Poke holes in the sausage so that the juices can run off when they start to cook.

Put a pot of salted water on for the pasta. You could even cook the pasta in the skillet with the sausage. When you add the sauce add the pasta. It works best that way with a short pasta like penne or rigatoni. Put a large skillet on at medium high and eyeball just enough olive oil to lightly coat the bottom of the pan. Put the sausage in. Brown them well on each side. About 3-4 minutes a side.

When the sausage is browned and firmed up move them to your cutting board and cut them in half lengthwise.

Put them back in the pan with the flat side down.

Add the sauce and bring it to a simmer then lower the heat just enough to maintain a fast simmer. Move the sausage around a few times as it finishes cooking in the sauce. About 8-10 minutes.

Quick Easy One Pan Meatballs and Pasta

Do you like having you weeknight dinners quick and easy but still real good? One Pan Meatballs and Pasta fills the bill. Meat, carbs and veggies all in one pan and ready in 30 minutes or less. I had never done meatballs and pasta all in one pan before. I always considered  it a blasphemy against my Italian roots, but, this turned out real good and it was quick and easy. Try it and please tell me what you think in “comments” section at the bottom of the page. For gluten free you can just use gluten free pasta or rice or potatoes.

First put a large skillet or saute pan on at medium high with a couple of tablespoons of olive oil. Put all the meatball ingredients in a bowl. That would be everything except the pasta and the veggies.

I just grab and mix with my hands, but, you could use a large cooks spoon or a paddle wheel on your countertop mixer. Just enough to get all the ingredients blended together. Don’t mix it too long or your meatballs will be tough after they are cooked.

Form the meat into balls that are the size that you want. An ice cream scoop helps keep them all the same size. Put them in the pan as you form them and turn them as they get brown. When they are all browned add the pasta and the veggies.

For the sauce you could use marinara sauce that you might have on hand or some that you had bought off the shelf. (I recommend Barilla or Buitoni) or just go with some chopped up fresh tomatoes.

Mix it up gently and bring it up to a fast simmer. Lower the heat to medium and put a lid on it.

Spaghetti aglio e olio is a simple, classic pasta dish that dates back to Napoli (Naples). Add some diced tomatoes to the traditional recipe and enjoy the look and the taste of your Spaghetti aglio e olio for Christmas.

Put a pot of water on at high that is big enough to handle the spaghetti. Add a couple of teaspoons of salt. Put a pot or a high sided pan, that is big enough to handle the Spaghetti when cooked,  on at medium low and add 1/4 cup of good extra virgin olive oil.

Chop up 5 large cloves of garlic and small handful of fresh parsley. Core, seed and dice a Roma tomato.

Add the garlic to the oil and watch that it doesn’t get brown. You want the garlic to be translucent not browned.

After the Garlic has softened up a little add the chopped parsley (or arugula or spinach) and the tomato to the pan and stir it all together.

When the pasta is cooked al dente pick it out of the pot with tongs or a big fork and spoon or whatever and put it in the pan with the veggies. Don’t worry about getting some of the pasta water in with the veggies, in fact you will want to add a couple of tbsp. to the pan after you get the pasta in. The starch in the water helps thicken the sauce. Add a quarter cup of grated parmesan cheese and toss it all together. Transfer it to a  warm bowl and let it sit for a couple of minutes.

 Then top it off with a little grated parmesan and serve up your Spaghetti aglio e olio! Bon Appetite!! Some good, crusty homemade bread is great for dipping in the oil and a chilled bottle of good Pinot Grigio helps too.
