You have here yet another take on Caprese Salad. Pork Tenderloin Caprese Salad is real easy and will be on the table in 30 minutes or less.

Trim the silver skin and excess fat off the tenderloin. Put a Skillet on at medium high and eyeball a couple of tablespoons of olive oil into it. Sprinkle salt, pepper and dried basil all over the tenderloin and place it in the skillet. Turn it as it sears getting all sides browned. When it’s firm to a poke or the internal temperature is 150 – 155°F on an instant read meat thermometer – about 15 minutes – take it out and let it rest for 5 minutes.

If you’re having more than two servings cutting a larger tenderloin in half is ok and will make it fit into a skillet easier.

While the tenderloin is cooking slice the Roma tomatoes and fresh mozzarella. Rinse off and pat dry the fresh basil leaves. If you want to,  chop up a couple of the basil leaves for garnish. When the tenderloin has rested a little slice it into about 3/8″ slices. Arrange the slices of tomatoes, mozzarella, pork tenderloin and the basil leaves any way that YOU want. Here is how ours looked.

Lightly sprinkle some salt on. Drizzle with good extra virgin olive oil and good balsamic vinegar. Get a piece of each of the 4 main ingredients on your fork. The mix of the flavors is fantastic. Bon Appetito!

We've done this using chicken tenders instead of pork tenderloin. It's real good like that also.

Quick Easy Chicken Thighs Plus Some Quick and Easy Salad

Quick Easy Chicken Thighs

You will like this for a weeknight meal when you are tired but don’t  want to just zap a leftover or a box meal and because this Quick Easy Chicken Thighs recipe is good, real good. It doesn’t have to be chicken thighs. If you keep frozen tenders or breasts in the freezer you could just thaw them out in the microwave instead.

Turn on the broiler. First put all the ingredients except the chicken in a bowl and mix them all together.  Your creative skills are going to kick in here because after the salt and pepper you can go with any kind of spices and herbs YOU want. From allspice to wasabi and everything in between. You don’t have to stick to the ingredients listed in this recipe. You probably have whatever it takes to make it real good in your pantry.

Then add the chicken the bowl and toss it all together getting the chicken coated with all the good stuff.

Spray oil the right sized cookie sheet or baking pan. You can line it with aluminum foil to make the cleanup as quick and easy as this recipe. Spread the chicken pieces out in the pan and and broil for 5-7 minutes depending on your oven and the thickness of the chicken. Turn them over and cook the other side. When the juice running out of the chicken is clear it is done.

Caprese Salad with Avocado

If you like Caprese Salad (and who doesn’t? ) You will really like this Caprese Salad with Avocado. We posted  the basic recipe for Caprese Salad a little while back and this is a way to add a some real good extra flavor to an already great salad. Slice up two Roma tomatoes. Then slice and cut up some fresh mozzarella cheese into the same number of slices as the tomatoes. I always manage to wind up with some extra pieces of mozzarella to nibble on while I halve, pit and peel an avocado. Slice up the avocado halves trying to get the same number of slices as the tomatoes and the cheese. You might have to nibble on a few of them too in order to win at the game of getting all the slices in step. Arrange them in salad bowls then top with some fresh basil leaves. Drizzle some Extra Virgin Olive Oil. Then some Balsamic vinegar. sprinkle a little salt and you might want to add a little grated Parmesan. That’s up to you. You’ll like this and so will your family and guests. “I guarantee it”
