Set your oven at 450°F. For a real easy cleanup just line a cookie sheet or baking pan with aluminum foil. Cut up your carrots

And lay out the skirt steak. Drizzle everything with olive oil. Sprinkle with salt, pepper and grated parmesan cheese. Toss the carrots and potatoes. Turn the skirt steak over and repeat the drizzle, sprinkle, toss, etc. performance.

Put it in the oven. Depending on how rare or done that you want your steak it will probably be done before the veggies. Test it with a meat thermometer or with the poke test – The softer it is the more rare it is and of course the firmer it is the more well done it is – If it is ready just take it out of the oven and let it rest on the cutting board while the veggies finish up. Test them with a fork and when they are nearly as done as YOU want them slice up the skirt steak crossways against the grain and serve up your Skirt Steak Dinner. If you want to, sprinkle it with a little dried parsley or basil to jazz it up a little.

Grilled Lamb Chops with Butter, Mint and Garlic

I learned about this way to top off Grilled Lamb Chops years ago, back in New Jersey when I was working at a very high end kinda restaurant. The chef that I worked under taught me a lot of stuff that I still draw on. Mint goes good with a lot of things but it just seems like a natural with lamb. My grandma often had leg of lamb for the Sunday sit-down dinner and always had small dishes of mint jelly on the table to compliment the lamb.

Today’s kitchen gadget is actually a pair of Calphalon skillets. I have had mine for 6 years and use them almost every night. They are still in perfect shape and I highly recommend them.

You could have the potatoes and veggies doing their thing in the oven while the lamb chops are getting their treatment on the burner.

Turn on the oven and set at 400°F/204°C. Take the chops out of the fridge to let them lose some of the chill while you prep the potatoes and broccoli.

Melt some butter in the microwave and add the mint and garlic. Save some of the mint for garnish.

While it’s heating up lightly salt and pepper both sides of the chops. When the pan is hot add the chops. Spoon 1/2 of the mint mixture over the lamb chops.

Grilled Lamb Chops-5-poppopcooks.comGive them about 3-4 minutes (depending on their thickness) and turn them over. Spoon the remaining butter mix on top. When that side is done turn them over briefly to get the topping cooked a little. The veggies will be done by now.

Pork Filets Topped with Apple Slices and Brown Sugar – yeah – it turned out to be delish and the whole meal was on the table in under 30 minutes.

Ok, I’m trying to put this post together while I’m watching the Cowboys game. So if this gibberish is even worse than my usual gibberish please forgive me.

You might opt to replace the snap peas and grilled sweet potato slices with  other starches and veggies but this combo worked out great. And it’s easy!

Put a stovetop grill or a large skillet on at medium high and spray oil it. Peel the sweet potatoes and slice them into about 1/4″- 3/8″ slices. Spread out the slices on the grill or skillet. They will take about 4-8 minutes a side.

Light the broiler. Core and slice the apples. Cut the onion into strips and chop up the garlic. Put 2 skillets on at medium high with a couple of tablespoons of olive oil each.

Thin pork slices work out best for quick and easy.

Thicker ones are fine but, of course, take a little longer to cook. These thin ones just take a minute or less a side. Salt and pepper them and cook them up.

Top the pork filets with the apple slices.

Sprinkle brown sugar on the apple slices. Just enough to cover the slices but not so thick that it piles up. Put the skillet under the broiler.

If the sweet potato slices are cooked to the degree of softness that you want put the pan in the oven on a low rack under the pork filets rack.

Put the onion and garlic into their skillet and sprinkle with some salt and pepper. As soon as the onion strips start to soften up a just a little add the snap peas and squeeze in the lemon juice. Of course toss in the lemon rinds. Don’t let the snap peas get the least bit soggy. Toss them often and cook for just a minute to a minute and a half so they are still “snappy”.

An Argentinean Malbec worked just great for us but if you think a white might be better for you then of course you can’t go wrong with a chilled Pinot Grigio or a Chardonnay.

Stir Fried Beef and Snow Peas-You are going to do it better than take out and faster than home delivery AGAIN!

If you don’t have any pre-cooked rice on hand start a pot of salted water set at high. If you are not using minute rice wait to start the beef until the rice has just started to get pliable when given the nibble test. If you are using minute rice just go ahead with the beef when you put the water on.

Cut the beef into strips or just buy some that are ready and waiting for you in the grocery store. I found them in mine and I’ll bet that yours has them too.

Put a skillet on at medium high and eyeball just enough olive oil to coat the bottom of the pan. When it gets hot put in the beef. Stir it often as it cooks. As it is cooking chop up the garlic. Add the black pepper, red pepper flakes, sesame seeds, garlic, soy sauce and ginger. No salt! The soy sauce has enough to do the job.

When the beef is well browned all over add the snow peas.

Stir in the peas and keep stirring often as the peas cook. When they have turned from the pale green that they were when you put them in to a bright green they are done. They won’t take long. Like 3-5 minutes. They are best if crisp, not mushy.
