Parmesan Chicken Thighs and Sweet Potato Fries……

………..will make you feel like a poet when you say it and a chef when you make it.      The parmesan crusted pan fried chicken thighs and the peppers giving a different twist to fried sweet potatoes all come together real “Quick and Easy”. Watch this video for a sorta preview.

I used boneless skinless thighs but you could use any cut of chicken that works for you. 

Put a skillet on at medium high and add enough olive oil to coat the pan about 1/8″ deep. Trim the excess fat off the thighs. In a shallow dish mix together the flour, grated parmesan, salt, pepper, garlic powder and dried basil. One at a time dip the chicken thighs in the dry mixture and press them in to get them coated evenly and add them to the skillet.

While the Parmesan Chicken Thighs are cooking put another skillet on at medium high and swirl in just enough olive oil to coat the bottom.

Peel and cut up the sweet potatoes into slices about 1/8″ thick and add them to the pan then…….

……..cut the pepper in half lengthwise and remove the stem and seeds and cut them into whatever size pieces that you want. Add the peppers to the potatoes and……..

……..sprinkle with salt and pepper. Toss a few times to get it all mixed together.

The Parmesan Chicken Thighs need to be turned when they are browned on one side. Then when the juices run clear or the thickest one reads 165° on an instant read meat thermometer remove to a pepper towel lined dish.

Watch the potato pan and toss or gently mix a few times as it cooks to help everything cook evenly.

You can go with the basic 4 ingredient Honey Soy Sauce Shrimp recipe and it will be great. You can do this with other kinds of fish or with chicken or beef.

After you get the honey, soy sauce and salt in the bowl you might be tempted to go a little further. Today I added some lemon juice, sesame seeds, minced garlic and a wee pinch of cayenne pepper. You don’t have to do any of the extras. If you want to keep it just the honey, soy sauce and salt it will still become a favorite.

Put the shrimp in a separate bowl and drizzle just enough of the sauce to coat them. Toss the shrimp in the sauce a little bit.

Put a skillet on at medium high and eyeball enough olive oil to coat the bottom. Let it get hot before you add the shrimp. Then spread the shrimp out in the pan so that they are all laying on their sides, not piled on top of each other. Cook for just one minute a side and then add the remaining sauce.

Stir the shrimp in the hot sauce then remove them to the plates and drizzle the sauce on  them. There you have your Honey Soy Sauce Shrimp. Garnish with a little bit of dried parsley or grated parmesan, if you want.

It all happens so fast that we almost always just go for “baked” potatoes in the microwave and some basic salad. Or another veggie choice is something microwave friendly like frozen broccoli or peas sharing space in the microwave with the potatoes. We had a chilled Santa Margherita Pinot Grigio to go with our Honey Soy Sauce Shrimp and it was great.

Oven Baked One Pan Mint Chicken.

You put everything in one bowl and toss it couple of times. Then you spread everything out on a foil lined cookie sheet and bake for about 15 minutes. Dish it out on plates, throw the foil away. How easy is that?

Set the oven at 350°F. Chop up the Mint leaves and the garlic. You can get  fresh or dried mint leaves at the grocery store. Gammy always has some growing in a pot.

Cut the potato into thin french fry shapes. Thin because all things being equal they will take longer to cook than the zucchini. That being said cut the zucchini in half lengthwise and then half crossways. Put the veggies in a large mixing bowl. Slice the chicken breast in half like as if you were going to butterfly it but cut all the way through to wind up with thin scallopini type pieces. Or, just go with chicken tenders. Add the chicken to the bowl and put the rest of the ingredients in.

Toss it all together so that everything is coated pretty evenly.

Spread it all out on a foil lined cookie sheet.

Put it in the oven and it will al be ready in about 12-15 minutes. Check everything with a poke of a fork and when the potatoes and zucchini are soft and the chicken is firm and/or running clear liquid, it is done.

Serve up your Oven Baked One Pan Mint Chicken! Garnish with the little bit of chopped mint leaves that you held back. Gammy went with her favorite white, Santa Margherita Pinot Grigio.  I had my favorite Chianti, Ruffino Ducale as seen in the pic and some homemade bread.

This Italian Sausage Tomato Sauce  on Grilled Eggplant is a quick way to get an exotic sounding dish up and going fast enough for a week night. If you don’t have a stove top grill for the eggplant just go with a big skillet or forget the grill and boil up some kind of pasta. As far as the Tomato sauce, if you don’t have any on hand you could go with some off the shelf stuff or even a 28 oz. can of good crushed tomatoes. In fact, let’s do it that way tonight.

Chop up 1/2 of a medium sized onion and 3 cloves of garlic. Put a large skillet on at medium high with about 2 tbsp. of olive oil. Sauté the onions until they start to get translucent then add the garlic and continue for a minute. Don’t let the garlic get brown. Add a pinch each of salt and pepper. While the onion is sautéing slit the skin on the sausage lengthwise and remove the skin. Add the sausage meat to the pan and crush it with a potato masher or a large spoon. Mix it up with the veggies and stir often as it cooks. When the sausage is all brown add the tomatoes. Stir it all together and bring it up to a fast simmer. Reduce the heat to just enough to keep the simmer going, stirring regularly. Add more salt and pepper to your liking if needed.

Get the stove top grill or the big skillet heated up and sprayed with oil. While it is heating up peel and slice the eggplant into slices about 3/8″ thick and add them to the grill, or pan. When just starting to get marked by the grill turn them over and do the other side.

If you have some extra eggplant slices just lay them out flat in a zip lock and put them in the freezer. When you reheat them do it in a hot skillet, not in the microwave, so they don’t get mushy.
