New York Strip Steak

…oddly enough in New York City is NOT called a New York Strip Steak. It’s just a strip steak or a Delmonico Strip Steak.

Per Wikipedia…..

……”Delmonico’s Restaurant, an operation opened in New York City in 1827, offered as one of its signature dishes a cut from the short loin called a Delmonico steak. Due to its association with the city, it is often referred to as a New York strip steak.”

Whatever it’s called in various parts of the world it turns out to be a real good steak. We get ours from Costco and they weigh about a pound each. So,,,we wind up splitting one for supper.

Tonight it’s a little bit of a twist on an old favorite, We’re adding caramelized onions, cored seeded Roma tomatoes and a red wine reduction.

Don’t panic! It’s easy!

First put a skillet on at medium heat with a couple of tablespoons of olive oil – just eyeball it. Cut up the onions into the strips that are the width that YOU want them to be. I like about 3/8″.

Put the onion strips into the skillet,sprinkle with a little salt and pepper. Toss and turn them as they start to get translucent.

While the onions are cooking core and seed the Roma tomatoes and cut them into pieces a little bit bigger than bite size. Sorry, the pic shows them before I made the “little bit bigger than bite size” cuts.

When the onions are starting to get translucent push them way off to one side of the skillet. Turn the heat up to medium high. Salt and pepper both sides of the steak and lay the steak on the side of the skillet opposite the onions and you will be able to sear the steak without burning the onions.

When the steak is seared on both sides and is cooked just shy of the degree of  doneness that you want- was that bad grammar? Lay the pieces of tomato on top of the onions.

Scoot the veggies to the middle of the skillet and lay the steak on top. Pour in the red wine and add the butter.

Simmer until the wine has reduced by about a third and then feast on your New York Strip Steak that you have jazzed up a little and……

Quick Easy Beef Fajitas – No Marinade

In keeping with your recipes needing to be quick and easy let’s eliminate the marinading the beef step and still have great tasting Quick Easy Beef Fajitas.

Put a large skillet on at a setting between medium high and high. Add enough olive oil to fully coat the bottom the skillet. Use thin sliced round beef steak or whole skirt steak or flank steak and cut it into about 1/2″ strips. The peppers in the pic are poblano peppers cut into strips. You might prefer red, green or orange bell peppers. We like the poblanos because they add a little bit of spiciness. Cut a medium sized onion into strips and chop up the garlic. Cut the lemon – or lime – in half.

Put everything but the lemon in the skillet and toss it all together. Squeeze the lemon – or lime – juice all around on top of the mixture and toss in the rinds. Sprinkle the spices all over it and toss it all some more. Toss regularly as it cooks. When everything is starting to get a little crispy on the edges, it’s ready. About 10 – 15 minutes. About halfway through the grilling process drain off any liquid that has accumulated in the pan and add a little more olive oil.

Heat up the tortillas in between pepper towels in the microwave and enjoy your Quick Easy Beef Fajitas. Spoon the meat and veggies on the tortillas and top it off with some salsa or sour cream or pico de gallo or “all of the above”.

Meatballs Parmesan

Meatballs Parmesan – You can buy ready made meatballs already cooked and frozen in the store if you  want to. Just thaw them out in the microwave per the instructions on the bag before you use them.  I like to make our own and keep them in the freezer. Here’s my mom’s recipe if you want to give it a go. You can buy Marinara Sauce in the store but if you want to make your own and keep some on hand here is our recipe for Marinara sauce. It will  last for 2-3 weeks in the fridge or 6 months to a year in the freezer.

Put 2 or 3 meatballs in individual casserole dishes or enough for everybody in a large casserole dish. Add some marinara and roll the meatballs around in it.

Cover with some mozzarella or provolone cheese.

Spread just a few dabs of sauce all over the cheese. Lightly drizzle with extra virgin olive oil then lightly sprinkle dried oregano and grated parmesan cheese.

Bake until the sauce in the bottom of the dish is bubbling, about 8-10 minutes. Then serve up your Meatballs Parmesan topped with a little more grated parmesan cheese.

Oven Baked Italian Sausage with Mediterranean Veggies

You can get this recipe for Oven Baked Italian Sausage in the oven in 6 or 7 minutes and be free to do “whatever” while it gets ready. Because it’s all in one pan and you just have to turn everything over once in the middle of the baking. 

Turn the oven on at 400°F/200°C. Line a large cookie sheet with aluminum foil to make the cleanup lots easier. The sausage and the potato are going to take longer to cook than the rest of the veggies so lets give them a head start. Cut up the sausage links into 3 pieces each and spread them out in the pan.

Put the pan in the oven while you cut up the potato into chunks.

Add the potato chunks to the pan and put it back in the oven while you cut up the rest of the veggies. Try to get the chunks about the same size as the potatoes. Add them to the pan and drizzle with some extra virgin olive oil. Add the spices and gently toss it all a little with a large cooks spoon to get  everything covered with the oil and the spices.

Put the pan back in the oven and at about 10-12 minutes gently turn everything over and give it about another 10-12 minutes.
