London Broil Steak with Red Wine Balsamic Sauce

You can make your London Broil Steak with or without the marinade. You can get the steak in the marinade before you leave in the morning or if you have some time before supper you could give it an hour or two. Or, you could just charge on without the marinade. We’ve done it like that and it’s still real good.

If you do it with the marinade, put the London Broil Steak in a gallon sized zip lock. Add 1/4 cup red wine, 1/4 cup balsamic vinegar, 1/4 cup extra virgin olive oil, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 pinch red pepper flakes and 1 teaspoon dried basil. Close the bag and shake it all together. Unzip the bag a little and fold it up squeezing as much of the air out as you can and zip it closed.

Let it rest in the fridge for from just an hour or as long as overnight, whatever you have time for. If you go without the marinade just sprinkle all of those dry ingredients on both sides and outdoor grill or stovetop grill or skillet the steak.

The veggies are real easy but they will take a little longer than the steak so let’s get them going. Rinse off and pat dry two medium size potatoes and one large zucchini. Set the oven at 400°F/204°C. First cut the potatoes lengthwise into  wedges and put them into a ceramic bowl. Then into the microwave for 3-4 minutes or until they just begin to get the slightest bit soft.

While the potatoes are getting zapped cut the ends off off the zucchini then in half cross ways then each half into four pieces lengthwise.

Put the potatoes and the zucchini into a baking pan lined with aluminum foil. Drizzle with 2 tablespoons of extra virgin olive oil. Sprinkle with 1/2 teaspoon each of salt and black pepper and 1 tablespoon of grated parmesan cheese. Toss it all together until all the veggies are coated. Spread them out and turn them so that the pointy sides are pointing up. Then sprinkle another tablespoon of grated parmesan on them.

Put the veggies in the oven. Put a skillet big enough to handle the London Broil Steak on at medium high. Add one tablespoon of olive oil. Let it get hot and put the steak in. Then pour all of the marinade into the skillet.

Yes, that’s what I said. The marinade will reduce down to just the oil pretty quickly. After about 3 minutes turn it over and give the other side about 2 minutes. These times will give you a steak about medium rare. Cook it longer or less depending on the way you like it. Remove the meat to a dish and add the butter, garlic and rosemary to the pan. Stir it up with a wooden spoon for 30 seconds getting the bits off the bottom.

Add the wine and let it reduce a little. You will have a thicker sauce than you would expect because of the marinade reduction, but, that’s good. More flavor and more texture.

When the veggies have had about 5-6 minutes in the oven switch to the broiler setting and give them about 3 minutes under the broiler.

Slice the steak across the grain and serve it up with the red wine sauce topping your London Broil Steak.

We had some French Beaujolais with this great London Broil Steak and it all went together perfectly. If you make this recipe for two you will have some leftover steak. Just slice the whole London broil up and put the extra slices in a zip lock in the freezer or fridge. We usually use them for beef fajitas.

Pan Fried Parmesan Pork Chops with Cheesy Baked Asparagus is WAY easier than it sounds. This is an easy weeknight supper that tastes like a Sunday sit down dinner. Let’s do it!

Put a skillet, that is just large enough to handle the pork chops, on at medium high with just enough vegetable oil to be about 1/4″ deep. Pre heat the oven to 350°F . First get the Parmesan breading ready. In a shallow bowl put the bread crumbs, salt and pepper, garlic powder, dried basil and the parmesan cheese. Whisk it all together.

In another shallow bowl whisk together one large egg and about 1/4 cup of milk.

Cut about an inch off the stem end of the asparagus spears and rinse them off. Pat them dry and spread them out on a cookie sheet. Lightly drizzle them with some olive oil. Lightly sprinkle with salt, pepper, garlic powder and grated parmesan cheese. Gently toss the spears by hand right in the pan until they all are coated with the oil and stuff.

Put any kind of cheese that you want on the spears covering all but the ends. Here they are almost done.

Put them in the pan and depending on the thickness cook until they are browned and done the way you like. If you press in the center of the meat and it is still soft it is too rare for pork. If it is not totally firm and has just a little bit of give to your poke it is pink in the middle aka medium well. If it is firm it is well done without any pink in the middle.

Pan fried Parmesan breaded pork chops and oven baked cheesy asparagus spears.
Ingredients
  • 2. pork chops (about 6oz each) or 4 thin ones
  • olive oil for pan frying and drizzling
  • 3/4 cup bread crumbs
  • 1 tsp. dried basil
  • 1 cup grated parmesan cheese
  • garlic powder
  • salt and pepper
  • 1 large egg
  • 1/4 cup milk
  • 1 bunch asparagus spears (about a big open handful)
  • 2 cups shredded mozzarella or swiss or cheddar or Monterey jack or whatever is your cheese of choice to top the asparagus.

Oven Baked Parmesan Pork Chops is super quick, super easy and super good. The only thing that I can think of that would be quicker and easier would be one of those frozen tasteless things that you microwave. We really like this and the plates are always empty and ready for the dishwasher when we’re done.

Oven Baked Parmesan Pork Chops

[b]Meat, potatoes and veggies on one cookie sheet. Fifteen minutes start to finish.[/b]
Ingredients
  • 4 thin cut boneless pork chops
  • 2 small potatoes
  • 10-12 small “Baby cut” carrots
  • 3/4 cup olive oil (appx.)
  • 1 cup grated parmesan cheese
  • Salt and pepper
  • Garlic powder
  • Red pepper flakes (optional)
  • Dried parsley flakes for garnish (optional)
Instructions
  1. Set the oven at 400F
  2. Clean and cut the potatoes into 1/4 inch thick slices and spread the slices out on large cookie sheet.
  3. Add the carrots and the pork chops to the sheet.
  4. Drizzle everything with 1/2 of the olive oil
  5. sprinkle with salt, pepper, garlic powder and 1/2 of the cheese

A real good and real easy beef tenderloin recipe
Ingredients
  • 2 thick cut beef tenderloin steaks
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. garlic powder
  • 1/3 cup red wine
  • 1/3 cup Balsamic vinäger
  • 1/2 tbsp. chopped basil or parsley (for garnish)
Instructions
  1. If you have the time let the steaks get to room temperature. If not, don’t worry about it and charge on!
  2. Put a skillet on at medium high. Trim any excess fat off the steaks and put the trimmings in the skillet and smear them around to grease the pan. Salt, pepper and garlic powder both sides of the steaks and press on to the meat.

  4. Remove the fat from the pan and put the steaks in. Sear for 1 minute a side and remove to a plate that will catch the drippings. Add the wine, the rest ao the garlic powder and the balsamic vinegar to the pan and stir with a wooden spoon scraping the pan to get all the bits up and into the sauce. Bring it to a rapid simmer and reduce the heat to just maintain the simmer. Put the steaks back in the pan and cook for 3-5 minutes a side depending on how you like them done. You can check for doneness by poking with a finger. Real soft is rare and real firm is well done. In between is, well ,,you get it.
