white tears – about 2-3 minutes –  turn them over and and add the white wine. Have a sip or two yourself, you deserve it. Stir the liquids, the garlic, onions and the parsley a couple of times as the salmon finishes cooking. Serve up your Lemon Parsley Salmon and top the filets with the mixture from the pan. Bon Appetit!

You google Risotto and you come up with tons of different ways to prepare this traditional Italian dish. If you want an uncomplicated, all in one pot, quick and easy meal, this Shrimp Risotto with Spinach recipe can be it. You can give it lots of variations and ingredient substitutions like leftover rotisserie chicken and broccoli florets. The list goes on and on to include anything you might have on hand.

It’s easy. Chop up the onion. Put a saucepan on at medium high and add the olive oil then the onion, salt and pepper. Stir up the onions a few times as they cook and when they start to get translucent add the rice. Stir it up to get the rice all coated with the oil. Put in the wine and take a few sips yourself. You deserve it. Mix it all up and when the wine comes to a simmer lower the heat enough to just maintain a fast simmer. Stir it a few times as the wine reduces until the surface of the wine is even with the top of the rice.

Add about half of the broth and stir pretty regularly. When the broth has reduced and the rice has absorbed it to the point that the surface of the broth is even with the top of the rice add half of the remaining broth. Repeat the routine then nibble a few grains to see if it needs to cook a little more. If so add the remaining broth and do it again. If you run out of broth and the rice isn’t done a little hot tap water will be okay to finish with. When the rice is soft on the outside but chewy on the inside add the shrimp and the spinach.

Stir it a few times as the shrimp cooks and the spinach wilts. When the shrimp is opaque add the grated parmesan and mix it in. Spoon your Shrimp Risotto with Spinach into warm bowls. Top with some grated parmesan cheese and enjoy the rest of that white wine.

Recipe Notes

A suggestion; the hotter the broth is the faster the risotto will get done. Some cooks have it simmering in a pot next to the risotto.

Also,,if you like the idea of dipping bread into the extra liquid just have a little extra left in the finished product. You are better off with a little too much liquid than too little. It helps avoid the rice sticking to the bottom of the pot and having your risotto turn out too sticky.
